The Quattro formaggi may not sound that like a home run from the menu but with the copa and the smoked provolone the flavor is lifted to a place where you are wishing for a couple more bites as the dish comes to an end. I took some notes and this is what I thought of the dishes. Xoajacan Imoladas - The mole is perfection. The flautas, superb. Everything in this plate is a symphony of what I would expect from Xoajaca. 9.5/10 Barbacoa Bonemarrow - Barcacoa is on point. The Marrow is Sublime. Together with the accompaniments is superb.
