I really appreciate that Mizuna makes a point of using vegetables from local farms. The dish almost reminded me of something you might get at a traditional Lyonnaise restaurant, but with a more modern and refined touch. The beet salad, though, was a piece of art. I would honestly come back just for this dish. The beets had an almost candied quality without being overly sweet, and they worked beautifully with the freshness of the mint and the creamy chèvre mousse. Fantastic balance of flavors and textures.
