Inside, the design is clean and modern, and it's bright, organized, and efficient even when crowded. The vibe is lively and indulgent, with a constant stream of customers, even when we arrived at around 9pm on a Thursday night. I've been told that the telltale sign of a touristy gelateria is when the gelato is piled-high and laden with toppings; this often means that it isn't replaced often, so it isn't fresh. There's none of that here; the gelato is tucked away beneath lids, most likely to retain the fluffiest, creamiest texture. There's menus in both Italian and English, with a variety of upscale, unique flavors, such as Coffee & Cardamom, Zabaglione, and even frozen yogurt! They're more than happy to let you sample, and there's plenty of options for your gelato, including cups, cones, and brioche rolls; there's also other items, such as crepes, coffee drinks, and more. We all ordered different flavors; even a small scoop (€4) comes with two flavors. I truly enjoyed my combination of flavors: Zabaglione (an Italian dessert with egg yolks, sugar, and a sweet wine) and Yogurt Miele e Noci (yogurt with honey and wanluts); the former was just boozy enough with a rich, custardy flavor, and the latter was tart yet herbal from the honey, and earth walnuts adding textural contrast. My friends also loved their flavors, particularly the fruity ones such as Lemon and Raspberry. Pricing is moderate for gelato, but nowhere near tourist traps in the more crowded areas of Rome; I think it's justified. Yes, it's a chain, but I can truly taste the high quality of the ingredients that they use, and their unique flavors that you can't find elsewhere. A great stop if you're in the area!

Marron Glacé: It was the first time I saw this flavor OR maybe I just was not paying attention to it since my eyes go directly to pistacchio. This chestnut-flav gelato was a revelation. A sophisticated flavor that captures the essence of candied chestnuts. It's gently sweet layered with caramel and this is now my new favorite. Cremino al Pistacchio: A luxurious blend that balances the creamy richness of white chocolate with the nutty elegance of pistachio. It's a flavor that showcases Brivido's mastery of tradition. The texture is dense and smooth, a hallmark of true artisanal gelato. Btw, this is also the only gelateria that we've been to that offers fresh whipped cream or chocolate sauce topping. Verdict: Brivido is a gelateria for those who want the REAL Roman gelato experience. The pot of gold is not in Ireland. It is in Rome at the Pasticceria Barberini. * * * Pasticceria Barberini is an old school 1920's pastry shop. Yeah yeah yeah, they play Italian rap on the sound system. But the tile on the floor, the decoration on the walls, the marble, the benches and the tables, these are all old school Roma from before the war. I wish they played Neapolitan tenors of 1925 from when the bakery was founded and not Sferra Ebbasta's and Capo Plaza's hits from last week. But for THESE pastries, they can play whomever they like, whenever they like. * * * The pastry selection is vast and massively massively tempting. Prudence limited me to two pleasures. Those pleasures were epiphany, nirvana, and the concluding moment of passion all in one. The first item was a chocolate bigli. (That is a cream puff or beignet - but in an Italian shape.) This. Is. The. Little. Kid. Chocolate. Dessert. Of. Your. Dreams. A sudden Niagara of chocolate happiness. The pastry is small. But you could not take any more happiness in one dose. * * * The chocolate bigli was the second best pastry I had. Yes, you heard that right. Second best. * * * The first best pastry was more of an adult pleasure. Not so much chocolate storming around you in every direction. But a subtle mix of complex tastes with as many flavor-colors and striations as a pillar of the finest Italian marble. I am referring to what they modestly call their carrot cake. Carrots are what merely held the cake together. Inside was a kaleidoscope of different savory touches and ribbons of taste. Orange was a regular accent. Hazelnut was a regular accent. Almond weaved in and out of the proceedings. The longer I tasted, the more I found. I could have studied that carrot cake for an hour Eating three slices but taking twenty minutes on each one. (I only had one slice but I wish I could have had three slices.) Each new forkful pulled out a different accent I had not noticed before. A flavor I thought was one thing turned out to be something completely different entirely. That cake was a crossword puzzle and an atlas of the world and a great big history of art book all in one. I could have gone over the details for ages and ages and ages. Each new detail made me happier and happier. * * * Just for the record, Barberini's was originally a milk store. (Yes, in the 1920's Italy had milk stores. Supermarkets were rare and city people did not have a cow. So you went to a milk store to get your daily milk.) The milk store evolved into a gelateria. They added the pastry and became famous for the pastry. The rest is history. Out of a sense of tradition, they do keep a stock of their own gelato on hand. For all I know that gelato could be wonderful. * * * 3/4 of their glass case however is devoted to pastry. With pastries like this, you can easily see why. Someone someday should let me know if the gelato is any good. But it would take the Chains of Prometheus to keep me from ordering a whole plate of pastries the next time that I return here.

For starters, 'gelato' is not the Italian word for 'ice cream.' It translates to "frozen" or "freeze". It traces its roots all the way back to 1565, and its invention is attributed to a Florentine, Bernardo Buontalenti. It differs from a North American version in that it has more milk and less cream than we are used to and no egg yolks. It is also churned at a slower rate and served at a slightly higher temperature. This all makes gelato denser and smoother than hand-dipped ice cream. Because there is less milk fat, the flavors coat one's mouth and seem brighter and more intense. Located in the San Giovanni district of Rome, my partner, our friends, family member, and I decided to go to Freddo, meaning "cold" in Italian, for some local gelato. The first step to finding top-quality gelato is where many tourists fall victim. Any gelato one's eating should not be piled up so high that it resembles a mountain. Look for flat metal tins, which may have lids on them. This establishment uses only selected ingredients to elaborate their classic flavors and unique combinations. In order to obtain a natural product, they don't use emulsifiers, preservatives, dyes, industrial flavors, or hydrogenated or refined vegetable fats, which some of us got some frozen treats. They were so creamy with many delicious flavors and the best around. Portions were healthy, and the price was comparable to the area. The staff was friendly. As one plans an Italian trip, remember that gelato is more than just a treat: it's an experience.

Disclaimer: had this when I was buzzing so not sure if it was the alcohol or the gelato. Maybe both? Guess I will have to come back when I am sober to check it out!
