I noticed the thawed must was watery but continued to make the wine. At the end the finished product was like a rose' of Cab. As I reflected on the experience, I concluded that the original frozen must contained some added water to the crushed grapes before it was frozen and shipped. That would explain the low Brix, watery must and the lack of intensity in the finished product. If you feel that it was miss handled by me, I can only assure you that I have had great success with frozen must from other suppliers and with freshly harvested grapes.

Unfortunately, the must parameters on the website did not match what arrived. The 2022 Merlot was advertised to have a nice balance of sugar (Brix 24.0) and a reasonable starting pH ("less than 3.56"). After the grapes were thawed I found the Brix to be as advertised, titratable acidity (TA) was a reasonable 6.3 g/l but the pH was quite high at 3.79, even with some additional potassium from the skin contact. I was able to add tartaric acid and bring down the pH to a reasonable start point but the TA ended up high in the finished wine. Note - I have a high quality pH meter that was calibrated before this exercise to measure pH and for the acidity titration. I attempted to reach out to the seller via phone and email and never heard back. This was disappointing.
