I was seriously craving Mexican and so a return trip was made. So much better from the start. Greeted and seated promptly and had our drink orders delivered immediately. Chips and salsa were good. We had steak fajitas and and alambre burrito with chicken and shrimp. I was super impressed with my burrito. Lots of shrimp and chicken, unlike other places where you get one or two. We order delivery from Guadalajara because all the pictures looked amazing we had the chimichanga plate, soft tacos, steak burrito and chips and salsa. For getting it delivered the food was still very warm and very tasty. The chips were a little thicker than I usually like. The salsa had just enough spice to let you know it was tasty. Stopped here an hour before they close on a Friday night. It wasn't too busy so we got seated right away. Service was friendly and quick. The decor was beautiful. If you are looking for great American Mexican food this place is a great choice. I got the 3 Barbacoa Tacos, comes with rice and refried beans. My friend got the Chicken Enchiladas with Green sauce which also came with rice and beans. The Tacos were delicious, meat was cooked perfectly topped with onions and cilantro just the way I like my Tacos. Came with a spicy Salsa verde on the side which I loved. Large takeout order for 5 people. My plate was 1 ground beef taco and 2 chicken tacos. Seems pretty simple but was not as expected. Chicken tacos were dry and hard meat. Tough to chew chicken has got to be something you try to screw up! Ground beef taco disintegrated within minutes of getting home and eating. We were in a hurry with only an hour for lunch. It was 1:30 and they weren't busy but this was obviously siesta time for the staff or more correctly time to relax and kick back with TicTok on their iPhones. They seated quickly, got our drinks and then disappeared. I sure they thought anyone our age arriving early afternoon wouldn't mind a leisurely afternoon enjoying our jumbo margaritas. The service was just too slow for my wife. She had things to get done. She got up and tracked them down twice. She didn't want to leave a tip but I was more forgiving. Our past experience there has always been outstanding and the staff has always been very nice. If you are used to California style, flavor and spicy-hotness you are not going to find it here. I challenge you to find it anywhere in Minnesota but this place is as bland as it comes. I don't think a restaurant with spicy-hot Mexican food could survive here. Amazing food and atmosphere! My favorite is the California burrito. The margaritas pair well with the chips and salsa you get served when you first arrive. We like to order a side of queso with the free chips and salsa and it's great. The staff is fast with checking in on your order as well as when you order fajitas the staff warns you that the plate is hot as they place your food down on the table. My fiancé and I really enjoy Guadalajara and have been multiple times. An added benefit is that we receive coupons for Guadalajara ($10 off an order of $50+) which we find in a newsletter we receive. 10/10 recommend! read more

I gave it 4 stars for the Carnitas (pork) living in California for 18 years you can't find authentic foods in the Midwest. I have tried a few so so places and I have to say they make one of the best Carnitas I have found so far in MN. The special Margareeta is actually pretty good as well. The only issue I/We had was the service not sure if he was a owner or manager, he just wasn't over friendly kind of just there because he has to be. With that said, I would go back to try other things, I am not as picky on service as my friends I am all about the food, sadly they won't be going back. This restaurant is very clean an bright inside. The decor is very authentic and the food is amazing. We had the Pechuga De Pollo and the Seafood Chimichanga and both were the best we have had in quite some time. We also enjoyed the chips and salsa they brought to the table. Well, this isn't " traditional" it is what I would call American Mexican food made by families who know what they're doing. The staff is always friendly, and the service is excellent. We've lived in Rogers for only three years but Guadalajara will always be our favorite Mexican restaurant. We've always dined in, which is a great experience. Their staff is friendly, professional and funny, the food is phenomenal, from their fajitas to their tacos, and the prices are so reasonable, especially for the amount of food you get. Last night we ordered delivery and we were so impressed. Again, the food was savory and delicious. We had their seafood enchiladas. Happy hour! They reuse the plastic Minute Maid bottles for there "Happy Hour Special" I had 1 and it wasn't good but not horrible, I didn't come here for high class. The Second one had brown flakes floating in it and was extremely bitter. I said it tasted wrong and asked for another one. I watched the waiter fill a glass full of ice and then reach down to the floor and pull up a almost empty Minute Maid bottle with a yellow liquid in it and pour it in my glass and hand it to me. I said I'm not going to drink that crap, reusing plastic bottles can cause chemicals to be released and it was also kept in a unsanitary spot. I asked for a new margarita and he said he would have to charge me "full price" this is the first time I have been to a happy hour and they try to charge me more for something new? Other bars don't leave beer open all night and try to charge people for it the next day. The owner went home early I Plan to return tomorrow to ask why they think it's ok to do this, I bet I will find the next of batch margaritas sitting on the floor behind the bar. On a cold snowy night in Minneapolis, after a debunked attempt to see Santa at Cabelas - you NEED food therapy! For our family food therapy is usually Mexican. This happened to be the closest Mexican restaurant on our path back to our house. When you need ER therapy, you go for it. Now this restaurant didn't have stellar reviews on yelp but we gave it a try. There weren't that many people inside the restaurant but the restaurant was clean, bathrooms clean and there was festive Mexican music playing, which is always nice. For us, the music is part of the atmosphere to a Mexican restaurant. The missing element of the atmosphere was a lot of people talking and enjoying their time out. But we weren't ready to shoot this place in the foot yet. We sat down & were served chips and salsa. The chips aren't anything to get excited about but that didn't stop us from eating them and the salsa was just fine. We decided on what we were going to order and when our food arrived we were very pleased. We have some picky eaters and the waitress, who wasn't talkative, was super careful to get the order right and she did a great job! I had a food from here at a party on Saturday and we all got food poisoning. Extremely upset that food safety is not taking seriously here.

Guadalajara is great if you want Mexican food, but don't know what you want. They have an enormous menu with tons of different options (and like previous posters have said, a lot are GF). I've tried a few different things on the menu, and I think the rating says it all. The food is just OK. The first thing that comes out at many Mexican restaurants is the chips and salsa. This is how someone can judge what the rest of the food quality will be like. The chips here were nothing special, and not warm, and the salsa was watered down, and bland. I usually like to order a little queso with my chips, but I didn't want to waste precious queso on these chips. I do have to say, the margaritas were fantastic! I switched things up and tried the Iguana Margarita, its a classic margarita with 1800, but with Midori melon liquor added! YUM! My husband got the Ultimate margarita, which was good... but not as good as mine! We ordered Nachos as an appetizer, and we had a choice of regular or a loaded option. We went with regular and that was a huge mistake. It came out looking like the nachos you make at home with a handful of tortilla chips and whatever cheese you have in your fridge, microwaved right before you sit back and watch day time tv (I know almost everyone has done this, you know what I'm talking about). So the quality and taste wasn't very good. I ordered a simple but classic; 3 beef enchiladas, topped with my one true love; queso. We have a good friend who has Celiacs disease. She loves Guadalajara. They have many gluten free options. Seemed like about 50% of their menu. They have a dedicated deep fryer for gluten free food.
