DLDR: Food is decent, service takes forever, and the beers are delicious. First time to GMBC and I'm going to try to have an open mind. This brewery is an oasis in Southern New Mexico. I can honestly say I could drink their brews daily as there is a wide range of IPA to almost Pils which should satisfy most folks. Beer = damn good! Ambiance is nice but simple. I can see that there might be a vision for branding and a local guitarist setting the tone. I'm all for it! It's a good idea but needs more application. Here's the problem: The service and wait times are very bad. Not the worst I've had, but it will 100% take you 30+ minutes to get a pizza plus wait time in line. To me, that is absolutely unacceptable. I don't have a problem with queuing in line for food and drinks but the speed needs to increase just to adhere to the vibe GMBC is trying to create; a Guadalupe Mountain Brewery that focuses on food, family, and beer. About the pizza, promising an open mind here, it's ok. Again, an oasis in a Domino's wasteland. But Dominos fully cooks their pizzas. I am 100% a pizza snob. I give these pies 2.5/5. Far too many toppings and a pale crust. Less toppings, more heat, more experience from the BOH staff. The pies are not cooked long enough as the cheese is clumpy and uneven and the toppings (veggies mainly) are huge, undercooked and the pizza was served nearly cold! Great portions but poor bake as they prioritize "speed" over making a good pizza. If you have never had a delicious slice, this is a solid step in the right direction. If you are used to professionals creating quality food, you will be disappointed. Still, don't shy away from this brewery as you can have a good (quite long) time as the beers are fairly priced and food will satisfy you. Absolutely throwing shade to the queso which is just canned Queso brand with crappy chips. I might add that the queso came with a hair in it but was slowly rectified by a server that I had to flag down. Ultimately, why should I wait so long in line for food that is minimum standard and is amateurish? Because I'm in Carlsbad, NM and there isn't competition to incentivize this place to be better. I want them to be better because I plan on making this a solid pit stop in the future. Keep up the good work, but continue to improve. read more

We stopped by here for dinner after spending a full day of hiking at Guadalupe Mountains National Park, so boy were we hungry! We ordered the New Mexico Green Chile Chicken pizza and the plain nachos. NM Green Chile Chicken Pizza (4/5): Crispy bacon, grilled chicken, red bell peppers, and plenty of green chiles elevate the flavors of this pizza to the height of El Capitan! The crust was also nice and crispy. Something felt missing though, like some more salt or a deeper flavor profile to the crust. Plain Nachos (3/5): This tastes exactly how it looks -- beer infused with that canned ultra-processed bright yellow synthetic cheese poured over some tortilla chips out a bag. You can also ask for pickled jalapeños with it, but you only get a small cup. We asked for more jalapeños after we ran out but they told us it'd be extra charge... It was pretty busy for a week night as well and we had to wait for seating to open up. It looked like the hottest spot in town! Overall, the food is decent but not even close to the best food I've had nearby a national park. But considering how close it is, still a solid option! read more

My husband and I were staying next door at the Homes2Suites and decided to grab a couple pizzas to go. One of the pizzas we ate at the hotel and one we ended up taking with us to Carlsbad Caverns the next day and eating as a picnic lunch which was so fun! Really good beer selection to choose from so the Pale Rye was choice of the night. Served cold and good robust flavor. Definite refill was needed Cheese curds were food but needed something to make them better. I liked the crunch and the ranch that went with them but feel the cheese needed a flavor bomb to put them over the top. Perhaps a sprinkle of parm? Lost the star because part of the pizza was cold. Good we were on a trip when we passed through this town. The ambulance was warm and welcoming the particular night we went they had live music, which is great. We could not enjoy the patio unfortunately because it was closed for a private party. We had pizza and a salad with the pizza was great. we had a couple flights of the beers. The beers were very good. The service is order at the bar and they give you a number and bring it to your table, they were polite and efficient. They did make a small mistake in my order, but they corrected it quickly. Overall was very happy with the experience. read more

Visited for dinner after a day of intense hiking in Guadalupe Mountain State Park, so was starving. This is a counter service restaurant. Good & quick service. Live music was playing as well. I ordered a margherita pizza with pepperoni added, an order of buffalo wings, and a hazy ipa. Love that their beer selection was almost entirely made up of local brews made in house. The hazy ipa was crisp, refreshing, and a perfect complement to my food. The wings were delicious - buffalo sauce was on point with the flavors and the wings themselves had a good amount of meat. The pizza was a bit of a letdown - almost entirely sauce and very little cheese. For a margherita the cheese to sauce ratio was off. Spending a couple of days in Carlsbad, and this place seems like the place to be! Lively atmosphere - seems like a great place to meet with friends, have some drinks, and enjoy some really good food! On our visit we tried the wings with buffalo sauce (not pictured), and pizza. I appreciate being able to add additional toppings to their specialty pizzas to make it your own. Everything was delicious! Service was quick - the food came out pretty fast even with a crowd. One thing that was awkward was that there were not servers around and you had to go to the counter, it made it odd when we hadn't been there before wondering how to get service. The place is nice and had live music. One downside is that they have a metal door that gets extremely hot. My child burned himself on the door when we were going in. Stopped by on a Thursday evening, and found GMBC filled with folks, visitors and locals alike. There's plenty of parking behind the building, with floodlights for your late night exit. I tried a few beers and landed on the porter (Oh-No-Mo'), pairing it with the majority-recommended green chile chicken pizza. Side of ranch is an extra $1, though not needed with how crispy the crusts are here. Dinner was delicious, but with how busy they were, it did take some time - I had mostly finished my first pint by the time pizza arrived. Pizza was good, white sauce was excellent, but it wasn't spicy with the green chiles. Nonetheless, happy for a few slices of breakfast pizza because I know these will be excellent in the morning. Staff were fantastic, though so busy with the crowd orders that it was hard to flag someone down for another beer or a box, but they made a space for me at the bar when I had my hands full. Staying nearby after 4 nights of camping at Guadalupe Mountain Park and touring the caverns. After washing up, we needed some greasy food and beer. This was my spot and it was packed on Wednesday before Thanksgiving. I waited in the line to order (about 20 orders deep) and got a meat lover's pizza, Italian sandwich, and Rueben panini, while ordering an IPA to drink while waiting for food. Gave my number to take it to go back to hotel and was told it would be around 25 minutes. After 30 minutes, I went up to the bar and my food was sitting there. It happens with technology, but enjoyed the patio outside with my beer as I looked through pictures of the outdoor adventures. When I got home, we crushed the pizza (which was the best of all the food) and ate half the Rueben. I thought it was good, but my son said the oil (and pickle in to go box) made his sandwich soggy. It didn't matter, as we ate all the food and I thought the sandwiches were fine eating on the drive back to TX. read more

We stopped here on a Monday evening before heading to Carlsbad for the bat program. The brewery quickly filled up both indoor and outdoor seating within an hour of opening. The staff were very friendly, and service was great. We enjoyed their selection of beers, particularly the golden stout on tap. This seems to be the hot neighborhood joint and for good reason. Good beer, good food and good vibe. We happened across the brewery while visiting Carlsbad and since we frequently like to try out new breweries, this seemed like a great option. I had seen reviews that if you didn't get there by 5:30, you might not get a table. That being said, we arrived about 10 minutes to 5. Well. There was already a line for when they would open at 5 pm. Luckily we were close enough to the front that we got a table right away. They have a great selection of beers. I got a hefeweizen, my usual standby, and my husband got a flight to get some variety. We also split one of their wood fired pizzas. The pizza was delicious, but they also had a number of other options including some appetizers and sandwiches. We each picked out a few and were pleased with the quality of the beer. Each choice was brewed appropriately for the style in my opinion. Although we did not order any food, just from the looks of it... the Pizza would be an excellent choice. Service took a while, but we showed up around 5:30 and there were a lot of people waiting at the counter to order beer. I'm going to say that they did an admirable job of serving maybe 12 orders in a hurry. Given that I will say that service was fast, but be aware that the place might get crowded as people stop by for a taste of beer after work. Ne'er Brew Well I'm always on the hunt for local breweries whenever we travel, and Guadalupe Mountain Brewery def caught my eye while staying in Carlsbad. While their menu isn't the most spectacular brewpub fare we've witnessed, but if the beer is good, then as long as the food is adequate, you've got a winner in my book. Fortunately for us and the residents of Carlsbad, the food is more than adequate, and the beers are even better. The Good: *I'll admit I was a wee bit suspicious of this place, as the exterior reminds me of a place where the local bikers "club" meets and gets rowdy--but it was quite the opposite. They actually have quite a family-friendly establishment, as almost every table there had locals and their kids noshing away on pies while the adults enjoyed the beverages. *All the beers we sampled were quite fantastic, but if you're visiting, then definitely make sure you try the Green Chile Beer. It was amazing how you could actually taste the unique green chile flavor and get the heat to go along with it. #Fantastic *Big shout out to the Dark and Devious Imperial Stout at 10%ABV it wowed me with the flavor and floored me with its punch. Luckily, our hotel was only a block away... 0_o *Their pizzas are actually quite legit and expertly cooked in their brick oven. The crust was nice and thin and crispy, and the toppings were plentiful. The perfect accompaniment to our brews. *Service was a bit terse but friendly enough, which I didn't mind. I like it when people are all business and cut the pretense. *Great outdoor patio area that shades visitors from the sun and the rain. Great place to hang out with friends and family. I'm not sure if it's dog-friendly or not, as we didn't see any pooches on our visit. The Meh: *They have a more diverse menu than just pies, but on the night of our visit, that's all they had for whatever reason. However, they really should just stick to that since they do it so well. Nobody needs burgers and all that other shit. Just stick to pizza and maybe a few salads for the healthy folks and call it a day. The Ugly: *Gravel parking lot and dimly lit exterior didn't help with my earlier judgment on the establishment, but now I see it's just part of the charm. :) TLDR: Great beer, delicious pizza, and a welcoming environment. Food - the flavor of the pizza sauce was good. unfortunately, it was under-cooked. there's nothing like raw pizza dough to spoil the meal. The beer was fine. Service - we were here on a Saturday evening and the place seemed to be packed which excited us thinking we were in for a treat. unfortunately, we waited 45 minutes for our 2 12" pizzas which were raw and with no place to sit. We also ordered beer to go, but it was not on the ticket nor were we given a receipt. Finally chased down the cashier who had our beer order ready to go.
