    TLDR - Gustav is a formal fine dining restaurant near the Blue Mountain Ski Resort. Considering it is really nice with impeccable service, and there is literally no near competition, it is an automatic 5 stars. We came to celebrate the nuptials of some friends. I found the food and service quite nice at Gustav. First off, right on time, they sent a text message telling us the table was ready. We were promptly seated upon arrival. The waitress professionally and courteously went through the menu with us. She gave useful recommendations on food (Tomahawk steak!) and wine. We in the end ordered the Tomahawk steak, which came with 2 sides, and a pasta, and an brie appetizer, to share communal style. All of the selections were competently prepared. The Tomahawk steak was tender and had good beef flavors. With sides, the steak could feed 3 people on its own (good that we shared it). The pasta was cooked al dente. It had a delicious rose sauce. I think the sauce outshone the pasta itself to the point that I would order the pasta just for the sauce. The brie appetizer was decent but didn't stand out. The services was very high standards. The waitress checked on us a few times to ensure we needed of nothing. Lastly, the ambiance was classy, a fitting companion to the menu. We had never heard of Gustav before, nor the Georgia Bay Hotel in which it located. I was pleasantly surprised by the discovery. I suspect that this won't be our only visit.

    It's a hotel restaurant inside the Georgian Bay Hotel. The place, including the hotel overall, was a bit dull with old-fashioned decor and gloomy lighting but was well-maintained. Seared Scallops: The scallops could melt in my mouth and weren't chewy at all. Combined with the creamy sunchoke puree and crispy potato shreds, it was tasty. Top Sirloin: I had a 6oz medium-rare with sautéed mushrooms and roasted cauliflower. The beef was a bit dry and chewy because of a thick cut, but the meat quality was good. The mushrooms and cauliflower tasted good. House Cut New York Striploin: 8oz medium. The beef was way more tender and juicier than mine. Chocolate Mousse Cake was up to par. The wines were okay too. If you stay around Collingwood, this place would be a decent choice for a classic lunch/dinner.     We had a very enjoyable time at this restaurant. The food was good and the waiter was efficient and friendly. The kids especially liked the lamb. Do not order the green cocktail drink. Whatever it was, it was way too sweet! The kids also liked the crispy fries. We all enjoyed the octopus & potatoes as well. Don't get the escargot here. It's not done well. Overall, the whole meal was good and everyone had a nice time.

    Ate here tonight and we were not disappointed. We were staying in the Georgian Bay Hotel which this restaurant is housed in. We had stopped into the bar the night before and were warmly greeted by the staff so decided to make a night out and have a fancy dinner. Our server was Chris whom we had met the night before and swapped fishing stories. He was very attentive and made excellent suggestions as we went along. We started with a couple pints of Stella and an appie. We split the Spring rolls between us which meant we got one each. The dipping sauce was tangy and excellent as were the rolls. We both ordered the Sirloin Oscar, her rare and me medium, and both were cooked to perfection and very well presented. My wife had the potatoes au gratin (very tasty she says) and I had a loaded baked potato. We had a nine ounce glass of house Malbec each and it was great too. Chris twisted our arms into trying the bread pudding for dessert which we shared and it was very good. Friendly caring staff and excellent food. Highly recommend.

    What to do when you've spent 8 hour in a car and are starving? You whip out Yelp and look for a good steak house for dinner. It's the only way to be able to unwind. Note: Walking into Gustav with yoga pants, bright pink running shoes, and hoodie is completely acceptable. (Hey, I was in a car for 8 hours and we went to eat before we checked in!). This place was completely packed for 7pm on a THURSDAY night but it is inside of a hotel so that might explain it a bit. At first glance I didn't think I would find anything that I wanted to eat. Our waitress came to greet us and I spoke with her asking her opinion. I wanted to know what she like. She asked me how hungry I was so she could narrow down the suggestions and I told her that I was a meat and potatoes kinda girl and not a salad kinda girl. She made a couple of suggestions, but I was still hesitant since every dish has a bit of a twist that I didn't think I would like, but eventually I settled on the wedge salad starter and sirloin with fully loaded baked potato as the side. My salad arrived a few minutes later and it was delicious. Can one complain that there might have been too much blue cheese and dressing on their salad? Most places skimp on the dressing and toppings but not Gustav's. My steak was cooked medium and its my fault because I asked for it. I was supposed to ask for medium rare. The steak was actually really good with the exception that I asked for it to be overcooked so the edges were a lot more cooked than I like. But that isn't their fault so I can't deduct stars or complain. I ate my steak and moved on with my life. The loaded baked potato could have been loaded with a bit more bacon and cheese and less sour cream but whatever. It didn't stop me from eating. There was no room for dessert for me but my boss loved the flourless chocolate cake. The food was so good we were considering going back a second time but we had prior engagements. Oh. They had a live band and they were pretty good :)

    Love the vibe! This restau/bar & grill is located at the lobby of The Georgian Bay Hotel so very accessible to people checking in. Every Saturday they have a live show so that was a plus during our stay! Drinks we're expected to be expensive, i just wish they put less ice LOL cos the vodka did not quite kick in. But, overall I will recommend.

    we got here at 6:30 and our food didn't come until 8:00. the food wasn't the best and the service was bad.

The mushrooms were delicious. The salad bar was small, but delicious dressing was very savory. Prices were more than reasonable I don't think a lot of tourists know about this place or go there. It seemed most of the people there were elderly. They had a beautiful second room for what seemed to be a private party. So unless you are not hungry at all and don't mind sitting inside while watching them trying to figure it out & have over 2 hrs. to kill with nothing to do nearby as it's far away from the main area & willing to settle for OK food? The place is nestled along the coast associated with a marina. The complex the restaurant is housed in reminds me of an assisted living vibe that was repurposed as a family resort. We had a private dining area with Alex as our server . He made sure all our needs were met, provided exceptional service and was attentive at all times . Everyone in the group enjoyed the evening with delicious food, tasty appetizers, great wine and delectable desserts. The restaurant is beauty, great view of the bay, an oyster bar and an inviting atmosphere. All dishes including Chicken, Salmon and prime rib were delicious as the Main course and the chocolate mousse and crème brûlée were decadent.
