I held a birthday party for a friend At Gustavs and it was amazing. There were eight of us, we were seated in a private room and had a dedicated server. It is a lovely place to go for fine dining. Three had steak, all of which were declared tender and cooked just right. One had OssoBuco which fell off the bone it was so tender. The rest had fish, which was not overcooked and delicious. Our server was helpful but not intrusive . It was a good choice for a small group. Having said all that, there was a very large party on the other side of the restaurant , so they can handle a crowd. And I have eaten at the bar before and that was more casual but also very good. read more

Walking in, we were greeted by the hostess and took us to cozy corner of the restaurant as per our request. The ambiance was warm and dark. They also had a few paintings on their walls to sell that were made by local artists which was really nice. Our server was polite and friendly. She made sure we had everything we needed. We ordered the oysters, the soup of the day, filet mignon with herb roasted potatoes and seasonal vegetables and the new york striploin with chive mashed potato and garlic mushrooms. We were quite pleased with the oysters (5/5) and the soup which was Chipotle Tomato (5/5). The soup had a nice smokey flavour and a kick from the chipotle which paired well with the sweetness and tanginess of the tomato soup. Filet Mignon with Herb Roasted Potatoes and Seasonal Vegetables (3.5/5). The steak was cooked to my liking (medium rare). The char to it heightened the flavour of the steak. The steak also had bacon wrapped around which I couldn't really taste. The herb roasted potatoes were crispy on the outside and soft on the inside. The kitchen staff unfortunately forgot to add my seasonal vegetables on the plate which we let our server know. The vegetables were underwhelming as they were overcooked. We hope for the staff to be more attentive in future orders. The New York Striploin with Chive Mashed Potato and Garlic Mushrooms (4/5) was also cooked medium rare however, we did find some parts of the steak to be slightly overcooked. The char also heightened the flavours of the steak. The chive mashed potato had a smooth texture. Butter on the side would've been a good idea. The garlic mushrooms were deliciously cooked. TLDR - Gustav is a formal fine dining restaurant near the Blue Mountain Ski Resort. Considering it is really nice with impeccable service, and there is literally no near competition, it is an automatic 5 stars. We came to celebrate the nuptials of some friends. I found the food and service quite nice at Gustav. First off, right on time, they sent a text message telling us the table was ready. We were promptly seated upon arrival. The waitress professionally and courteously went through the menu with us. She gave useful recommendations on food (Tomahawk steak!) and wine. We in the end ordered the Tomahawk steak, which came with 2 sides, and a pasta, and an brie appetizer, to share communal style. All of the selections were competently prepared. The Tomahawk steak was tender and had good beef flavors. With sides, the steak could feed 3 people on its own (good that we shared it). The pasta was cooked al dente. It had a delicious rose sauce. I think the sauce outshone the pasta itself to the point that I would order the pasta just for the sauce. The brie appetizer was decent but didn't stand out. The services was very high standards. The waitress checked on us a few times to ensure we needed of nothing. Lastly, the ambiance was classy, a fitting companion to the menu. We had never heard of Gustav before, nor the Georgia Bay Hotel in which it located. I was pleasantly surprised by the discovery. I suspect that this won't be our only visit. read more

It's a hotel restaurant inside the Georgian Bay Hotel. The place, including the hotel overall, was a bit dull with old-fashioned decor and gloomy lighting but was well-maintained. Seared Scallops: The scallops could melt in my mouth and weren't chewy at all. Combined with the creamy sunchoke puree and crispy potato shreds, it was tasty. Top Sirloin: I had a 6oz medium-rare with sautéed mushrooms and roasted cauliflower. The beef was a bit dry and chewy because of a thick cut, but the meat quality was good. The mushrooms and cauliflower tasted good. House Cut New York Striploin: 8oz medium. The beef was way more tender and juicier than mine. Chocolate Mousse Cake was up to par. The wines were okay too. If you stay around Collingwood, this place would be a decent choice for a classic lunch/dinner. We had a very enjoyable time at this restaurant. The food was good and the waiter was efficient and friendly. The kids especially liked the lamb. Do not order the green cocktail drink. Whatever it was, it was way too sweet! The kids also liked the crispy fries. We all enjoyed the octopus & potatoes as well. Don't get the escargot here. It's not done well. First impression was not great but I'm so glad we went back! Just had a rather abrupt server/hostess on first try - they had no tables available (understood) but her communication of that info bordered on the rude. Next day, with reservation, we had a totally different experience with a young man serving us - kind, humourous, we felt truly cared for during our delicious meal. Steak was terrific. What a disaster tonight Our nig date for our 46th anniversary was a mess from the time we sat down to the end of the evening. We started by ordering a bottle of wine. They did not have it in house. The second bottle was the same story. Bottle 3 was the same but the waiter volunteered a substitute. OK We felt rushed to order our meal but we did push back and enjoyed a glass. My wife's steak and lobster were done to her liking. My steak was over cooked, but tasty. Then the power went out. We finished our meal and were immediately presented with a hand written bill. Buckle up, because this is a long one. We were staying the hotel July 2023 and decided to go to Gustav's for dinner because of the gift card that came included in our package. The menu seems perfect for the type of food that they serve. It took a while after we ordered drinks before we were able to order our meal, but so far no big deal. We were given two slices of bread that were cut in half which seems slightly too little but they were nice and warm and the butter was good. We had also ordered a salad, however, and we waited close to half an hour for that to come so at that point it would have been nice for something to be done to check if we want another drink or if you want a little more bread or something of that nature. Eventually our server came and switched out our cutlery for what was presumably the cutlery for our filet mignon. At that point we asked if our salads were coming and our server seemed a bit flustered but went back and got them immediately so they must have been waiting and just hadn't been delivered. Our server apologized and said that something would be done for us. That was appreciated because it was a simple mistake. This comment will come back again later. We ate our salads which tasted pretty good although I'm not sure if it seemed slightly overdressed because the length of time the salad sat out while dressed. Our steaks came basically right after my wife finished her salad and so the timing can't be purely a coincidence. We had ordered medium rare and medium for our filet mignon. They were medium and medium well according to the menus guide on what the inside of the meat should look like. We had to switch our plates because the filet migons were delivered to the wrong person and even then after we cut them open my wife noticed that hers didn't have any red but was basically pink all the way through. Mine had a hint of pink in the middle. For a 50$ 7oz filet mignon at a steakhouse, it had better be cooked properly, period. But it's possible it was cooked properly and left under a heat lamp. Either way, it's an issue. We ordered the peppercorn sauce on the side. The steak itself was delicious and the fingerling potatoes we got were also good. The seasonal vegetables that came with the meal were not under seasoned, they were completely unseasoned. It was a little bit strange to get bok choy as one of the vegetables but that wasn't the main issue obviously. There was a long gap after we finished our meal where we expected our server to come and ask if we would want coffee or tea or dessert or something of that nature but given the long gap we elected to not order dessert. Our server brought the bill took off the value of our gift card and despite saying earlier that something would be done for us for the extremely long wait between our order and their salads coming and the fact that the meat was overcooked, nothing was done and we were charged the full price. To say that we would not be going back again for dinner would be an understatement, despite it being conveniently inside of our hotel. There were plenty of opportunities to avoid the errors or make up for them, but the restaurant chose not to do so. read more

Ate here tonight and we were not disappointed. We were staying in the Georgian Bay Hotel which this restaurant is housed in. We had stopped into the bar the night before and were warmly greeted by the staff so decided to make a night out and have a fancy dinner. Our server was Chris whom we had met the night before and swapped fishing stories. He was very attentive and made excellent suggestions as we went along. We started with a couple pints of Stella and an appie. We split the Spring rolls between us which meant we got one each. The dipping sauce was tangy and excellent as were the rolls. We both ordered the Sirloin Oscar, her rare and me medium, and both were cooked to perfection and very well presented. My wife had the potatoes au gratin (very tasty she says) and I had a loaded baked potato. We had a nine ounce glass of house Malbec each and it was great too. It looks nothing like the photo. it is dark, dreary, the chairs are torn and worn. The food although nicely presented is not tasty. 3 of us had baked potatoes that were cold inside. They were returned still cold, to the touch, meanwhile the rest of the meal had been left so we continued eating and said no to a 3rd try at the potatoes. When part of a meal is wrong, the entire plate should be taken away and presented in its entirety. That is how a meal is to be eaten and how a good restaurant handles their mistakes. What to do when you've spent 8 hour in a car and are starving? You whip out Yelp and look for a good steak house for dinner. It's the only way to be able to unwind. Note: Walking into Gustav with yoga pants, bright pink running shoes, and hoodie is completely acceptable. (Hey, I was in a car for 8 hours and we went to eat before we checked in!). This place was completely packed for 7pm on a THURSDAY night but it is inside of a hotel so that might explain it a bit. At first glance I didn't think I would find anything that I wanted to eat. Our waitress came to greet us and I spoke with her asking her opinion. I wanted to know what she like. She asked me how hungry I was so she could narrow down the suggestions and I told her that I was a meat and potatoes kinda girl and not a salad kinda girl. She made a couple of suggestions, but I was still hesitant since every dish has a bit of a twist that I didn't think I would like, but eventually I settled on the wedge salad starter and sirloin with fully loaded baked potato as the side. My salad arrived a few minutes later and it was delicious. Can one complain that there might have been too much blue cheese and dressing on their salad? Most places skimp on the dressing and toppings but not Gustav's. My steak was cooked medium and its my fault because I asked for it. I was supposed to ask for medium rare. The steak was actually really good with the exception that I asked for it to be overcooked so the edges were a lot more cooked than I like. But that isn't their fault so I can't deduct stars or complain. I ate my steak and moved on with my life. The loaded baked potato could have been loaded with a bit more bacon and cheese and less sour cream but whatever. It didn't stop me from eating. There was no room for dessert for me but my boss loved the flourless chocolate cake. The food was so good we were considering going back a second time but we had prior engagements. Oh. Your receptionist/ server was very rude and very discriminatory....i assume because I was not white and just a foreign visitor. I went in to buy 2 cups of coffee togo since we didn't have time to order and eat a full breakfast that morning as we needed to do an early check out to catch our early flight. She gave no greeting, rudely asked what I wanted, annoyed about my order. She handed me the 2 cups I ordered and practically left me with the portable paying equipment to tend for myself. After a long day on the trails last weekend, we opted to just eat at our hotel restaurant. I am so glad we did. The newly opened Gustav had fantastic service and excellent food. Additionally, there was live music, although what is it about accousic guitarist and their innate ability to make every song sound ephemeral and sad, even 80s pop Emo guitarist aside, we had a great time. The meal started with a delicious walnut focaccia, served with whipped butter. SOOOO GOOD! For an appetizer we got the tempura tuna roll, which was really yum. In fact so yum, I didn't even take a picture Both the hubster and I had the filet mignon, which was tender and cooked to perfection. Since many of the seasonal vegetables were not available, I chose the potato au gratin as a side. It was so worth the calories. We shared a piece of chocolate cake, which was good, but sort of super market quality, despite the epic plating. I sense that dessert might be the one area Gustav's kitchen may need a little help. Time to look into a proper pastry chef!!! To end the evening, the lovely retired couple at the table next to us started chatting, giving us great insight in the local real estate market. Friendliness at your local eatery would never happen in Toronto Best part was the lack of sticker shock, when we asked for the bill. It was about half the price of steakhouses in Toronto, making it just about the same amount of money we spent at our epically flawed anniversary dinner. After a day of pampering at the spa, I decided to continue that theme by taking myself for a great steak dinner at Gustav. The restaurant has a nice feel to it. I entered and waited for the hostess to seat me. While I waited, I had a good view of the lounge where they had live music, which is a nice feature for dining. I was given the option of sitting in the lounge or the dining roo. I opted for the dining room because the lounge would have been too loud and I was grateful for the option. I started the evening with one of their signature Grapefruit Margarita cocktails ... Yummy. The meal started with French Onion Soup. I have to say it was probably one of the best French Onion Soups I've ever had. The broth was rich, complex and flavourful. The fried onion strings on the top were a really nice touch. The entree ordered was 6oz filet mignon wrapped in applewood bacon cooked Chicago medium served with thyme & garlic sauteed mushrooms and potato au gratin. Sounded good, but the reality was ... The filet was missing the applewood bacon. The seasoning was decent and the temperature was as per my request, but the steak itself was tough. I have never eaten filet mignon that was so tough. I actually wondered if a different cut of beef had been trimmed down to look like filet mignon. Probably not, but I still wondered. The sauteed mushrooms were meh. I could take them or leave them. The potato au gratin was delicious. The dessert ordered was their featured Mint Chocolate Creme Brulee and a Cafe Latte. The first test of a creme brulee is the crisp, bruleed sugar on top. You should be able to tap that surface with your spoon and hear/feel/see that satisfying shattering, crack of the sugar. Not the case with the dessert. Don't get me wrong, there was some crack, but it was more sticky and soft ... Disappointing. The creme portion of a creme brulee is supposed to be smooth, silky and luscious. Disappointed again. The texture was not smooth like it should have been. It was more like the harder custard you would get with a creme caramel and it was not smooth. The flavour didn't help the dessert either because the mint chocolate was really subtle, so ultimately I would describe this dessert as blah. Finally, though my meal was unfortunately disappointing, the service was great. My server was attentive and went above and beyond. That was the highlight of my dining experience at Gustav. Would I go back? Probably because I'll never write off a restaurant after only one taste experience. When I return to Collingwood, I'll consider returning. read more

I made reservations at least ten days before and we were seated in the wine tasting room. When I mentioned this at the front, I was told I didn't request special seating. My presumption was we would be seated in the restaurant section where I made reservations. Our location could not be changed but there was another large table in the restaurant section. The food was wonderful but at these prices, being seated in a dark depressing private room where the table was set for twelve and the door to the kitchen was in view, was disappointing. After checking into the Georgian Bay Hotel and Conference Centre, we had passed a few other steakhouses that we had considered venturing back out for. Upon seeing the menu for Gustav in our room, we decided that the slightly higher price range was worth not getting back into the car after a long drive. Were we ever happy that we stayed! Gustav was bumpin' with activity as live music and the "Buck-a-Shuck" oysters really drew in a large crowd. After being quickly seated, we were served up our order of oysters that were dressed for us by our server, Marlene (who was magnificent host). The oysters were incredibly fresh and went down smooth. After a terrific heirloom beet salad that my wife enjoyed, our mains of a Top Sirloin and New York Strip were quickly brought out to us. Not only was the food absolutely incredible, the service was super expedient! Terrific steak, amazing sides and a great atmosphere and service made our experience at Gustav one to remember - we would definitely recommend a visit. read more

Fabulous dinner from start to finish! First time here, and every member of my party enjoyed the experience thoroughly! Lovely ambiance, delicious food and drink, and excellent service. Our server Tyson was absolutely fantastic. Very charming, funny, polite, and helpful. He also arranged a surprise dessert for my Mom, which I dicreetly requested, since we were celebrating her 70th birthday. He was totally on the ball and knew exactly what I had in mind! Lol. No singing, just a candle. Lol. And when the carrot cake was delivered to her, it had 'Happy Birthday' written on the plate in caramel sauce. Which was actually something else I was hoping for! She loved it! Can't wait to go back! Hopefully Tyson will be working, as I told him we would request him personally next time around! Lol. My Caesar Salad looked completely unappetizing. It was whole Romaine leaves (not chopped to bite size prices) that looked wet rather dressed, and the 5 little pieces of croutons on it were burnt. The food, service & price are all great at Gustav Chophouse & Bar in Collingwood. The only problem for me was a huge black Newfoundlander dog who took centre stage when the band appeared. My friend has COPD & asthma & asked why the dog who sheds copious amounts of fur was present where food was being served a few feet away. The manager stated that it was a "service dog for emotional support" for the singer. A restaurant is an inappropriate place for any dog unless the owner is blind. The manager was defensive & not at all interested in her customers comfort or feedback. I question whether this issue is a violation of the Health & Food Safety regulations. read more

I ate there 3 times during the week, the first experience on the Tuesday was awful, the girl serving us had a bad attitude, talked to us like children, forgot about us, and was totally not on the ball. The second two experiences were great, the service, food, and professionalism of the staff were 10 out of 10. Steaks were perfect, and the seafood platter for two is heaven. Interestingly the girl that served us on Tuesday was busy at the table beside us apologizing and asking what she could do to make it better. read more

Instead they had a guy playing guitar with an amp blasting, we couldn't talk but yell and the waitress kept yelling what what! She said it's the holidays people are celebrating it should be loud! It's a week day, in a hotel conference centre at 8pm not a concert with a famous singer! The restaurant does NOT do take out on New Year's Eve (Their rule last minute, even when at 7pm the restaurant had 4 tables to serve). They were short on staff apparently, (THIS KNOWING it was New year's Eve), and I just cannot say they could have done a worse job of service. We went on a Wednesday to celebrate 47 years of marriage. The reviews were good and the dress code was dressy so we did, shirt and tie and jacket and a stunning dress worn by my bride. The place is actually casual and informal. There were four ladies dressed up but most folk were in shorts and tshirts. Our waiter was Tyson and very attentive. Very helpful in making suggestions for dinner. The seafood stuffed mushroom caps were excellent. My Caesar salad was good but the lettuce was not cut and large. Still tasty. My wife had the pickerel and was very disappointed. Lacked taste. I had the surf and turf and my steak was cooked perfectly and quite tasty. Not exceptional but good. Tyson insisted on offering us a desert on the house to celebrate so we had the chocolate cake a la mode. It was very good and served with fresh blueberries. The bill was reasonable but I noticed he charged me for the desert after all. While I said nothing , that was a let down. Service and staff were great and made for a very nice evening! We enjoyed an excellent Steak meal and the service was superb. We had requested a quiet table for two and although we were near a large group table it was relatively "low noise" and the music drifting in from the solo musician in the bar area provided a nice touch. We are pretty particular about our fine dining and this restaurant will definitely be at the top of our list if we're looking for a steak night out - although they had a few interesting seafood (unfortunately no fresh fish) and pasta menu items of interest for our next visit.
