The setting was beautiful. The high ceilings, the view of the winding pool and grounds, and the table full of candles at the center. All of it: beautiful. The service was very good as well. Erick ensured that we were always taken care of, and was very attentive, knowledgable, and professional.
But while all of that was great, the main reason for my five star review: Chef Francisco Rosciano. I cannot say enough for him. My girlfriend and I are vegan, and we tend to have a hard time finding restaurants with more than one option for us (if that!). Gustino seemed like the nicest restaurant at the JW Marriott (which was confirmed after visiting; very classy!), and I wanted my girlfriend and I to have a special dinner one night. I contacted the restaurant through the JW Marriott website to ask about vegan options, and the man himself, Chef Francisco, emailed me back the very next day with a list of several options, some of them custom! He also said that if I let him know what evening we will be dining with them, he would ensure that the pastry chef made a special dessert for us (I did, and he did!).
The food was delicious! Erick first brought out an apple-based amuse bouche that was very nice. We then started with a tomato bruscetta that was both delicate and savory. As my girlfriend commented, Italians certainly know their breads! Erick then brought an orange sherbet to cleanse our palates before the main course. For our mains, we each ordered our own focaccia pizza (no cheese, obviously, since we're vegan) and shared a fettuccine dish (using a special fettuccine that was not made with egg) with artichokes, asparagus, mushrooms, and cherry tomatoes. When I tell you it was to die for... oh my god... so good!! For dessert, as promised, Chef Francisco arranged with the pastry chef for a vegan dessert. I don't know how to describe it very well, but I'll try. It had a pair of long, thin, crumbly graham crackers with chocolate mousse spread in between, and I believe a kind of raspberry jam or accent on the side. Whatever it was, the dessert was amazing! The entire meal was delicious, and the presentation of each of the dishes was very well done and appealing. I only wish I took pictures!
Before our main dishes came out, Chef Francisco came to our table and introduced himself. We had spoken via email, but he wanted to introduce himself in person and welcome us. He even offered to speak with the chefs at the other Marriott restaurants about accommodating our vegan diet! It's hard to describe to others, but as vegans, we frequently feel like we're on "the outside" of society. I'm not complaining, because it is by choice, but when someone goes the extra mile to ensure that we are cared for just like everyone else, it is DEEPLY appreciated! From the egg-free custom pasta dish, to the dairy free dessert... Chef Francisco, Erick, and Gustino proved that they genuinely care about their guests.
