We are accustomed to eating Pho in America and this place's spring rolls and pho are much more delicious.

Not the worst Vietnamese food I've had, but pretty darn close to it. After a chilly evening in…read moreParis, my craving for pho led me to Chez Cay. Offering Vietnamese, Chinese, and Thai cuisine, Chez Cay unfortunately fell short of delivering authentic Vietnamese flavors. I ordered the Beef Pho, and found the broth lacking in depth and richness, while the noodles resembled more of pad thai than traditional pho noodles. Instead of fresh thinly sliced flank pieces, you'll find bits of brisket, meatballs, and maybe what resembles thinly sliced flank?? Attempting to salvage the dish, I reached for sriracha and hoisin sauce, only to discover they weren't available.

The menu is quite large and there is a menu in English. To start we ordered chicken dumplings that were good. I ordered Pho and my husband the noodles with chicken. The soup broth was tasty after adding all the herbs and sauces. My issue was with the beef slices. Some were tough with gristle that made it impossible to chew, others had an "off taste" and others were perfectly fine. The noodles were perfect! My husband enjoyed his dish but had a hard time locating many bits of chicken. I would not return as there are many other Vietnamese offerings in the area.

Pho came out shortly. Everything about it was almost perfect. From the clear and aromatic broth to bouncy not mushy noodles, to beef that was soft, fresh without any funky aftertaste that some other places have. The multiple layers of herbs brought everything together. All in €20 and warm and friendly service to match. If the weather is right , outside tables are an option. Staying around Republique was a great rotation to my stay.

I started with the nem du porc (crispy spring rolls) they came with fresh lettuce and mint that you wrap the rolls in before dipping into delightful sauce. They were truly the most incredible ones I have had in a long time if not the best of all time. The herbs were so fresh. I also got the Pho Boeuf (pho tai). The noodles were bouncy and the broth clean and simple. The was more than ample beef and they give you sauces and lime to go with it. Just know the bean sprouts are already in there in case you don't enjoy those but they were easily avoidable. I was also able to get some chilis to spice up the broth but they are Thai chilis so beware! I also got a Vietnamese limeade to drink and it was delightful. The server was very sweet and I feel like everything came out in a timely manner. If you are jonesing for Vietnamese in Paris this is the place to go hands down.
