The egg was cooked perfectly runny. Tons of spices and sauces going on. It was a bit too vinegary for my personal liking, but it was a delicious savory breakfast that was different than my usual order of an omelette or breakfast platter. My friend got a pancake flight (how cool is that?!) and the pancakes were huge! Visually they looked a bit on the dark side. But they were very filling. We also tried the chicken and waffles. The chicken was great, the waffle was not crispy at all. Both complimented each other well. The best part... our server was fast, on it, and well seasoned. These are square and no-kidding as big as my hand. Each. Four of them. Yeah, beignets are mostly air but one order was plenty for the two of us. I ordered the Eggs Pontchartrain---pan-fried trout filet, poached eggs, smothered in sauce bearnaise. I ordered the side of grits, plain, though I've also had their cheese grits. Both are stellar. Fabulous breakfast plate! Wife N went with the classic Benedict, ham, poached eggs, hollandaise, plain grits on the side. Delicious as always. Coffee is dark and fabulous. The rooms can get very very loud when it's busy, so it may not be the best if you're feeling overstimulated, have sensory issues, or want to be able to have a comfortable conversation.

My omelette (with cheese, spinach, mushrooms, and onions) was fine, but nothing unusual from an omelette you'd get elsewhere. Home fries and ciabatta toast were both really good too.
