Appreciated that the online menu was clearly marked for gluten free/dairy free/vegan/vegetarian. I had glanced at it prior to coming in. Did not feel hungry enough for an entire "bowl" so opted for the hummus toast. It was good but wish there was an option to add just a few more veggies onto it. It comes out with hummus and cucumber and a spice. My friends oat thing she got was a little bit soupier than she had thought it would be. But it was still tasty. I tried the Golden Hour Latte; an iced rose and pistachio latte and it was such a unique, delicious combo. I got an oat milk latte to go and it tasted good. There's a good variety of breakfast food on the menu to order with your coffee drink (or have coffee with your breakfast). Our family of 4 came into Happy Trails at around 8:15 in the morning on a Saturday. There was only one barista working, and she was also preparing the food. She was busting her ass, but one person is not enough. We ordered unknowing of the staffing situation and got out of there at 9:00 AM. 45 minutes is ridiculous!! We only got food, and below is the review. Avocado toast with hard boiled egg (2/5) - Although this tasted alright, everything about it was cold. The avocado is okay cold; the hard boiled egg should've been hot but cold egg is acceptable; however, even the toast was cold! Breakfast burrito with sausage (3/5) - This was supposed to be a sausage burrito, but there was no sausage to be found. It tasted very good, nonetheless. They skimped on the filling too--it was a loose burrito. Each dish came out separated by a few minutes. Another employee came out of the back, and he looked around blankly while the girl at the front did all the work. She shouldn't have been prepping food and drinks. Get your management together if you don't want poor reviews! This happened on the 22nd of June if somebody wants to figure out how to get it together. Give the girl a raise too! read more

They have a La Marazocco espresso machine!!! For those that don't know what this is, it is like the Porsche of espresso machine. I have wanted one for years and being able to try coffee from one within the US was amazing. The espresso was so smooth, with no sour or bitter after taste. I will put it in my top 2 for FoCo espresso. I would like to know more about their bean provider and origin, because it was that good. Since it's a new coffee shop it was pretty slow when I went. That is as expected though. Other than that, the staff was very nice and welcoming and the interior design was so cute, bright and colorful. I'm hoping we hit this place on an off day. It was a Saturday morning and we were hoping for a quick place to grab a bite before heading to the mountains. We were there for an hour. There was one person actually working and doing everything. Everyone was waiting for drinks and food. Everything came out one at a time. My avocado toast was cold and bread was hard. Sausage burritos were missing the sausage. Good taste though. Felt bad for the girl doing everything but they need more staff. I did see a guy in the back but not sure what he was doing.
