The place us one of my favorite breweries to hit shin I'm in FoCo. It's such a cute little place very homey feel with some great beers. Theres beautiful places to sit in both the front and back of you want to enjoy the outdoors and a few spots inside if it's to warm or you want to sit at the bar. In a town known for its craft beer scene, Hello Brew feels like a little refuge from the crowded, big-name breweries. It's a house-turned-brewery with a casual, inviting vibe--plenty of seating options on the lawn, patio, and inside. The decor leans very Scandinavian: light wood, bright spaces, and nothing overly flashy. It's clear the focus is on the beer itself, not on branding or gimmicks. We stopped by after tubing the Poudre this summer and honestly, it was a pleasant little break. The staff was friendly, though I did notice the familiar slight edge when I asked if they had any sours on tap. Not always, but sometimes brewery staff can come off a bit particular about what they serve. I get it--me asking about sours isn't a critique of your beer; it's just my preference. That said, the beer itself is solid. The hazy tastes like a hazy, the pilsner tastes like a pilsner. Nothing revolutionary, but reliably good. Pours are standard, and prices felt fair for what we got. Sometimes, though, it's just nice to grab a simple beer, sit at a picnic table, and watch people stroll by in Old Town. They also seem genuinely invested in the community, partaking in events like Pilsner Palooza, doing collabs with other breweries in CO, and supporting folks during the government shutdown and SNAP benefit gaps. I'd go again, though it's probably better in smaller groups and without young, mobile kids--makes for a more peaceful visit. Smaller brewery on a side street in Fort Collins. Near Ginger and Baker. Not a huge selection but they have some tasty beers. It's an old house turned into the establishment. Tastefully done. Nice outside sitting area for nice days and nights. We will be back. read more

I think Hello Brew was my favorite brewery I went to while on a recent trip back to Colorado. This was a road trip too and a lot of brewery experiences were happened so it's saying a great deal just how much I enjoyed this brewery. It's because of their creativity for their beer. Anything creative with a beer and sometimes it can push one of my ratings all the way to five stars. I had their Mick Jr., it was an IPA but such a different kind of one. I can't tell you how many IPA'S I've had in my beer adventuring but I never had an oat cream IPA. There are several kinds of hops that go into the beer but the sweet oat kicks in and it plays off the hops in such a wonderful kind of way. I could have had a couple of glasses of this IPA but I controlled myself as more brewery experiences were eagerly awaiting. Excellent brewery and highly recommend trying it! read more

What a find! A friend recommended this place. Down the street from New Belgium. They have solid brews across the board. I had the Czech-style dark and my husband had the Pils. Delicious! The building used to be a architectural office. It sounds like it was right place, right time and Hello found their home. Beers are solid. Service is fab! Parking can be a challenge on the weekend but worth driving about to find a spot. read more

Such a cute brewery in downtown Fort Collins. They are dog friendly inside and out which is a huge plus for us. We tried all of their IPAs which were all delicious. We ended up getting the Chet IPA and enjoyed it sitting outside in their Adirondack chairs. read more

Went there on 2/19/2023. First time here. It is literally in a house. More seats outside than inside. They had 5 beers on tap. Light Pilsner, dark Pilsner, hazy ipa, imperial stout and cherry sour. They fill crowlers of all. Then looks like they had Cans of the dark Pilsner. Bartender was very friendly. We only got a crowler of the stout to go. We opened it on 2/21/2023. Still had carbonation. The flavor was decent but nothing special. Definitely want to go back and try more. Cheers! read more

We are absolute beer snobs but loved every beer we had. Highlights were the dark brown ale, the Czech pilsner and the pale ale. Rarely do you find a small brewery that does so many different types of beers so well. We didn't find one we did not like. My only concern with a high review is that it's a small place and I'm worried it'll get too busy with popularity. read more

This place is amazing! We happened by it and thought we would give it a chance, not knowing what to expect. This used to be an old house and has been converted into a brewery and it was super cool. We were warmly greeted by Christine and Ryan who also happen to be the owners and they were fantastic. I don't know if we enjoyed the beer or their company more, but loved hearing their story (their playlist was on point as well). They also introduced us to a "beer shot" that none of us had seen before. If you want to enjoy some good beer made by some good people, make sure to stop by - it's well worth the Hello. read more
