Went there today during a day trip to the area. Hoped to find some nice meat. One of the top sirloin (half) steaks in the front counter butcher block display had some weird dark, blackish part that my wife and I had never seen before in any beef. We were going to buy a lot of their products based on the online reviews, but after seeing that weird, never before seen thing in the meat that was displayed in their front counter, we left. Yes, I should have taken a picture on my phone. I will from now on to back up my opinions. We didn't understand why all their sirloin cuts were cut in half, instead of the full sirloin that you usually see. That didn't appeal to me from a grilling steak perspective. And after seeing that weird black part of the meat, we didn't trust the rest of their products, so we left. read more

Nice local butcher shop/deli. They have a slab of bacon and asks "how thick" you like it cut. They sell ground turkey, stuffed chicken, brats, franks, jerky, beef sticks, pork chops, ground beef, steaks of all cuts, and even raw bones for your dogs. You can literally buy an entire cow there. Just be sure to order ahead, there is a waiting list. Not open on Sundays. A little bit of a drive from Madison but well worth it! You can really taste the difference. We made a quick stop here while heading south on IL Highway 69 toward New Glarus. I bought some braunschweiger, which was really nice, and not as fatty as many I've tried. Go to New Glarus. Just before you get to the only stop light in town there will be an industrial park, that's where Hoesly's is located. If you want to taste the some of the best brats, beef sticks, deli meats, and sausages in all of Wisconsin stop here. Instead of me just ranting about how good each product is, and they are. Just go to Hoesly's, ask for a brown bag and insert the following items. 1) Kalberwurst (Veal Sausage) 2) Beef Snack Sticks (youll never want to buy beef sticks from a gas station again after you try these) 3) Sliced Veal Loaf 4) FRESH Beer Brats 5) FRESH Tailgater Brats 6)Stump's Hot Olive Brats 7) FRESH Swiss & Mushroom Brats! Now if youre missing any on these items from your grocery bag, youll have to go back. I had friends from Austraila, that were traveling the US, make a 3 hour drive from Chicago just to taste these Beef Sticks. They bought 10 packages, ran them about $20 - $30. This was a year ago. We went there for the first time today. They have the best flavored brats around! We heard about them so traveled from Madison to check it out. We got pizza, philly cheese steak, cajun, jalepeno and cheddar brats. They had more to choose from but those were our choices. The staff is super friendly and knowledgable. read more

First my dad took his Deer here for processing, I offered to drive him He has 2 injured arms, the person accepting deer was extremely rude, and when my dad asked him if he could cut the horns off his deer the guy handed me a saw, Im a small framed girl and there was just no way I could cut thru it all, I asked the guy for help several times with no luck (he said he was busy) then my dad hurt his arm but got the job done, and me and my Dad had to carry the Deer into the processing area, with no help from the worker. Second trip to Hoesly's was to place an order for Beef processing, the woman looked at me walked out of her way around the counter to talk to the Gentlemen that was behind me in line and asked it she could help him (she didn't know we were together) is what she said when my dad explained to her I was his daughter and I was first in line. Then all of sudden she was nice as pie when she heard my last name....funny how that works! So on to trip # 3 to pick up the Beef ordered, More than half of the steaks were shrink wrapped with holes in the wrapping and freezer burn, when I called to ask that it be corrected, the Owner simply stated he was more than willing to take the Grass fed beef that I paid for back ($950 worth of meat) and only pay me back for the processing fee which was an additional $225). So he could walk away with $950 worth of meat for $225. That was a nice gesture, but I can see that the Customer really doesn't matter to these people and since I have owned a meat shop and worked in a slaughter house/butcher shop previously I Can honestly say this was the worst experience ever! read more
