Before I get to reviewing the sandwiches I want to mention the great stuff I saw at the meat counter that I will definitely come back for! They had chorizo, pork breakfast sausage, Hungarian pork sausage, two kinds of brats and more. Nice organic chickens, bone in skin on chicken thighs, and herb marinated half chickens. Their chickens are smaller than what they sell at supermarkets which tell me they are younger and more tender. The steaks....ohhhh the steaks! Wagu, Prime grade, rib-eyes, New York Strips, big shrimps, fish, etc. In the other cold case there was Duck, and other Duck related products, plus so much more I can't remember them all! They are a busy place at lunchtime and I didn't mind waiting. We had a turkey and bacon hot sandwich and a BLT. Outstanding on both! My wife's only suggestion that the turkey needed more chipotle aioli, it was a bit dry.

Starting off, they are way overpriced. Unless the owners gross profit percentage is 50% or more, should definitely be embarrassed pushing low marbled over priced products. Also, questioning the rotation and shelf life on the product. Quality; putting a first cut, wedge cut that was barely scraped in your counter is embarrassing. Anyone that knows anything about cutting or displaying would walk out, which I did. Displays are amateur at best, no quality or finesse. I would recommend avoiding this place until they learn the business.

A butcher will appear more expensive but when you factor in the waste from pretty much all the grocery stores and big box stores you are actually saving money. I was tossing out what should have been good meat from so many of our local grocery chains so my husband and I decided to check out the local butchers and I was surprised at how much better their meats are at the Hook and Cleaver. They are willing to take the time to help you decide on the best meats and I was really impressed. No more fatty steaks and meat that turned into chocking hazards when cooked, everything we have purchased from this shop is excellent. The quality and freshness of their steaks are phenomenal! I have always been a good cook but with finding this shop it turned up my cooking to a whole new level. It's a good feeling to know that the owners and everyone working here are very honest and friendly. I'm picky about my food and this shop truly is a cut above.

I am an absolute stickler when it comes to the toxins that go into our bodies from the food we eat, to the water we drink, to the clothes we wear, to even the air we breath and more... And with primal pastures, I am completely convinced that everything they put their name behind is the ABSOLUTE gold standard. And by gold standard I mean it is the way God intended it to be and the way humans were created to live. We have the family membership: my wife and 3 kids, ages ranging from 10 months old to 5 years old and we visit the farm for fresh air and sunlight every single week. The people and community are friendly, the landscape is green and beautiful, so much beautiful nature. Our visit to the farm has become a routine for our whole family, a sort of decompression from the stresses of everyday life. The kids absolutely love it, the hours fly by when we're there but the minutes move slowly in the most relaxing way. The seasonal fruit and vegetable pickings is a definite plus as well, (the kids love going and picking blackberries and cherry tomatoes when they're available!). Pasture raised they claim but the egg shells are weak and the yolks are not a dark orange. I understand this is not a real gauge on a healthy well fed hen. But the shells are very weak. I also did not see any hens walking around.
