I visited some the famous dessert shops (Laudree, Dalloyau, Lady M, Café 103 at IFC and others) when I went to Hong Kong. After I came back, I thought time to make my own dessert. I found J'Adore Les Macarons on Yelp that they offer macron class, let's do it! The instructor Connie is friendly and knowledgeable. My friend and I arrived 10 mins early before the class, the notes and some ingredients were prepared and placed on countertop. Yes, we made macarons at her kitchen. The first thing I learnt from Connie was how to pronounce Macaron. (Mac-a-ron). Macaron is referring to the French Macaron. If pronounce it macaroon, it is the coconut kind. We started with a cup of tea and tasted beautiful macarons during the class. Our group decided to make Lavender macarons with buttercream and chocolate ganache which made of 66% Valhrona dark chocolate. Connie taught us her secrets and techniques to make Parisian macarons. I heard about this from a friend who wanted to take a macaron baking class. My experience has been limited to eating these delightful treats. I am relatively new to them as just being introduced to them this year! Although I am a macaron noob, I've looked online and read recipes and know enough about them to truly appreciate the precision that goes into its creation. So I went to their website and signed up for a class on Victoria day. I went on my own as my friend was unavailable. Connie, the instructor emailed me promptly to let me know as soon as there are 4 people in the class, it will be good to go. The class is held at Connie's house which I liked as it was warm and comfortable and made me feel at ease. I'm just a self-taught baker making assorted cookies and cupcakes at home and have never taken a class before so I didn't know what to really expect. The intimate setting of having 4 students was awesome. She had tea for us to drink, fun aprons to wear and 2 sample macarons to taste as we learned the secrets of baking macarons. It's great for people who have tried making macarons and need to tweak something to make consistent perfect macarons. You can tell Connie is just obsessed with macarons. I love it! She has done the work, spent time learning the skill and art of them and loves sharing that information through her classes. I think she said she has been making macarons weekly for the past year and a half! That's a LOT of macarons. If you love macarons and love to bake, Connie's class is a MUST. I had so much fun, and she is so pleasant. She even welcomes emails if you have a macaron crisis at home and have questions in the future. The price is fair. $100 for instruction PLUS you get to take 20 macarons home! It was definitely worth it. The whole experience makes me dreamy for Paris and macarons. I have been recommending everyone to try out the class with Ms Macaron and just realized I have not reviewed it here. For my niece's birthday, I enrolled both of us in this class. She is the baker and I just like to try the samples. When we arrived, Ms Macaron has a small plate of samples and tea ready for us to set our mood to relaxation. Armed with the instructions, we went through the steps of making macarons from scratch. Even though I am not a baker, I find the steps easy to follow. I really enjoy the techniques. It does help if you know how to pipe, but not necessary. We made two different kinds of macarons and took home 20 pieces each. It was a very enjoyable 4 hours learning and bonding. I can't wait for other classes to start as I know Ms Macaron was just in Paris studying at the famous Le Cordon Bleu for pastry and sweets, etc. If you want to up your baking skills, or just want a fun afternoon learning, I highly recommend taking a class with Ms Macaron. read more

I attended this class with Connie with my 10 year old daughter, who loves to bake, back in December 2014. I wanted to wait until I had tried to make my own batch at home before reviewing. The class itself was very fun and informative - lots of hands on and a very comfortable learning environment. I chose this class because of the domestic setting - using equipment that I can replicate at home, instead of a fancy professional school. Connie is an excellent teacher who is enthusiastic about her macarons. Over the Christmas season, we finally got a free day to make the macarons - and we were successful - our first time!! It was handy for me to have taken my daughter because she kept remembering things that 'Connie had told us...' Above all, she had a lot of fun. J'adore les macarons, and j'adore Connie! Chef Connie teaches macaron making classes in the comfort of her own kitchen, with familiar tools, and with only a small group of people. It's a great, fun way to spend a Saturday! She gave us detailed instructions, patiently answered all of our questions, fed us treats, regaled us with stories from her classes at Le Cordon Bleu in Paris, and kept the afternoon light and fun with her superb sense of humour. My sister and I got a gift certificate for the macaron baking class for Christmas and we both had a great time learning the art of macaron making! Connie was well-prepared, funny and knowledgable and made sure everyone felt comfortable before diving in to the baking. The tea and macaron samples to start definitely helped get everyone in the mood. Having attempted making macarons myself twice (with varying success), it's clear to me now that it's a very precise process and Connie was very helpful answering any questions we had along the way. The class struck the right balance between hands-on involvement and demonstration. Piping the macarons correctly was tricky at first but by the end everyone in the group was doing a great job. In the end we each went home with a starter kit and 20 macarons each. It was a fun afternoon of baking, learning and made me feel more confident about attempting to make macarons on my own again. J'adore les Macaroons would have to be one of the most professionally run businesses that I have ever experienced. Information was quickly given as were the response to emails. Connie's customer service is impeccable, even to the point of handwriting cards as well as sending photo's of the gift to me so I knew exactly what she was getting. Connie is a lovely host and offered good instructions. However, this is mostly a demonstration class meaning Connie did most of the work as the students looked on while standing around in her kitchen. I was disappointed in how little the students participated since it is advertised as a hands-on class. We were only allowed to pipe the shells and filling and dust the shells after Connie prepared everything. So for those who learn by doing and not watching, this is definitely not the class for you. There were five students in the class and collectively "we" (a-hem Connie) made 100 of two types macarons to split between us to take home. My association with this place is based on seeing them every weekend at the Bakers Market with really good macarons, however, get there early as most flavors are gone within a few hours if not sooner. That's not to say that what they have left mid way through isn't good, you just need to get there early for your favorites. I love the cotton candy flavor macaron. We have always wondered why macarons are so pricey. After all, they are tiny. Having taken Chef Connie's class on macaron making, we went away with more appreciation for its artistry and respect for French pastry chefs. Chef Connie worked fast and was very organized. Her precise execution, attention to details and knowledge of the culinary world were most impressive. Not only did we get to taste a variety of macarons, we also got to pipe the shells and the fillings. Six trays of marbled macarons were baked, cooled, assembled efficiently. Super worth it. I'm not good at baking by any means. Half the time I bake desserts and such I use pre made cookie/brownie mix so I was a little nervous when we signed up for this class. I think Connie usually expects a more experienced baker as a student but she was very accommodating for my friend and I (the other party cancelled last minute so my class was super small, usually it can be up to 6 people). We learned everything from how to properly pronounce macaron and its origins to how to bake it for future pot lucks and such. Obviously Connie has experimented and tweaked her recipe a ton through the years and can confidentially teach us how to make the perfect macaron with the foamy "legs" and how to avoid the numerous mistakes one can easily make when making this delicacy. Although there is a learning curve in most steps, especially the whisking parts and shaping the macaron shells, my "failed" macarons still looked halfway decent. The macarons are a little too sweet for my liking but that's how they're supposed to taste. read more

I've picked up a box on the Bakers' Market. I think they were: chocolate (pink), chai and bacon (beige, chai was too strong), salted caramel (beige, my favourite!!, very creamy buttercream), pistachio (green), vanilla (green, too sweet), and sesame (green, nice and strong sesame). I am from Boston so I found this store through online reviews and just from the pictures on the website I placed an order immediately. These macarons are amazing! They are the perfect combination of chewy and creamy. I have tried macarons from all over the Boston area (literally almost every single place I could find) and these are by far the best I have ever tasted. To my surprise when I went in to pick up the macarons I discovered that it was actually a wedding store. If you are in the area I would highly recommend both the wedding favors, invitations, and of course the delicious macarons. Before meeting Connie, my mom and I had spent afternoons attempting (and failing miserably) to make this finicky French confection, so for mother's day, I took her to Connie's baking class where we spent a wonderful afternoon learning all the secrets to making macarons. At our earliest opportunity we again prepared all the ingredients and followed the steps we'd learned in class. SUCCESS! One hundred completed macarons, each tall and frilly and smooth on top. Nothing like the multicolored, no-frill (that's bad), wafer-like failures of before! Neither of us had ever been to cooking class before. Connie invited us into her home where we first sampled some completed macarons and learned all about what makes a perfect macaron, as well as the work that goes into them. We then spent the rest of the class making the macaron shells and two kinds of filling, and carefully assembling them. The steps we followed were provided in print for us to take home. We were also given some baking tools and 20 of the completed macarons we'd made in class, and she had any necessary baking equipment available to buy if needed. As a small class of 5, we each got hands-on experience and practice at many steps of the process, especially piping. Connie was able to accommodate all our different skill levels and fill in any knowledge gaps. She was friendly and patient and even shared her stories about her trips to Paris and how she developed such an interest in these delicate desserts. We were all treated to a couple macarons, which were heavenly (the best I've ever tasted), followed by a fun and very informative Macaron lesson.
