Rude staff. Poor customer service. Got here at just after 8PM on Valentine's Day for a late dinner. Greeted at the door and were told they close at 8:30 and not 9 PM as stated on the sign. Told that we could stay till 8:30 and then have to skedaddle. Very rude staff. We walked out and decided to go a few doors down where they were happy to have us well past their advertised closing time. Won't be returning to this place. read more

While visiting to Lindsborg's from California, who has at least five or more restaurants per town that are Mexican food, I happen to drop into Jalisco Mexican restaurant in Lindsborg and was quite surprised on how authentic and tasty and delicious the food was. I was instantly greeted and sit down at the table And ask if I would like anything to drink and they said the salsa and chips would be on the way. When they delivered me the salsa and chips the sauce was mildly spaced and the chips were nice crispy and warm. It was lunchtime so I ordered the Beef burrito while I ate the chips. The burrito came and it was sliced steak.The flavor was wonderful, and on the side in a fried flour tortilla, was pico de gallo, guacamole, cheese. For those of you who have never eaten at Jalisco's, you are missing out on a Very good meal and there's plenty enough food that you don't go away hungry. The beef burrito was on special for only $8.98 and for what you get is an unbelievable lunch or meal. I highly recommend Jalico's because in California there are many Mexican restaurants as for me. I was on a road trip and wasn't expecting a lot of food options, especially as a vegan. I was so happy to find out their beans and rice were vegan. But, I was also so impressed by the kindness of all the staff, the unique flavors, the large portion sizes, and the low prices. If I lived here, I would be visiting this restaurant a couple times per week. read more

Stopped in Lindsborg and wanted lunch. Decided to try Jalisco. From the start our experience was not good. The waiter was annoyed that it took us so long to decide what to order. When we ordered we wanted to substitute a meat for a different one (in a combo fajita meal) there was no flexibility. Our fajitas came out burnt. They don't come with the normal fajita stuff (sour cream, guacamole, lettuce, cheese) just the meat rice and beans. When we told them about our meal being burnt the first guy said no that's not burnt (it clearly was) the second guy said it was because we didn't stir it soon enough saying that we had "almost finished the meal" this was not the case. It was clearly burnt and they were not willing to do anything about it. I would suggest going anywhere in Lindsborg to eat but there. read more

We drive from Oklahoma to Nebraska several times a year and always stop in Lindsborg. Lovely town with lovely walking areas and nice public library. The food at Jalisco's is always good. It is simple, reminds me of eating at my aunt's kitchen table 45 years ago. But the salsa is perfect, fresh blended, and adds just the right spices to the food. Prices are reasonable. Service is prompt. read more

The first couple of times I ate here, it was really good. I always go for the fajitas with the red bell peppers. However the last 3 or 4 times I have eaten here my meal has been way overcooked and dried out. It is hard to eat fajitas when they are really dry. Overall the quality here has slipped drastically. Surprised at how good the food was. Was driving by, discovered this great town, and dropped in for a bite. I'm a relleno freak and this was prepared so differently and tastefully that I would rank it up there with some of the better ones I've had. Average to above average food. Didn't really notice anything original on the menu so I opted for the Burrito Especial. Good service, friendly staff. Nice and clean. Only thing that was questionable was that my food literally came out about 2 minutes after I ordered. I guess if you're in a hurry that's good. read more

LOVE Jalisco's in Lindsborg! I drive from Salina (home of several home-owned Mexican restaurants) just to get their delicious Mexican fare. Service is friendly and SUPER SWIFT! I've been eating there since they opened, and have never had anything that wasn't just delicious, never any cold food. Their salsa is garlicky, which I just love, the chips are always tasty and warm. (now I'm stopping my spring cleaning to go get some Jalisco's! I actually bring a couple of meals home with me, which will last me for the week) read more

The salsa is yummy. The portions have seemed to have shrunk since when they first opened. The portion sizes do not justify their prices. Their chimi's are like frozen burrito sized compared to a chimi you'd get in a southwestern state that is so huge you eat 1/2 and take the other 1/2 home. Also, apparently no one in KS knows what machaca is, because when you request it they look at you funny. No margaritas, just soda-pop. Meh. read more

As stated in previous posts, food comes out quickly. A result of premanufactured food that only needs to be warmed. My plate was ice cold, food barely warm and had the appearance and taste of frozen food. Lots of built up dust in dinning room. Not a fan of this restaurant based on this visit. read more
