    I visited this cart on a whim at The City Flea and they have the best veggie burger I've ever had. Everything else looked good also.

The only thing that feels more welcoming than that is sitting down for a meal or drink at Paxton's Grill. When you walk in you may be drawn to the curated selection of overpriced local art. Maybe its the bike on the ceiling. Maybe its the inevitable welcome by one of the staff, but once you choose a seat, you will realize that there is much more to indulge in than the eccentric eye candy the building projects. If you are a breakfast person, you should try the omelet. They say it is 3 eggs, but given the size the justification can only be that eggs are that of a Condor. The plate has a hard time containing the volume of protein and sides that are included, it comes out and reminds you of your 35 week pregnant wife walking downstairs in her pre-baby leggings, you don't say anything about it because of the love for what you know is there, but it just doesn't fit. Like Goetta? Of course you do. Get the goetta bowl. The combination of goetta, potatoes, gravy, and love create a symphony of flavor that takes you back to the first time you heard Avicii's "Levels" in reverse. Such a simple concoction, yet the experience makes you feel like you unearthed a megalodon tooth. Filling, simple, delicious. Okay, maybe you are not a breakfast person. Well, go for lunch or dinner and get the Big Paxton. This burger speaks to you like my wife did when we were dating. This hunk of beef lays comfortably on a bun that is toasted yet soft. Blanketed by swiss and bacon that harkens to our aforementioned coziness. Its like you form a symbiotic connection that spans from your plate through your body to the restaurant itself. These forms all connect better than my 4 year old trying to do complete a square in her "dot to dot" book. But then. Then you get to the fries. If arbys, waffle house and the state of Idaho itself decided to invest Elon Musk's net worth into research they could not craft a seasoned waffle fry this good. Its like the cooks, dare i say chefs, in the back read these potatoes a bedtime story to make sure they were just right. The crisp, the flavor, the size. Sometimes I order two sides before I go home because I know my mother-in-law is cooking and she has not opened a spice drawer since '94. Paxton's treats every customer like the grounds crew at Augusta National prepping for the Masters. Meticulous, kind, caring, they think of what you need before you can even ask. Give the place a try, it will remind you of what is special about Loveland. Also, the cocktains are good.
