Over the years I've for the majority of the time whenever I'm out of state, would patronize Jinya Ramen--been to their Denver Union Station locations, Chandler Arizona, Salt Lake City, one of the earliest times was in Vegas, and basically their brand set the tone for what a Franchise ramen could be. And yes, I could taste the lengthy hours here at Kyuramen that were put in to slow cook the richness out of the pork bones; the portions were measured just right so you can savor the soup, the noodles **al dente**, the egg silky custard like, the Chasu **melt in your mouth** and not feel overwhelmed with the entire ensemble. The karaage chicken/ Taiwanese pop-corn chicken was exploding with moisture, it had the right characteristics of popcorn chicken, crispy light with tapioca starch layered on the outside, marinated in 5 spices, and fried to perfection with the right tenderness.
