    La Casita was my childhood Tex-Mex staple at the old location off of Planet Ave near Central Mall…read more I have fond memories of eating here multiple times a week with my mom and dad, and going here every time family visited from out of town. When we moved from Salina when I was 11, every visit back was surely just an opportunity to go visit La Casita. A few years ago, a second La Casita (this location) cropped up. My grandmother knew the full story, but I can't remember it, and she has since passed. I have visited this location maybe 4 times since it opened. They seem to have retained the original recipes, and possibly the most important one - the hot salsa. This salsa is so good that my uncle has been trying to replicate the recipe (with no success) for the better part of 20 years. It comes in an opaque red ketchup bottle, and it is pretty darn hot, but in the good, palpable way. It's a lot thinner and "watery-er" than most expect salsa to be. You will find nary a chunk of tomato or pepper in this salsa. It is just pure, puréed tasty stuff. And the chips are fantastic as well. When I was a wee tot, I used to get a chicken quesadilla every time I came. It was so simple, yet so flavorful due to the marinade they use on the fajita chicken. You can hardly call it Mexican, but that's not what I'm looking for when I come to La Casita. The refried beans, rich with lard and love, are the benchmark I use to judge all Tex-Mex beans, and I live in *Texas* now. The rice is perfectly greasy, and maybe I'm crazy, but that's what I want all Tex-Mex rice to taste like. Now that I'm older, I opt for the hot pork steak chili when I come in. It is a soupy mixture, with chunks of moist pork served on a plate alongside beans and rice, and served with three warm flour tortillas. I like to make three little burritos using the pork mixture and tortillas. It is hot, hot, hot, and the best thing on the menu, alongside the enchiladas. La Casita is a can't-miss if you're traveling through Salina, and is beloved to me and so many others.
