The Silo - Mushroom and Arborio cooking class with Chef Billy Ross

The Silo

ORIGIN: Over one hundred acres that surround the two…read moretowering silos had supported two families' dairy farms for nearly three centuries. In 1968 popular musician Skitch Henderson and his wife Ruth purchased the property as a personal retreat. The couple hosted musical performances, art exhibitions, and cooking demonstrations led by prominent chefs. In later years nonprofit and national historic landmark status was established for the property. ATMOSPHERE: Events take place in a repurposed post and beam barn. The beams are exposed, giving a rustic charm. EXPERIENCE: Alessandro Piovezahn, the current steward of the nonprofit property, is actively looking to revive the Silo's influential public events. I enjoyed an intimate concert that featured the work of a five-time Emmy-award winning composer Jeff Beal. A legendary Steinway piano brought his music to life. A reception in the barn preceded the concert, with food prepared by Chef Constantine (Dino) Kolitsas of New Milford's Greca Mediterranean Kitchen & Bar I also enjoyed an evening cooking class with Chef Carlos Perez of Litchfield's At the Corner restaurant. In the course of the three hour class we were guided on culinary techniques by Chef Carlos Perez and his former colleague Chef Billy Ross (now at New Milford's Greca). I greatly enjoyed learning how to make a thoughtful fall menu that includes popular dishes served At the Corner, and dining on the co-prepared dishes with fellow foodie community members. Given limited of 16 registrants, everyone was active. I already registered for another class with Chef Billy Ross. SELECTION: Classes representing a variety of cuisines and dish types are available, including gingerbread house-making, pasta, and risotto. TIPS: Check the farm's Facebook and Instagram accounts for event schedule. The class + dinner and cocktail was $125 per person. The Silo will host a winter farmers' market this year.

I had signed up for a Saturday morning cooking class 7/3 as a gift to my wife, but had an emergency that prohibited us from attending class. My wife called the school that morning and was told it would be no problem as we could select another class over the summer. I took them at their word, but after leaving FOUR voicemail messages spanning three weeks, no one bothered to return my call. I stopped by the school and left a message with a gentleman teaching a cooking class to please return my calls, but again I was never called back. Having exhausted attempts to reach the school to schedule another class, I decided to contest the $300 charge with my credit card co for the class I could not attend. Here it is 9/29 and the proprietor has not yet reached out to me, but has decided to keep my money stating the terms and conditions. I find this business lacks ethics for a small town like New Milford. Buyers beware! Please note the 9/17 call/message was not returned.

Wonderful and insightful experience! As a Registered Dietitian Nutritionist, I spend a lot of time…read moreteaching people how to shop for and prepare healthy foods. Yes, a lot of what I do entails teaching people foods to eat for optimal health, but the actual preparation of the food is a big part of that too. I came to the Zwilling Cooking Studio on behalf of my job, to enhance my cutting skills by taking their "Basic Knife Skills" class. Firstly, the Zwilling Cooking studio is modern and beautiful! There is also plenty of parking. I did not know what I was getting into when I signed up for the course. I didn't even know who Zwilling was before this, so it was a great experience. Upon entering, I was immediately greeted by the instructor (unfortunately, I forget his name) and assigned to a "station". It was a small class, probably 12-13 people. We worked in groups of 3 on kitchen islands that were set up with a cutting board, a variety of knives, and some food to practice with. The kitchen itself is bright, modern, and spacious. In addition, the placement of the stations allowed for easy viewing of the instructor. Spacing between the kitchen islands and group members felt a little tight at times, but nothing extremely uncomfortable. During the course, we discussed the companies history, the different types of knives on the market, appropriate uses for different types of knives, and how to maintain your knives. We also received some hands-on experience with knife techniques. Among my most favorite, I learned how to properly hold a knife, how to skin a tomato as well as an orange, and how to prepare parsley. At the end, we prepped a small bag of veggies that we were able to take home and use. In terms of service, the instructor was amazing! Very patient and communicative. Throughout the class, he walked around and observed our techniques, then provided feedback accordingly. He also provided a lot of professional insight from his time as a chef, that really put things into perspective. After the class, we had a chance to shop in their store and were offered a discount on regular priced merchandise. They have a great selection of items including an impressive clearance section. I ended up purchasing a steak knife and paring knife at a steal. The only thing I would change about this experience is the communication regarding registration. You can easily sign up using their online portal however, once you sign up, you don't hear anything back. It would be nice to know who the instructor is and perhaps some information on what to wear or rules in the kitchen, in advance. A reminder or confirmation a few days prior would be courteous as well. Perhaps they do this and I did not see anything (?). Not a big deal but a helpful suggestion indeed. Overall, it was a good experience. I highly recommend it for anyone seeking to build their culinary skills, whether professionally or personally. Zwilling offers actual cooking classes, which I think would be more ideal for couples, friends, or families wanting an authentic culinary experience. I will return for one of those, but in the interim I highly recommend visiting.

We started off with a quick lesson about different knives and what they're used for. Then we got to practice on our own. There was enough space and supplies. Everything was clean. I wish we were given more to practice with, especially considering the price ($70 for an hour) but overall it was a good experience and I definitely got more comfortable with knives.

My boyfriend and I wanted to try a cooking class for our anniversary, but the costs for going to a public cooking class are often very high. My boyfriend stumbled upon Jesse's website and it seemed really cool (and has pretty pictures), so he reached out. Jesse responds really quickly and we were lucky to secure a time slot for the weekend. Jesse offered to have a quick chat with us over the phone so he could come up with a customized menu for us and set expectations. For example, I don't eat seafood, so Jesse took that into account and made sure there wasn't a shrimp dish. Eventually, we landed on a Mexican taco menu (which was appropriate since Jesse is a master of tacos) because we wanted a menu that we could then easily take and make all the recipes ourselves. Jesse arrived promptly on time and set up his many kitchen tools and supplies in our kitchen. It's great that he can come to you! He was able to adapt easily to our kitchen set-up and get started. He started off with making us a salsa and guacamole so we could nibble as he gave us a ton of fun facts about cooking / food and prepped the other courses. He prints out his recipes so you can take notes as he goes along. The whole thing is very conversational, you never feel like he's talking AT you, but with you. You can ask him questions at any time. I never felt overwhelmed or felt like anything he was making or explaining was too difficult for me. In addition, I learned how to properly cut an onion and how to press tortillas. He had asked us beforehand if we wanted to be more hands-on, so he showed us how to cut the onion or press the tortillas and then we went ahead and helped with the prep. Not only was Jesse super knowledgeable and patient, the food he made was delicious. He even cleans up after cooking, which is a mega bonus! We had enough leftovers for another meal the next day. After taking his private cooking class, we both feel empowered and enthusiastic to learn and cook more. :) I definitely would work with The Maker's Kitchen again. His prices are extremely reasonable for the value you get, you get a very personalized experience (you're not lost in a class of 30), and he's a cool dude. You will learn a lot. You can tell that food is definitely his passion and that he's just trying to do what he loves to do (and educating others so that they hopefully can feel the same!). It's awesome! Thanks Jesse!
