It was not yet 5pm on a Wednesday evening. The guy at the bar asked if we had reservations, which we did not but they did have space to accommodate us. Now you may be wondering about the food. I can confidently say that this beef Wellington was one of the best I've ever had in my life. It takes 30 min for them to make it but it's well worth the wait. I've been to Gordon Ramsay's in Vegas. I've dined in Michelin restaurants. This was better. The filet was melt in your mouth perfect medium rare with a great wine sauce. The puff pastry and mushroom layers complimented it so well and if you can see that technique, no air bubbles between the meat and the pastry. Service was good. The fish and chips were average at best. The triple cooked chips were hit and miss, some perfect and others hard in the center like day old roast potatoes. The fish was slightly overcooked and the batter was ok, below average from other fish and chips we've had. The steak was cooked as ordered but again pretty average tasting, the prawns were not the freshest and the squid was delicious. Doubt we'll be back

They will happily alter to suite vegetarians etc. Everything we had, from a light broad bean and mint velouté soup, 20 minute sugar/salt cured fresh mackerel blow touched to crisp the skin, local beef and two deserts was outstanding. The staff were very professional, knowledgable and helpful. Decor is modern, clean and very attractive. There is absolutely nothing I can say negative about this place. Apparently others feel the same way, it is becoming extremely difficult to get a reservation. Interestingly the kitchen is open and a hive of activity. Steven Edwards (an award winning British chef) and his team clearly know what they are doing and are not afraid to experiment and surprise. For example; bread is a light, warmed brioche bun with a glossy Marmite glaze. Absolutely stunning, especially considering I do not like Marmite! My wife, daughter and me spent a very enjoyable 3 hours dinning at Etch and left very happy and pleasantly surprised. The 8 course tasting menu is not over indulgent, just right for anyone with a normal appetite. You may have noticed all my reviews to date on Yelp have been 5 star, this is deliberate. Life is too short to focus on that which does not make us happy. This is why I restrict my reviews to those things/places that make me happy and appreciate life. OH MY GOD!!!!!!!!!!!!!!…read more I can't believe that I have been living in Brighton for two years and have only just discovered this restaurant. I one foul swoop it has leapfrogged its way in to my all-time top three. Yes, its a little on the expensive side, but this is certainly a case of getting what you pay for. I booked for my birthday and it was a treat in deed... On arrival, I started with a strawberry balsamic cocktail before moving onto the wine. While browsing the internet prior to making my booking I had already decided on the five course tasting menu but having perused the full menu there were dishes that just couldn't be turned down so we all decided to order from the dinner menu. We were given an amuse bouche of duck terrine, a really nice taster and a change from the usual small soup! For starter I went for the crab raviolli in crab and corriander broth - a combination of really delicate flavours. However, it was the main course that was the true champion of this meal. Trio of pork featuring pancetta wrapped loin on creamed potato - cooked very rare so that it was completely pink in the middle - I have never eaten pork like this before but it was so tender and delicious it was a delight. Pork cheek that just melted in the mouth, and pork belly, again superbly cooked. It was truely one of those dishes that has kept me smiling for days. I was a true piggy (pardon the pun) having a dessert and a cheese board - well, it was my birthday! However, I was finally beaten by the complimentary petite fours that were presented on a plate with "Happy Birthday" written across it in chocolate sauce -the waitress was kind enough to wrap these up for me to take home as I just couldn't manage another mouthful by this point! What's really awesome is no matter how many you pick, they start you with an amusebouche and end with a small palette cleanser before dessert. It's like 2 free courses! The food was excellent. For starters, we had fried mackerel and the special, which happened to be pan fried scallops. That was followed up by the lamb and the sirloin, both of which were perfectly cooked. We especially both liked the purees that accompanied the meat. Finally, for dessert we shared the strawberries and clotted cream ice cream. Yum! When we arrived, there were virtually no other diners in the room, so we had amazing service (very attentive!) and our pick of tables. I'd highly recommend them and hope to go back someday!

They do offer a Dining Club discount on food (must include a main course) of 10% - this is Monday, Tuesday and Wednesday and 'a steak for a tenner' deal on Thursdays. The whole pub is undergoing refurbishment in early 2024 inside and out which is great news as it was looking a bit tired when we last visited. Better weather sees the use of the large field for parking and al-fresco dining which proves very popular, especially at weekends as the pub is located in the South Downs National Park and is just a (steep) walk from the South Downs Way.

Nice big garden that would suit a large group looking for a spacious place to enjoy a sunny Sunday lunch!

We tried the oysters and though they didn't make us randy particularly they certainly tasted as if they'd been hand delivered by a mermaid, fresh and cold. The coffees and sarnies are good here, as are the delicately presented cakes. Formidable nous disons. Bienvenue!

Part of the reason that people go out to dinner is for the food, but if the service is horrible, then what's the point?! There was 9 of us, but everyone was happy as there was so much choice - some of us had a roast, two people had a burger, and some had a persian dish - but we could have chosen from pizza, pasta and salads too. The toilets have recently had a revamp and are clean and modern. This place is always packed in the summer, and always has people in it in the winter.
