This is actually a food truck, which is parked on the side of the Tipsy Catcus, which is a really cool brewery I also checked out while I was waiting for my order. I ordered the original cheesesteak with the white cheese and whiz cheese combo (I tried to order my usual provolone, but they don't offer provolone as one of the cheese choices) and the fried mushrooms. I was the only person who pulled up around six P.M. and because this was on a Wednesday night, not a Friday night, hence the low traffic. But service was really good. The young lady who helped me out was prompt, explained everything and gave me a pager, which allowed me to go inside the brewery while I waited. One thing to note, while I was talking to the owner of the tipsy cactus, he told me that Friday night and Saturday nights are usually popping. So I wouldn't expect to be first in line on any of those nights. It also looks like they rotate food trucks on different nights, so don't assume that the cheesesteak truck is going to be here every night. I would check the tipsy cactus website, or Instagram page to be sure. It took about 15 minutes for them to complete my order and when I got it home and I dug in. I was really satisfied as the food was super good. Cheesesteak was on point with the prime rib being top quality, and the fried mushrooms were well done, juicy, with a really good homemade sauce that they packed in with my order. I almost forgot about the churro I ordered. And I forgot about it because I accidentally left it in the bag in the car and didn't eat it until the next day. It didn't matter. A short blast in the microwave and this thing was killa. I'll definitely be looking forward to checking this place out again in the future.

We had a smaller wedding consisting of 24 people. After the ceremony, we all went back to our venue where we had appetizers ranging from ceviche, a salsa/guacamole bar, street corn and birria chimis (my personal favorite). Sarah and Servando did an absolutely beautiful job preparing and setting up the food for our arrival. The display was beautiful; not only with the food preparation but the overall set up as well. Our guests made it back a little before us and Sarah had the foresight so save us fresh guacamole which was so incredibly thoughtful. After we had our appetizers, we sat down and enjoyed our taco bar. We had carne asada, chicken tinga and a vegan taco filling. Sarah and Servando plated the tacos we each ordered. They had multiple salsas, corn and flour tortillas, and made all of our rice and beans vegetarian upon request. The serving station moved swiftly and efficiently and everything remained warm; even to the last guest. We ended our night with warm churros. Through out our whole night, Servando and Sarah did a wonderful job clearing our dishes, rotating out fresh food and consolidating leftovers. They were both so kind, attentive and warm. I was thankful to have both of them involved in our day. The customer service alone is enough for you to want Pelon's Food Truck involved in your special day, whatever the occasion, but their prices were unbeatable as well. We were on a specific budget, so we did our homework. We shopped around and made the calls and were absolutely shocked when Sarah went through the price packages. We thought the level of service and quality of food would have been out of our budget, but were so thankful that Pelon's Food Truck was able to give us our dream wedding dinner. Fortuitously, I had bought tickets for a comedy show at Scottsdale's Stand-Up Live, which was a stone's throw away. I couldn't resist ordering the BBQ pork street tacos (beer barbeque pulled pork, jalapeno slaw, with bacon beer aioli) and they were phenomenal! They come three to an order so I was able to share with my comedy show compadre. He concurred that they were scrumptious. It stands to figure that porky goodness cooked with beer can be somewhat irresistable, and the folks at The Traveling Monk seem to know that all too well. I have since noticed that The Traveling Monk has been appearing at new breweries, which seem to be popping up in the East Valley as of late. I will keep my eyes peeled on their Facebook feed, since it seems like a perfect excuse to visit them at a couple of breweries on my list (Arizona Wilderness Brewing Company in Gilbert and Huss Brewing Company in Tempe, for example). They are a new business, only beginning in March, their truck and equipment are sparkling new, so are their smiles and attitudes! I'm not much for burgers, but do have one once or twice a year, so when I heard theirs were charbroiled, I immediately went for a cheeseburger; Scott chose a ripper - a fried hot dog, which literally rips during the cooking process, and is popular in Jersey - we shared a basket of seasoned fries, and a strawberry malted. All of the food was made to order, ready in a reasonable amount of time, and extremely affordably priced. My burger had a perfect char from the grill, quite a bit of a Russian dressing type sauce, lettuce, a juicy heirloom tomato, and soft bun which held up to the toppings and succulent burger well. It was a very large, tasty, and satisfying cheeseburger. Scott enjoyed his ripper, and we both agreed the fries were well executed: crispy and well seasoned outside and soft inside. The strawberry malted was perfectly thick and delicious while not at all too cloyingly sweet. We're very glad that our community invited Fat Chumpy's out and are sure that they will be successful in their endeavors to bring their delicious food to Chandler and beyond.
