I am very excited that I will have a wedding cake by Lael Cakes for my wedding in October. Before deciding on Lael Cakes, I was considering ordering a vegan wedding cake from Vegan Treats, BabyCakes or Cinnamon Snail. All of these vendors including Lael are are on the pricey side, $10 to $14+ a slice. Vegan Treats might start a little bit lower but their delivery fee to Brooklyn is about $300, so they could potentially price out as higher than the others. But after taking a look at the Lael Cakes website, I just fell in love with the cake designs. These are the most beautiful and wedding cakes I have ever seen. I actually recognized some of the cakes from Martha Stewart Weddings magazine. Emily of Lael Cakes was named one of the top 100 cake designers in the country by Martha Stewart Weddings Magazine, and she is probably the only one that specializes in vegan, gluten free, natural and organic wedding cakes. For our tasting, my fiance and I tried 4 flavors of cake and 4 flavors of icing. We thought the pumpkin and chocolate favors were delicious and far better than the vanilla and red velvet flavors. We decided on getting a two tiered cake. The bottom layer will be pumpkin with chocolate icing and the top layer will be chocolate with strawberry basil icing. Originally, as far as the exterior of the cake, we were going to go with a plain white cake, but later decided to order one with designs. I've been vegan for 15 years, and always assumed a traditional wedding cake wouldn't be an option for me.... then, as vegan bakeries got better and better, I found myself a gluten-free partner, and assumed again that we wouldn't be able to have a traditional cake. Then we found Emily at Lael Cakes, and what can I say? Dreams do come true. (Yes, dreams. I LOVE CAKE!) In addition to the remarkable beauty of her cakes, they taste great. We got three fascinating and fantastic flavor combinations, and people were shocked how good everything was. Though we had a 100% vegan and gluten-free wedding, we had only a small number of veg*an and/or gluten-free guests, so we took a LOT of teasing leading up to the date that people would be smuggling in "real" food. They ate their words, and then went back for a second piece of cake. Seriously, Emily's cakes are SO GOOD, that they don't get those caveats: "Good for vegan," or "Way better than most gluten-free cakes," or anything like that. These cakes are just GOOD. Planning a wedding when you have as many allergies as I do makes the idea of choosing a cake extremely stressful. At first, my husband-to-be and I were going to get me a smaller, separate cake, so our guests could enjoy a gluten and dairy filled cake- but at the last minute I decided against it. Being as it was our wedding, I wanted to have a cake that I could enjoy, and not eat something on the side separate from all our guests. You only have a party like that once, so why not have it catered to meet your needs? In the end, all of them were. We discovered Lael Cakes through our wedding coordinator and could not have been happier with the result. Emily was EXTREMELY responsive and helpful when it came to coordinating with us, which was unbelievably helpful considering that we live in the Washington, DC area and couldn't just pop in randomly when we wanted to. We spoke to her often through email, going over the menu options and getting her input on what icing paired best with what cake, and chose four cakes that we would like to taste when we went to New York. When we made the trek to Brooklyn one weekend, we could not have been more pleased by Emily's efficiency. When we arrived, there were four small cakes waiting for us to be tasted, including one that was meant for my cousin's birthday party for the day after the wedding, as we were lucky enough to have her coordinate and bake both. We tasted all four of the cakes, and when my husband and I couldn't agree on which tasted best- she was able to alternate layers for us so we both got exactly what we wanted! Also, my husband, who has absolutely no allergies whatsoever- was completely floored by how amazing the cake tasted. He said he couldn't even tell that it was a gluten free, dairy free cake which couldn't have been better news! When it came to decorating the cake, she gave us several ideas from cakes she had done in the past, and when we showed her what we liked best, paired with photos from our beautiful, elaborate venue- The Russian Tea Room- she was able to create something truly breathtaking for us. However, to ensure we liked her design, she sent us drafts that she created several weeks before the event for our approval, keeping us tied into the process 100% of the time. We chose our design and on our wedding day, it looked even more beautiful than I could have imagined based on the drawing alone! Our venue was extremely busy and loud where the decor was concerned and we were worried that a cake design too extreme would clash with the venue- but Emily hit the nail on the head. Emily made the wedding cake for our wedding in Manhattan in April. It was perfect. I have been gluten free for about five years but my husband and most of our wedding guests are not. I was initially reluctant for our main ceremony cake to be gluten free because I wasn't sure that it would appeal to all of our guests. However, when we had our initial tasting with Emily we both agreed that her cakes looked and tasted better than the other traditional options we had tried. We had a four-tiered cake with two different flavors: lemon cake with lavender/rosemary buttercream, and vanilla bean cake with strawberry/pink peppercorn buttercream. It was beautifully and simply decorated with hand made edible flowers. All of our guests raved about it, and only a handful even knew that it was gluten free! That seems like a pretty ringing endorsement for Emily's signature flour blend, as well as her technique. I cannot say enough good things about our experience working with Emily. She was extremely sweet, smart, well-informed and asked us really good questions throughout the process of working on our wedding cake. I have a pastry degree and have been in the food science industry for 15+ years, you can ship anything!! Cake in one container, frosting in another under controlled temps overnighted. I did that for a living and I would've paid Lael to do that. Subtle is a nice way of putting it- whatever your batter base is, certainly overpowered any small amount of vanilla that was there. Perhaps another flavor would have masked the base and been more pronounced but I would never know because a tasting could apparently not be accommodated. Gluten free baking has evolved to the point where the texture of the cake shouldn't be greasy or crumbly which this cake was; an over-moist grease slick on the plate with multiple off notes at best. The response from the owner to my original post is too little, too late and appalling that she would hold no accountability to poor service and disappointment and in fact seemingly place the blame on the wedding venue. If your cakes are good, ship a sample when requested and let the client try them to decide. No response sends the message that you as an owner are not confident in the product you are producing. The restaurant contacted you on my behalf. They did not select your establishment, I did. And when I reached out to you, you did not respond. The restaurant doesn't pay for my wedding or the choices I make, I do. I am the customer. Guess it takes a yelp review to get a half-assed response, which is sad.
