My friend is vegan. Peterborough has a good vegan eatery scene. I did a search and Revelstoke Cafe popped up. Oddly, I had never been. I asked my friend if she was good coming here. She was. Yay! I indicated that I'd arrive at either 2:30 pm or 3 pm. Well, the volume of folks with canoes on their vehicles or boats hitched to them picked up as I drove east. I let my friend know that I'd be there at 3 pm instead. She was good with that. She got there before I did and let me know where she was parked. She had also got a table for us. I let her know that I was ten minutes later than expected. Long weekend traffic will do that to you. I parked on George Street North, across from this restaurant. My approach was super slow trying to figure out where this restaurant was. It's in a residential neighbourhood, but it's right at the corner of George and Edinburgh. It's free parking all day on this street. I walked in. I saw the kitchen and all staff working away. They were friendly. They said hi. I reciprocated and said hi to my friend. I walked over. It was nearly a two-hour drive over. I needed to use the washroom. It's a single stall that everyone uses. It was clean. The floor isn't level, so the door only opens halfway. I also used it before I left and continued eastbound. My friend had already ordered an iced maple chai latte. It looked yummy. She let me know that any coffee on the menu could be made iced. The berry hibiscus lemonade caught my attention, so I ordered it. My first instinct was to hit the brunch menu and get the west coast scramble. However, I took one look at the mushroom hash and was sold. It didn't surprise my friend. I am a huge fan of mushrooms. She got the burrito bowl. It had a vegan version of beef in it. Cool! We chatted a bit. My drink came out first. It was excellent! I love hibiscus and berries together. The lemonade brightened this drink up. It was cold and refreshing for a warm summery day. My friend enjoyed her iced maple chai latte. She said that it wasn't overly sweet with the maple in it. The chai was a good strength and oat beverage was in there to smooth things out. The potatoes were pan-fried and were perfectly done. They were seasoned nicely. The mushrooms were sautéed and delicious. The tofu that simulated a poached egg was super silky. The hollandaise sauce was generous and made this hash awesome. I asked about dessert. This place only had some molasses item that didn't scream for me to get it. She did say that there were cinnamon buns tomorrow. My timing was off. Ugh! Anyway, we got the bill. My friend paid cash her for meal. I paid with a credit card. I tapped and tipped. We both thanked her. My friend and I continued to chat. We were there for three hours. Staff did not mind that we hung around after having paid. There was air conditioning. This place is huge. I liked that the door handles were red spoons. They were the gigantic version of those iconic spoons that you get to eat Blizzard treats. There were a couple of folks ahead of me in the ordering lineup. One pair of folks were ordering a cake. The other group of three was ordering dinner. Then, there was me, who wanted dessert. The wait was a bit long, but I am pretty patient. When it was my turn, I ordered a small dreamsicle dipped cone. I paid using a debit card. I then waited. I rarely see icing used to pipe cakes at DQ. There was a tray of vibrant icing bags next to me. It was cool. Business was picking up. I probably waited a good seven minutes before I got my order. The woman apologized for such a long wait. This situation is all the harder when it comes to a cake for a special occasion, such as a birthday. So, for all of her young years, my 11-year-old daughter couldn't enjoy a baked gluten-free cake worthy of a birthday celebration...until we found Baked4U! Wow! Were we blown over! First of all, this daughter of mine also happens to be very artistic. When she heard that we would actually ORDER her a baked birthday cake, she went ahead to find an exact design that she wanted as decorations. She picked her colours, shapes, overall presentation, plus options in case the baker refused to work with her ideas. When I called Baked4U, Janet answered. To my surprise, she patiently took down all the specifications, added a few suggestions, repeated them over the phone, and corresponded over email to confirm everything. Regarding decorations alone, Janet spent at least half an hour in discussion! In the end, she created a most satisfactory result! The moment my daughter saw the cake, her eyes lighted up, and she smiled with true delight. The birthday girl spent some time studying the cake and then added, "Look! The baker even added extra flowers!" Thank you, Janet! Then, during the party, we--kids and adults alike--tried the cake. There was silence all around as everyone waited in anticipation of its taste. For the first few seconds, we heard, "Hmm...". For the next few seconds: "This is good!" Finally, one of the kids blurted out loud, "I want this cake for MY birthday!" Success it was indeed! Phew! Are we ever glad we ordered from Baked4U! The cake has a unique texture. First of all, it's heavy, though not dense or doughy. The batter rose evenly, and is moist throughout. It's not crumbly and dry at all, like most gluten-free cakes I've tried. My daughter also chose the flavour of chocolate, and I have no idea how chocolate was added, but it tasted very rich, very real in this cake. No compromise in flavours! Altogether, we found nothing amiss or overdone in taste. It was truly wonderful! Finally, though the icing was on the sweeter side of our preference, it was made with butter, and when taken in small portions alongside the cake, the combination was very good! Plus, we knew that if we wanted the sort of decorations we had asked for, the icing had to carry a certain amount of sugar in it for volume and hold. What a relief for a parent to have finally found a dazzling, delectable gluten-free birthday cake for a child! How extremely difficult this search is, but Baked4U has proven talent extraordinaire!
