Outstanding food. The chips came out hot & crispy. Salsa was fresh and delicious. Our boys said this was the best quesadilla they've had. They had the Quesadilla Chihuahua and the Deluxe Quesadilla. Amazing!!! Best Mexican food I've had in a while. Everything from the rice, to the beans, guacamole, pico de gallo, and vegetables were just bursting with flavor. They've got a nice little vegetarian menu at the bottom of the third page so you're in luck if you're a veg-head like me. As good as similar places in larger cities. Same decor, same menu, same music. Good salsa (with cilantro), good queso, and good chips. Carthage is lucky to have a Mexican restaurant like this. One minor gripe: I ordered something last time which is traditionally served covered in queso. It had none, and so was not as awesome as it should have been. We come to Carthage at least once per year and usually end up at the DQ. We wanted to try something new so we checked Yelp and saw that this place was highly recommended. We gave it a try and are glad we did. The Molcajete is enormous and should definitely be shared. It has incredible flavor and makes for some great fajitas. Ask for extra tortillas as the three that it comes with are insufficient for such a large meal. My daughter loved the queso on the bean burrito and the fried ice cream and sopopillas were also very good. The only negative was the cheese enchiladas. The cheese tastes like processed cheese. Technically they weren't on the menu and were a custom request, so I have to give them a pass on that one. Our waiter was friendly and service was fast. Glad we stopped in! read more

The best food in Carthage!! We started with warm crispy chips and delicious guacamole. Next, we ordered horchata and tamarindo drinks. They were authentic and refreshing. Our entres were chiles poblanos and "El molcajete" . The chile poblanos were ok. A little to much cheese for my taste, but the molcajete meal was amazing!!! Two Fridays ago I ate at this restaurant prior to a concert at the Legacy. The three staff members did an amazing job handling the large crowd. The food was timely and very good. A fajita plate was enough for easily 2 people and the prices were so low.. especially for the quality. I would go back in a heartbeat! Love this restaurant right on the square. read more

I don't know how else to say it except YOU MUST GO HERE AND EAT THE MOLCAJETE! It is so yummy. I go to Carthage a couple of times a year to do research and have to admit that we usually go to Los Charros before we even think about researching. Mexican isn't a very popular cuisine in the midwest, and I am really worried this restaurant will not be open for long. This is NOT A GOOD THING. I have lived next to the Mexican border and in California. I have tasted all kinds of Mexican cuisine and have yet to find molcajete like this. In fact, there is only 1 restaurant where I live now that even serves it, and it isn't anywhere near as good. Everything else we have tried at Los Charros is really good too, so enjoy and keep it open for me!! read more

Los Charros just opened in early August in Carthage, and has already become a HIT. They are open for lunch until 9:00PM Sun-Thurs, and until 10:00PM on Fridays and Saturdays (but the lounge in the back will stay open later on weekends for the party crowd). The food is typical of this regional chain (think El Rancheritos in Macomb, Quincy, and other area cities), very good and plenty to eat! Chips and salsa come with your seating, wait staff are friendly and efficient. When I leave, it's with a very full belly, or a doggie-bag that's good for another meal or two! I gotta say that when you go to Carthage you don't expect to find good Mexican; however, we felt like Mexican food and decided to drive around and see if there was a place in Carthage. Sure enough we found Los Charros. I always judge the food by the chips and salsa and this place had good chips and salsa. I got a pot of meat, ok, I don't remember exactly what it was called, but it looked like a pot of meat. It was excellent. I was pleasantly surprised. The only thing I didn't like in the pot was the chorizo, but I am not a huge fan of chorizo. Because it was in a small town the place was pretty empty and so the service was good. Overall a good place. In a big city it would be worth four stars, but in Carthage, I gotta give it five stars. read more

So bad. If you're looking for authentic Mexican food, go somewhere else. It's like they've never heard the word "spicy," and seasonings are completely out of the question. The rice is boring and bland, the refried beans are runny and gross (like you'll have to request a spoon). Their salsa is basically just crushed tomatoes and onions, not even a hint of spice. And every time I've been here, the chips are stale. I've had better tacos at Taco Bell. No thanks, won't be eating here again. read more

We ordered dinner, which was delicious. Since it was early they weren't busy so the co-owner, Ivan, came over and visited with us. The small town friendly hospitality was wonderful.
