Properly aged European cheeses should have complex, nutty, earthy flavors -- not a harsh ammonia taste or smell. This has happened multiple times now. One of the biggest issues is that everything is prepackaged in plastic, so you cannot properly smell or assess the cheese before buying it. You only discover the problem once you get home and open the package. A good cheese counter should allow customers to smell or sample cheeses, especially imported and aged varieties.
