Finally had to ask and I was told that most people just put it on the table hence the tables being covered. The sauce on my crab was WAY too sweet. The heat level was too mild and the crab itself was hard to get out the shell. I asked for some melted butter and was told I would be charged for it. I had the catfish and potato salad and it was delicious. My wife had the red beans and rice and she loved it. We both had a lemonade and ice tea which are served in plastic sealed bottles.
