They take orders of fresh meats and seafoods and can source almost anything fresh: think exotics, thanksgiving turkeys, and in-season seafood. Crown roast of pork is the "fanciest" meat I have ever prepared, and the hubs doesn't eat red meat. That being said, their meat selection is excellent, and the dry aging process is so intriguing to me! Dry aging intensifies flavor and promotes tenderness. The equipment to dry age like Corkshire has is apparently pricy. I was impressed by their price points on nearly everything, beef to seafood! This shop is beyond clean, the staff are friendly and for me, it's just fun to see what's on display in the dry-aging section. I was first drawn to them after calling and finding out they had plate beef ribs to make those "dianasaur ribs" you see on TV. Yep they had them, along with other exotic meats I never thought I'd run into in a small butcher store in northern Alabama. Since then, it's been my go-to store for special event steaks and such where I want something a notch above what we find in the stores. Yes, the pricing is a little higher, but your paying for the quality. Actually it's still a savings compared to what you'd get in a restaurant if you went there for the same steak! I live in Florence and have to travel to get there, but it's worth it. Their service has always been friendly and welcoming each time, so giving them my patronage is also worth it to me to help keep this gem in business!

Unfortunately, this most recent purchase was a major disappointment. The ground beef is significantly overworked, with a texture more like paste than proper ground beef. It has an unusually soft, almost mushy consistency, and the meat-to-fat ratio also seems off. While cooking, I have had to drain excessive amounts of grease. The flavor is acceptable, but the texture is often mealy and unpleasant. I contacted the butcher to provide feedback. I was not seeking a replacement for the roughly 120 pounds of ground beef I received. I simply wanted acknowledgment of the issue and reassurance that steps would be taken to prevent it from happening again. Instead, I was told the texture was the result of the cow's genetics. I found that explanation difficult to accept, as texture issues of this nature are typically associated with processing and preparation. Rather than addressing the concern, the response appeared to shift responsibility away from the butcher and onto the rancher. What disappointed me most was not the product itself, but the handling of the concern. A sincere acknowledgment and a willingness to discuss the issue would have gone a long way. Unfortunately, based on both the product quality and the customer service response, I will not be making future purchases from Rickman's.
