I had a delicious veggie burger from Ms. Beasley; I didn't read the entire listing so I was surprised by the tasty hummus on the burger and the fresh salad. All so good. I also grabbed a cup of soup for my Mom but I didn't have any. She gobbled it up so it must have been good. Ms. Beasley is the best!!!! I have been to her truck twice and had two different foods. First, I had the mighty protein plate. It was delicious and well seasoned. The yams are SO GOOD!! The second time, I had the veggie burger. It comes on a thin bun (healthier) with avocado (YUM!) and the kale salad. The salad is super crunchy and really good!! Ms. Beasley is a GEM!! She is kind and loves her customers. While waiting in line, I saw her talk with one regular about sports and remembered the next's son. She chats with everyone and is truly one of the most positive and big hearted people I have ever met. Let's start with the fact Ms Beasley is the most humble and sweetest lady I've come across in a while. She's so sincere about honestly just wanting everyone to eat better and be as healthy as possible. You can taste the love in her meals. Now to the meat of the review. Or should I say the lack there of. She doesn't serve any meat. That alone had me almost running to her truck for seconds. (Yes, I literally went back and ordered another meal after I finished my first to save for dinner that evening.) I stood there in shock when viewed the menu for the first time. I texted my partner in excitement that I found another food truck I could obsess over. I finally decided on the veggie burger plate. It came with a side salad and sweet potato/ quinoa chips. I sat there in my car and figured I better get something for dinner too because I hadn't seen her out there regularly and I didn't know when she would be back. For my "dinner" I ordered the quinoa bowl. It was just as amazing as the burger. I'm not sure how she does it but if you are a regular to the black bean patty life you know all too well how good burgers are hard to come by. She has it figured out though. It wasn't over cooked and she used hummus as the condiment on her thin bun. The quinoa was also perfectly prepared. I can't compare it to any other dish I've ever had. She mixed all the right ingredients to create her art. Another visits I also had the kale smoothie. It was just like you were making a smoothie at home. No crazy fillers or grainy stuff like you would find in commercial smoothies. I would highly recommend her food truck to anyone. Regardless of if you are an omnivore or herbivore. Even if you don't get food grab a smoothie they're amazing. Today I had a black bean burger so good that when I offered my partner a second bite I almost lost my thumb. Her food is so well seasoned. Which lets just be honest can be confused with salty a lot in New Orleans. However that's not the chase with her. She going for getting the good stuff in you. Love Ms. Beasley as much as I love the food!! She is always exceedingly kind and friendly, happy to talk about her menu items and recipes, and if you're lucky she'll stash a few freebies in your order too. Her veggie burger with hummus and avocado on that little wheat bun may not look like much, but it's fantastic and flavorful. She also does this sweet poppyseed dressing for her salads that is to die for. The food is healthy and flavorful, and the portions are generous. The shakes are a little pricey, but they're very refreshing and delicious- the kale smoothie tastes like a green piña colada. I got a Kale salad from Ms. Beasley's- I don't even really like kale but the salad was phenomenal! And the little vegan pie that came with it was so good. My husband had a bite and said "this has to have butter it in. There is no way a vegan pie can taste this good!" You can't go wrong with any of the options in my honest opinion. The plate of protein changes daily, but the one I bought has white beans, quinoa, sweet potato pie, and a sweet kale salad. Everything has FLAVOR. It's incredibly healthy and the portions are enough to either feed two, or to save the rest for another meal. Ms. Beasley herself is so kind and loving. She recognizes you as you continue to get food from her. She is legitimately about making New Orleans healthy and lets be honest - New Orleans needs to be healthier. I tried Ms. Beasley's vegetarian food truck today. She offers healthy vegetarian options that are vegetable and quinoa based. We got to sample the Veggie Quinoa. It was good. I decided to get the Veggie Quesadilla. It came with a side salad. The quesadilla was not what I expected, but it was tasty. Rather than filled with cheese, it was filled with cooked spinach and sweet corn. Her plates range around $7.00. The portion sizes are decent. Ms. Beasley has a nice truck that Ellen Degeneres gave her on the Ellen show, after she appeared on their twice. After losing everything in Katrina she decided to get her health in order. I love the idea of a healthy, vegetarian food truck in New Orleans, however, I was extremely disappointed when I came here for lunch. I ordered the kale salad with Brussels sprouts and pumpkin seeds described enthusiastically by the owner. I was incredibly surprised when I opened my styrofoam container to find that I had just paid $8 for my favorite premade salad from costco. I showed my friends and without even telling them my own conclusion they commented that it looked just like the premade Costco salad. My friend ordered a quesadilla, which she said tasted good but the texture was very runny inside the tortilla. After seeing the other positive experiences listed on Yelp, I believe the other items may be worth trying, but I would steer any friend away from the 'homemade' kale salad and tell them to just go to Costco for a better price on the same meal. read more

You don't have to be a vegetarian to love this food truck bc I'm not. Its the healthest truck out there. I usually get the quesadilla or veggie burger. Both come with a delicious fresh salad with an awesome dressing. The food is very fresh, flavorful and filling. And Ms B always brightens your day which is just an added bonus. So glad to finally see a vegetarian food truck! This place is new and has posted up by the Tulane medical center at lunch time. When I went to grab a late lunch at 2pm, they were the only truck still serving, and I'm so glad I walked over to investigate. I'll have to go back and snap a photo of the truck and the menu, but there were a lot of delicious-sounding veggie options, mostly bean-based (no fake meat, which makes me happy). I had the red beans with quinoa, which were very flavorful and filling without being super heavy. The lady working the truck, who I'm pretty sure was the owner and chef, was very, very sweet and friendly. I've often wondered at the lack of healthy options outside of a hospital, so hopefully she'll find her audience amidst all the rolling meat markets. I'll definitely be back. read more

I got back to my desk and realized that not only is both the salad and the dressing straight out of a bag at Costco and not fresh or homemade (I buy the same salad mix at Costco all the time), but the salad has gone bad. I usually feel guilty getting food from a food truck. Most of the time it's unhealthy. Not with Ms. B. It's like if your grandma had a food truck with the purpose of keeping you full AND healthy. Would not use her for catering!!! My son got her to cater his engagement party and it was a disaster. Everything looked as if she had purchased it from Costco or Sams. Watched her dump the food out of packaged bags into chafing dishes. Salad looked like Costco's, the chicken was the kind you buy at Costco already cooked and cut into strips, nothing homemade here.
