Their website describes as: 'A Paris destination in its own right, Le Cinq by Christian Le Squer is synonymous with the apex of French modern and elegant cuisine, paired with the rarest wines selected by award-winning Head Sommelier Eric Beaumard. Its three Michelin stars are a reflection of the gastronomic experience of a lifetime - in one of the city's most majestic dining rooms.' In agreement with the Four Seasons description of Le Cinq, and as a hotel guest, reservations to dine was imperative. The ten course tasting menu was exquisite; plating presentation was beautiful and superlative. Among the highlights are the amuse bouche, pain et beurre, caviar cones, the seabass with ossetra caviar in buttermilk, Dublin bay prawns, foie gras, decadent chocolat blanc and of course the regional fromagé!! Not including the recommended wine pairings menu was probably a regrettable choice but keeping my mind sharply focus for work the following morning was my reasoning to graciously decline. Service was cordial and exemplary... it's staff of hommes were très beau. Dining at a three Michelin star restaurant Le Cinq was an extraordinary indulgence at a very elegant hotel which earns the iconic 'V' = Five star sensory experience. When asked, our…read morelovely, waitperson, Evian suggested we order the Crispy Shichimi, which is a spinach-filled roll with shichimi pepper, sesame sauce, black sesame and pickled red onion artfully strewn atop. When I asked why, she said, "They're crunchy." My eyes lit up. As a vegan I crave crunchy food because so much plant-based food is soft. Evian was right! This roll had texture. It was beautifully presented in eight pieces. Upon the first yummy bite it was apparent this was cooking at another level. The fry was perfectly light and clean. Each bite substantial. The taste memorable. I have never had a sushi roll like it and now I want to live inside the restaurant so I can have it forever. We also got five pieces of the yummy Seitan Crispy, which comes with a lovely Doenjang sauce, that is thick and flavorful. These unique, protein boosts are also cleanly fried, delectable and filling. Lastly, my husband got the small BBQ Donburi which was a bowl of rice, a flavorful bbq soy protein, and some mesclum. He loved it. We sat outside on the lovely side street and chatted with Evian who made our dinner a memorable experience. I highly recommend this restaurant and wish I could bring it back to America. It's a gorgeous little place, staff was friendly and helpful, and every bite was enjoyable. As a bonus, the cocktails are creative and amazing! I wouldn't hesitate to recommend Breathe to anyone - vegan, vegetarian, or omnivore.
