What a great spot!
The staff were super friendly and the pizza was phenomenal! The dough is all sourdough (with the starter visible above their working area), with a unique style reminiscent of Neapolitan pizza, but not completely committed to that school of thought. Flavorful, light, and covered in excellent quality toppings.
This was actually the only place we had made reservations on a recent visit to Paris, and it didn't disappoint at all. When we walked in, it wasn't too busy yet, and seeing that the counter seats were open, we asked if we could sit there instead of sitting in the dining room. They kindly moved us to the counter, and that really upped the experience for us!
Watching the team working on their craft, and having the opportunity to discuss pizza with the owner was fun. Knowing how knowledgeable and passionate he was about his pizza, it was obvious that we had to order the chef's choice (six) for one of our pies. He served up a tripe and pancetta ragu pie, which was simply incredible. Tripe isn't something that we'd normally gravitate to on our own, but I'm glad we trusted him on his choice! You'd never even know you were eating tripe. The texture was so tender and didn't have any of the chewiness you might've expected. The ragu flavors were so so good. We also got the "un" which is their Margherita. A great representation of a classic. In fact, both pies were so good, I insisted on ordering a third, their "cinq" on the menu, which was a chanterelle option. Also excellent.
The experience was so good that we continued to entertain trying to return before we left Paris, but reservations weren't available, so definitely plan ahead and snatch a reservation if you're interested. While we didn't return again during our trip, we absolutely will get back to Oobatz next time we're in town.
