Called in an order for two pizzas. Ready in about 20 minutes. They were very hot when we picked them up. Overall, they were decent. Crust had good consistency- not soft but not too crunchy. A decent amount of flavor. The pizza wasn't dripping grease. It was the best or worst pizza I've had but it struck me as slightly better than average. If I lived here it seems like it would be a cool spot to come occasionally. As soon as we walked through the door I knew it was going to be good. It's a small place with an even smaller kitchen, but they turn out a great pie. We ordered the Noah. I loved the thinner crust. The flavor of the meats really stood out. The baked raviolis were delicious and the fresh sliced parmesan on the salad was a nice touch. I thought the price was very fair for what we got. Today was a lazy Sunday, so we decided to order a pizza for lunch. We really need to remember to order from them more often when we crave pizza. If you're ordering in, remember that this place requests a $20 minimum, which is perfectly understandable, all things considered. We ordered a medium Panthers and, when we realized that we wouldn't make the $20 mark, also ordered their baked ravioli. The baked ravioli was the star of the meal; imagine your standard mozzarella sticks on steroids! They were perfectly flavored and none of the flavors overpowered, which is saying something, considering they have a lot of flavor elements going on. The pizza was delicious and perfectly cooked. The delivery person was fabulous; she even charmed my dog, who usually freaks out when strangers arrive at the door. While he did bark at her, once he realized she was okay, he tried to bring her one of his toys. read more

Love the homemade pizzas with creative toppings & sauce options. They don't deliver, so I'd give it 5 Stars if they could align with a delivery service such as DoorDash or GrubHub. Otherwise, their pizzas are a less often treat for us as our travel time is too much to come to after work & deal with the downtown traffic & lack of parking. Fantastic pizza, you can't go wrong with any of them, we ordered three unique pizzas and each one of them was fantastic. However, we also ordered two of the family size salads for eight dollars each and it's basically a giant bowl of lettuce with the equivalent of one mushroom cut up in slices in about three pieces of shredded Parmesan, worth about a dollar if anything. Visiting from out of town and decided to order a pizza from a local spot to take home for the night. We were not disappointed. I called in my pizza order about 20 minutes before closing and Kiana was happy to take our order. We chose the mustard madness (?) and decided to add on the yogi salad once upon arrival. Kiana made our salad fresh on the spot. While waiting for my order I enjoyed looking at the local art displayed in the pizzeria. The atmosphere was exactly what I look for in a local pizza place. As for the service I can't speak highly enough of the service Kiana provided. She never made me feel rushed, and was super helpful with suggestions. She never gave me that "were closing hurry up and order" feeling. She also had wonderful suggestions on what to see and do in the area and spoke highly of her home town. Everything was topped with a smile. I wasn't able to take advantage of their local brews or wine, but it's nice that they offer them for dinning in. The menu has quirky pizza names and it was hard to choose which one to indulge in. For all of these reasons, we'd be happy to dine her again. Thank you for the amazing service Kiana! read more

We ordered takeout online and I was surprised how easy it was to modify the order for vegan requirements on the salads and pizzas. You can even easily specify vegan cheese on the pizza. The food was great. We loved the crust and flavor of the pizza and the salad was fresh with good ingredients. The hummus and pita were good also, but the veggies on the plate left a bit to be desired. We plan to eat here every time we are in Grand Junction because our diverse family all loved it. I was a little skeered when I walked into Pablo's and saw that the average age of the staff appeared to be early twenty something. I've just been in too many pizza joints manned by the uninformed, minimum waged, I-fuggin'-hate-my-job, type young people that could care less about what they're slinging in front of people. I'm glad to say that I won't carry that preconceived notion about pizza joints anymore. These guys can rock a pie and do it with attitude and pride. Am I allowed to swear in my reviews? I want to swear. Because this joint is so effing good (okay, I didn't swear.) The lady and I had the Cajun Pesto at Pablos and took it back to our BnB with a bottle of wine to enjoy with the sunset. I only brag about that other stuff because A) it's awesome and B) it MAY have slightly tainted how I felt about the pizza, but I don't really think so. I'm just letting you know in the interest of full disclosure. ANYWAY, the Cajun Pesto is listed as such: A fiery combination of our Cajun Tomato Sauce and our homemade Basil Pesto (with pine nuts), Andouille sausage, tender roasted tomatoes, Feta cheese and mozzarella. All for under $13. This was, THE BEST PIZZA I have ever had. I'm a fat kid, I eat LOTS of pizza. I've tried it everywhere. Quality of pizza is a criteria I use before I move to different places. I know what I'm talking about. It was sort of thin crust without being that disgusting flaky thin crust (that's not pizza, that's a pastry -- I'm talking to YOU! New York!) The toppings were plentiful and amazingly tasty. The combinations of the pesto and the cheese and the andouille sausage gave me a foodrection. I cannot gush enough about this pizza. They have an incredibly creative and diverse menu, and you can create your own. They only have two locations, one in GJ and one in Fruita (nearby) so you're going to have to drive 4 hours from Denver to try it, and you will instantly wish there was a Pablos here in Denver. My new four star rating comes from my respect for Paul, the owner of this establishment, and the pizza that HE made. After calling me out on my review, he asked me to come back in and try a pizza while he was working. How could I say no? I can only hope that some of the words I write on this website trickle down to management, whether they be praises or 'nay' says. While I obviously like hearing the sound of my own voice ringing around in my head, it's nice to have it reflected back to me. Everyone likes feedback, right? It rather tickles my insides, I say. Flanked by my boyfriend and friend (pizza tastes better with other opinions to challenge your own), and after a long day at work, I entered Pablo's. Being hungry and undoubtedly curious, I was happy to meet Paul. Respectful Pleasant Proud of his work I couldn't have asked for a better setting to have my new taste test and meet n greet. Just us, the maker, and the pizza. The pizza of the week was Peach, Arugula, Goat Cheese, and Red Pepper. Why not? Peach season is at its peak, and it's the special, so I gave it a go. Paul, after talking to one of his employees, heard that the addition of bacon was awesome. Funny thing is, bacon goes well with, um, everything, so I was happy for the suggestion. Equipped with a 90 Shilling (again, their drink selection is great), I prepared myself for the first bite. One of my particulars is how a slice feels in your hand. The crust was cooked all the way through to the middle, but not to the point where the transition of cheese to crust goes crunchily awry. This is a big plus in my book, as I'm not a fan of pizza forming a mold of goo around my fingers as soon as I pick it up. The flavor melting pot was perfectly layered. I never thought that a salad would really belong on a pizza, but the Arugula gave it a light spice almost like pepper, which complimented the peach in away that was not overpowering. And the bacon? Well duh, obviously that was awesome, and it added the salt that was lacking for me before. Salt, sweet, spice = win. I even managed to snag a piece to take home from my ravenous cohorts, for the cold pizza test. Hello cold pizza breakfast! I've had better, but I was not unpleased by any means. My daughter and I stayed at the Hampton Inn for three nights while mountain biking in the area and at a Pablo's the first night. It was so good (we had the Sweet Caroline) that we actually went back again the next night for more. I love traditional pizza but pizza with a twist is always fun too.
