We recently had Paco prepare a five-course meal for our friends reunion in Temecula. Everything was flawless from beginning to end. Paco was easy to communicate with and he created a fabulous menu which I felt was better than any restaurant I have been to. My husband especially loved the hamachi appetizer. The scallop appetizer was my favorite. We also had the sea bass for a main entree as well as a wonderful salad and dessert. His menus are extensive. It's difficult to choose with so many options. As others have said, he arrived on time and was well prepared to create his menu. He cleans up everything and leaves things better than when he arrived. Paco is an incredibly talented chef. Our group of friends have gathered in Indio, CA for the past couple of years, and the highlight has consistently been Paco's cooking. His thoughtfully prepared menus, presentation, and delicious meals made our getaway all that more special. Lucky for us, Chef Paco was willing to drive to Palm Springs to cook for us last weekend at a family get-together! His food was amazing -- all five courses were delicious and we all ate every bite! Even my oft-picky adult son loved it all. His hamachi and tuna starters were perfect, and his lobster risotto was the best I've ever had. He easily accommodated dairy allergies for two of us, arrived promptly and cleaned up everything.
