Paco's Tacos is hands down my favorite Mexican food truck on E Williams St in Apex. I've tried pretty much everything on their menu and they haven't disappointed me yet. My newest obsession is with their Cubano torta. IT IS SO GOOD! I've tried the Cubano's from the other trucks in the area, and none of them have compared to Paco's. The service at this truck is pretty fast. I've never had to wait more than 10 min or so. You can see them making your order so you know it's fresh. The one downside is the ambiance. The food truck is right next to the street and there isn't any seating nearby. I usually take my order and go down the street to the Middle School to eat. If you're in Apex and looking for some quick, delicious Mexican food, I highly recommend Paco's Tacos. read more

Amongst the best mexican food trucks in the area. Service is prompt and friendly, food is fresh, flavorful, and just tastes fantastic. From the tortillas to the meat and vegetables, it is all balanced so well, cooked perfectly, and packed with flavor while being presented very neatly, transporting quite well. Pricing is a tad on the higher side, but I feel it is still worth it as the portions are also fairly generous. Would definitely recommend, and will return. read more

Well, after eating here three weeks in a row, it's time for a review. Just. So. Good. Fresh, quick service (can call to order ahead), friendly, and simply so good. The tacos each have two corn tortillas so they don't fall apart. The green sauce that comes with each item is spicy! I like spicy, but if you don't- you'll want to pass on it. I also tried the salsa rojo and it's extra spicy! I love the shrimp tostada. The shell remains crispy even with takeout. It's topped with delicious fresh ingredients. No one was rude to your employee. Now you are trying to save face because of your greed. Not only are you greedy but now you are a liar as well. You want truth....two years ago your burritos were 11 dollars, you raised them to 12.50, then 13.50 now 14.50 and 15.50 respectfully in two years you have raised prices 400% so dont bullshit your customers and this rating by stating you only raised .25 cents. Your portions have been smaller and your product has been sub par. Instead of doing right you rather lie and try to justify by absurdity. You are no longer a reputable company. read more

Paco's Tacos usually sits on E Williams St in Apex in the area where Apex Wings is located. I stopped here to pick up lunch on a Sunday afternoon and had a good experience. Tacos range from $2.25-$3/each. They also have a few other menu items. My husband chose 2 fish tacos, an asada taco and a side of rice and I chose the campechana torta and an asada taco. All of the food was good. My only complaint was that some of the steak pieces were tough. If you are really hungry I recommend a torta, they are huge. Having visited taco trucks twice in three days and being able to compare this place, the tacos were slight cheaper and portions were bigger. I ordered four barbacoa and chorizo tacos which were both delicious and filling. This place was a winner and I'll definitely come back again. read more

We were regulars at another Apex Rt 55 taco truck before Paco's arrived but eventually we gave them a try. The menus are similar but there are some subtle differences in the food. I was impressed by Paco's side salad with pico de gallo. Nice, fresh flavors to offset the richness. But the meats, at times, seemed lesser. I once got a burrito that I couldn't finish. But overall, they're another solid option. I'll continue to explore them and see where I land. read more

I would not use this catering business ever. I've been twice duped by them . One time we used them for our church event and the second time we try to implore the use for a graduation party. Both times they provided no reason, but simply canceled. Only when we were calling to solidify their confirmation, diid tell us they were not going to show up. The church event rendered another company who showed up so they did not even have the decency to tell us they were not coming. They food is good but not worth the headache. Overall their business practices are subpar, and in the end, they are not worth trying to make this work. Just a cautionary tale as we are scrambling a few days before a big event. read more

Excellent tasting fresh food compared to Chipotle. This is a regular food truck parked on E.Wiliams Street, the parking lot where "Great India Mart" in Apex. The food is freshly made and tastes excellent. You can adjust your spiciness based on what you can tolerate, normally it is made American spicy. Orders normally come with Salsa verde, your can order Salsa Roja for extra spiciness. read more

Paco's used to be the best taco truck in the area but unfortunately their quality has continued to degrade over the past year. with inflation, prices have rose (and their menu prices reflected accordingly which I get!) but 1) what they serve as their carne asada burrito is essentially a rice burrito. It's not that they were skimpy on the meat... I could barely spot a couple of pieces in the whole burrito that I couldn't even taste it. Darn should've taken a pic! 2) look at this pic.... This truck consistently serves some of the best, and most creative Mexican food I have tasted! Combining a great regular menu list of tacos and other great, classic "street food", the specials are outstanding and really show the talent of the chef! Best tacos around! I've had basically everything on the truck and havent been let down once. The staff is wonderful to work with. Always bright and happy. If you're in the area just stop by.. dont mind the other 200 trucks on the same street.. NONE OF THEM COMPARE!!! read more

Great food does not always come from expensive restaurants. Greater food does come from a van on the side of the road! You can't go wrong with the following tacos: Chicharrones, Al Pastor (pork), or Lengua (tongue). This is not your "kindergarten" yellow, hard-shelled, folded taco with who knows what kind of ground meat. This is homestyle barrio taco, the way it should look like and taste. If you muster up courage to eat next to a van down by the rive...oops, side of the road in an auto shop parking lot, you are the few, the proud, the satisfied. And your wallet will also thank you for it.

The food came out within 5 minutes of ordering, probably less, and tasted fresh and hot. The tacos hit the spot and I have no complaints. This was probably the fastest I've ever gotten my food anywhere. There's plenty of seating inside, a bar to order cocktails if you want, and a salsa/toppings bar for your tacos.
