Well, after eating here three weeks in a row, it's time for a review. Just. So. Good. Fresh, quick service (can call to order ahead), friendly, and simply so good. The tacos each have two corn tortillas so they don't fall apart. The green sauce that comes with each item is spicy! I like spicy, but if you don't- you'll want to pass on it. I also tried the salsa rojo and it's extra spicy! I love the shrimp tostada. The shell remains crispy even with takeout. It's topped with delicious fresh ingredients. Everything I've tried has been so good. Highly recommend!

Paco's Tacos usually sits on E Williams St in Apex in the area where Apex Wings is located. I stopped here to pick up lunch on a Sunday afternoon and had a good experience. Tacos range from $2.25-$3/each. They also have a few other menu items. My husband chose 2 fish tacos, an asada taco and a side of rice and I chose the campechana torta and an asada taco. All of the food was good. My only complaint was that some of the steak pieces were tough. If you are really hungry I recommend a torta, they are huge. This food truck is worth checking out if you are in the area.

This place is amazing and best tacos I've ever had on the east coast. There food is made French everyday. It's by far the best corn tortillas I've had.

It is good. The feel at the truck is so good. Kinda nostalgic. The taste is good. The way the salsa and the tacos go together is amazing. Not expensive.

We were regulars at another Apex Rt 55 taco truck before Paco's arrived but eventually we gave them a try. The menus are similar but there are some subtle differences in the food. I was impressed by Paco's side salad with pico de gallo. Nice, fresh flavors to offset the richness. But the meats, at times, seemed lesser. I once got a burrito that I couldn't finish. But overall, they're another solid option. I'll continue to explore them and see where I land.

Excellent tasting fresh food compared to Chipotle. This is a regular food truck parked on E.Wiliams Street, the parking lot where "Great India Mart" in Apex. The food is freshly made and tastes excellent. You can adjust your spiciness based on what you can tolerate, normally it is made American spicy. Orders normally come with Salsa verde, your can order Salsa Roja for extra spiciness.

Carnitas taco, apparently.. zoom in to see the texture and jus chunks of fat.

Paco's used to be the best taco truck in the area but unfortunately their quality has continued to degrade over the past year. with inflation, prices have rose (and their menu prices reflected accordingly which I get!) but 1) what they serve as their carne asada burrito is essentially a rice burrito. It's not that they were skimpy on the meat... I could barely spot a couple of pieces in the whole burrito that I couldn't even taste it. Darn should've taken a pic! 2) look at this pic.... What kind of carnitas taco is this? It's furry and just chunks of fat. 3) their salsas are watered down now. No flavor at all.

One each asada, chicken, and chorizo tacos.

I was working late yesterday and o decided to take a walk on South White Street here in Wake…read moreForest. I came across Sushi Mama's food truck which was parked in front of White Street Brewery. It was a busy early evening here in downtown Wake Forest as things are getting back to normal. People were out, the brewery had a nice crowd and the local eateries were hopping. I decided to keep it healthy tonight because I donated blood in the early afternoon. I have become a fan of Poke bowls lately and decided to give this food truck a try. I went with the #103 which is the Flame Seared Poke Bowl with yellowfin tuna. The ingredients were fresh. The bowl is built on a base of white sticky rice with avocado, carrots, cabbage, edamame, mango and crushed tataki chips. It is drizzled with a sweet soy sauce glaze and spicy Mayo, which complemented each other nicely. Again the tuna was really fresh and it was seared perfectly. I also got an order of the tempura shrimp cups which were awesome. You can get these as an appetizer or have them for a light lunch. The bango sauce (not sure what's in it) went with the cups nicely. Now, I couldn't find this food truck here on Yelp, so I added it to do this review. They may be a new business. However, for some reason the location pinned all the way out in Apex when I added them. Not the Yelp expert here so I have no idea how that happened. If your looking to find them I would have a street food finder application. I checked and they are on there. If you happen to see them in your town definitely check them out!
