Sebring is one of those towns in the middle of nowhere Florida where you find yourself thinking, "I wonder what it would be like to live here?" while also scratching your head a little. It comes alive during major events like the legendary 12 Hours of Sebring at Sebring International Raceway, which draws racing fans from all over the world. There is also the Sebring Soda Festival, the Highlands County Fair, and various car shows and seasonal events that suddenly flood the town with energy. During those times, I imagine the entire vibe shifts. If I were to come back, it would be for one of those big events or for some serious antique shopping, because that is where this area quietly shines. Gavaghans fits perfectly into that Sebring personality. Cozy. A little unexpected. Solid. Worth stepping into.
