So we technically stopped in as someone wanted a iced matcha. I was going to get some unhealthy drink then my eyes spied a Nutella eclair! I've never had such a thing and just had to try it. Paillard is a MUST if you love French pastries or any french food for that matter! The cases are a stream of breads, cookies, croissants, rolls, macaroons, sandwhiches, quiche and the list goes on! I heard about this place so of course I went in. It's hard to pick as each item looks better than the last. Sticking with the basics though, croissant, almond filled croissant and a hazelnut roll. Oh my gosh. The almond filling was amazing. Like a marzipan but lighter and more almond flavor. Generously filled into a sliced croissant. The hazelnut roll;similiar to a cinnamon roll but an elevated taste with real hazelnut paste. Basically everything in that bakery is top drawer as they are using pure ingredients. Croissants are one of my favorite pastries so I was definitely interested in trying one out in Quebec City! I heard about Paillard so that's the one I went to. I found it pretty spacious inside, and they have outdoor seating at this location too. I got the croissant around 1:30 pm or so. Was intrigued by the poster advertising a lunch special with a sandwich and soda, but when I reached the cashier she told me soda is not available with the lunch combo, only tea. So instead I got a pastry, which was incredible. There's a single bathroom for each gender and I had to stand in line waiting near people eating which was awkward. Fresh is best and Paillard does this so right! We were checking out of our hotel and looking for a quick breakfast to grab before heading to the airport. The place is huge when you walk in, lots of places to sit and enjoy you baked good. We got coffees to go and two cheese croissants and a toasted smoked salmon bagel. The cheese croissants were fresh, fluffy, buttery and layered. They just do pastries better in QC than home (Vancouver). The cheese was nicely distributed through the croissant too. The shop is big and beautiful with a stunning pastry case. I got a ham and Brie sandwich, a chocolate croissant, and a hot latte. The sandwich was a good portion size and very flavorful. The ham and Brie with green apple, onion, and mayo was delicious. The bread was so fresh. My croissant was big and buttery. We got the combo of the day which includes - a decent size piece of quiche (got the broccoli cheddar) or a half sandwich, a soup (got cream of mushroom), a tea or coffee (or upgrade it to latte or hot chocolate for a small cost, we paid ~2 CA$ for hot chocolate with marshmallows). The combo also contained a slice of cranberry almond bread and a macaroon. The service was friendly and the staff were patient with tourists trying to get the best "combo". The combo cost less than 22 CA$ with the upgrades, which was a great deal. Quiche and soup were warm and filling. Hot chocolate was pretty tasty as well. It was a filling meal for 2 people. My friend was craving some pastries in Quebec, so a quick search and we found Paillard. According to their website, it started with an artisanal baker from father to son. Paillard was born out of a true passion for bread. The bakery combines the talent of French artisans with the "American-style" experience. Paillard offers breads, baked goods, pastries, pizzas, chocolate, jams, gift baskets, etc. They boast 25+ years of experience, Quebec company, with "French Know-How". We went twice on the trip in February. Ordered a whole bunch of stuff to try; both times were breakfast / brunch time. My faves were Almond Croissant and Salmon Bagel. Lines are long but the turnover is fairly fast; relatively short wait. Service is friendly. There are several stations to order different items, so you have to pay attention to which station to order what items. Ambiance is casual. Ensemble c'est mon moment prefere. Abricogie- a good safe apricot. based dessert. black berry tarte- good flaky pastry. Definitely a good choice if you don't want something too sweet but satisfies crunch, comfort, and a fruit to balance it out. beignet Chocolat- for those who love sugar, a must. It was heavy for us but we appreciate that it's well made. Mille Feulle Cake- a must for those who love a good creme in middle and the flaky pastry. I would recommend the one with strawberry jam alongside it. it comes without strawberry but I think it's a very heavy option if you don't have the bright strawberry to balance it out. Paillard is now my favorite cafe/bakery in Old Quebec (upper part). We stayed in AIRBNB and had to cross St Jean Street to go to old Quebec. Every day, we stopped here for breakfast and how reasonable it was. $8 for coffee and one big croissant- wow Croissants are part of what makes Québec City so European. Traditionally French, and commonly made with layers of butter. Go for its filled croissants- A generous, hearty pastry and an even better chocolatine, a croissant filled with chocolate. I like how modern and inviting the whole space is. There are small and large communal tables to sit at. Maybe there was a hangover from Victoria Day but our experience at Paillard was not as expected? When we walked in, all their electronic boards were down and exactly none of the pastries were labeled so it was hard to communicate what we wanted since the staff also only spoke French. We made it work by pointing. We were also told to order drinks at the next register but then the other register by the espresso machine told us we needed to go back to the main line so that was a whole ordeal. Food that needed to be warmed also came out one at a time so our meal wasn't quite cohesive since we thought everything would come out together. I had high expectations so hopefully this was just a one-off. Our croissant breakfast sandwich looked smashed in a panini press so it was super flat and the fruit cup looked like it was sitting for hours in a fruit cocktail like syrup, definitely not fresh as advertised. Salad was beautifully presented with creamy feta, lots of greens, chopped apples, nuts, and grapes with a tasty vinaigrette for which I wish I had the recipe. Out of all the bakeries we visited in Quebec city, this was probably the most disappointing of them all. This bakery is on the larger side, so they had plenty of seating and tables throughout, but there are a lot of flies swarming around the areas nearest to the trashcans and the areas nearest to the kitchen. We originally sat near the kitchen and had to move to get away from all the flies. The service itself was friendly but they did charge us twice for an item, and they also gave us the wrong item which was quickly amended. The baked goods and food we ordered were the most disappointing factors of our visit. The bread was all cold, and most of the pastries we ordered were tasteless and lacked seasoning. The minestrone soup and sandwiches we ordered were okay at best and on the smaller side, like kid's size portioning. Overall, we probably wouldn't recommend this bakery. read more

Be prepared to wait no matter what time you go. It was constantly busy every time we walked by but if you have some free time, want a pastry or sandwich it's worth the wait! The first time I went was for lunch and I'll be honest, I didn't take a picture of the sandwiches because I was hungry and they didn't look like anything special. BUT they were my favorite items here. Everything we got seemed freshly baked and all great to be honest. Meh, we arrived after many regular restaurants had closed and with it being Tuesday, options were even slimmer. We stopped in hoping for a fresh baguette or croissant after our mediocre crepe lunch across the street. Sad to say, these 2 places were our initial foray with Quebec City dining. It says best croissant in Quebec, had to try. But I went there kinda late, they were out of croissant natural, so I got the almond croissant, it was called a different name which I can't remember. I love the taste, the almond filling is not over sweet, I think it's just right. But not too surprising either. The staff was patient with me since I speak barely any French. The space is really large at this location, so you'd feel less crowded and cleaner. Display counter is huge and full of different pasty, desserts, and sandwiches. read more
