As a gelato enthusiast, I was happy to see that the gelato is stored in gelato pans because typically that presents a more authentic experience and taste. However, I would say this was more of a doughy ice cream consistency and taste, rather than a dense, silky and creamy gelato. Gelato is typically made with more milk, less cream and little to no eggs. Mattys appears to possibly use cream and eggs based off of the airy and doughy texture.
