The Peter Chang name rings widely around the Greater Washington DC region as a purveyor of mid-brow Chinese cuisine. It means Chinese rather than American Chinese, but it also means accessible to people who shop in strip malls in Virginia. While some of the newer Peter Chang restaurants have clearer vegetarian labeling, this one leaves you guessing a bit. It also doesn't list drinks, which is strange when you get asked what you want to drink. I eventually ended up with an interesting combination. I could have gone more basic, but I decided some spicy tofu skins for an appetizer would allow me to order a vegetable entree, which I don't usually do. I assume that a dish of stir-fried cabbage is meant to be ordered by a large group and shared. Both items were tasty, with my cabbage being freshly prepared with a hint of spice and cooked just enough, while my tofu skins had a hint of numbing sensation and a strong flavor hit underlying it. That there were no crunchy noodles for the soup as I had anticipated and that a tip was demanded after no delivering on the full vision of the soup. Mixed reviews so thought we'd give it a try.., Walked in to a lady sitting behind counter who sat us quickly, as there was only one other table in the pretty large establishment. One server who came and took our drink order. Ordered Dan Dan noodles...hard pass. Overcooked noodles in a pretty salty sauce with slight spice. Also ordered kung pao shrimp and basil chicken. Both dishes were supposed to be "spicy" - they were not very spicy at all. Vegetables were cooked pretty nicely as there was still a crunch but the amount of oil sitting on the bottom of all 3 dishes was not appealing at all! There was also a spice they use in all three dishes that numbs your mouth. It was very prominent in the noodles and not enjoyable for my pallet. It has been a while since coming here, as I recall, the last visit wasn't too great. In between, about a year ago I tried the Charlottesville location and it was the worse I've tried yet. So, for the past few years when seeking authentic Szechuan food, I've been driving up to Szechuan Taste in Dale City (which is amazing, BTW!) or up to Arlington, Fairfax, etc. Some of the best I've ever had came from Szechuan Taste in Dale City, Chengdu Gourmet in Pittsburgh, and the best yet has been from Sichuan House in San Antonio (yeah, I ate Szechuan instead of tacos when in the Taco Capital!)!! Recently I was in the area of Central Park and was yearning for authentic Szechuan, so I decided to give this location another try... I got Christine as a server and she was great! She not only knew the menu, she understood the authenticity of Szechuan food versus the typical American Chinese food (General Tso's, sweet & sour fried stuff, etc). I simply asked for cumin chicken and was given an AMAZING dish loaded with flavor... all the flavors I yearn for when desiring this style of food. Prices are great here too, as I ordered the diner portion, not the lunch portion and it was only like $16 for a large amount of food. Considering that they were close to Bone Fish I expected the lower end of fine dining. This is one of my favorite restaurants to go to when I'm craving Chinese food! The portion sizes are very large so it's the perfect place to go to and order family style. Our table had a large turntable built in so it was great to share the food without having to reach over each other and pass things around. I'm a vegetarian and I felt like they had plenty of options to choose from on the menu. For an appetizer I got the scallion bubble pancake which is basically 2 large fried pieces of bread that are hollow on the inside. It was accompanied by a curry dipping sauce. The scallion pancake tasted exactly the bread you would order at an Indian restaurant and the curry dipping sauce had a lot of flavor in it and was not spicy at all. I'm disappointed because what if I didn't see it and ate it or were to feed it to a child, there could potentially be some serious health concerns that would arise. It makes me think as well on how and where they store and prepare their food. Why is there metal shavings around the food area? Are they preparing this food near construction? Sunday. Confused and disillusioned by our recent dine-in experience. Arrived at 5:00 for an early dinner. The guy (words like "waiter", "server" would be overstating his function), timidly approached and took our order from the menu: mushroom sauce and a beefy rice noodle dish, with tofu in place of meat, and a bottle of sake. There were no other people seated when we arrived. When he brought the sake, he manhandled the tiny cups, so that his fingers were all over the rim of each. I overlooked this despite the COVID-19 situation, assuming any risk is pretty low and we'd be fine. But it was unsettling. The restaurant began to fill up and several groups that came after us were brought food before us. We noticed that many of the other guests were barking across the dining room at him about things missing from their order and things they needed at their table. We decided he hadn't forgotten about us, thought maybe subbing the tofu explained the delay and he'd bring our food when it was ready. He did put the mushroom sauce on our table, but we were still waiting on the rest of our order for another 45 minutes! Finally the hostess/manager came and asked if we were ready for our bill. We said "Uh, no; we're ready for our food!" lol. She asked what we had ordered and we told her and she said, "oh we are not carrying the beefy rice noodle. Would you like to order something different?" I asked how long it would be and she said, "could be 20 minutes - we're very busy" yeah, busy serving people who came in long after us! We were stunned that this guy failed to relay the issue to us or even check on us as we sat there spooning mushroom sauce onto appetizer plates. Reflecting back it was as if he was avoiding our table completely. Like we were invisible. That would've sucked on a normal night but this was our 19 yr wedding anniversary, a special occasion to dine out and feel proud. It was too late and too frustrating to add another order so we simply asked for rice so we could eat the mushroom sauce and be on our way. When the bill came we paid the exact amount due, a highly irregular gesture as we tip even when service is poor but this service was beyond poor; it was practically nonexistent. Dined at Peter Chang's in the past and the food and service are usually highly satisfying. We tipped 30% to a different server at the same location who went over and above when he waited on our family. And you're thinking "where is that positive review?" Their lunch specials comes with a veggy spring roll and a choice of soup. I got the hot and sour soup and that was pretty tasty. You can really taste the sourness and spice of the soup. Veggy spring roll tastes just like a veggy spring roll, nothing much to say about that. I ordered the sweet and sour chicken and that is a must get!! get rid of the image of the sweet and sour chicken you get at your local Chinese carry out, these are far better than what you think. The batter is not thick like most carry out places so it's way crunchier and less oily. The sauce that they use to dress the dish is far better than the red crappy sauce that you get at your local Chinese carry out. Trust me this is awesome! Rather than driving up to Arlington to visit the new Peter Chang restaurant, we decided to drive south to Fredericksburg instead for easter brunch. We were there at 11, starving. Lemme tell you, totally worth the drive. Location: Large restaurant in a strip mall area. The restaurant itself was nice: very clean, no smell at all despite the insane amount of cookery going on, floors were spotless and non-sticky, bathrooms were super clean. Service: Super good and attentive, but she also knew when to let us just enjoy the food. Our hostesss (sorry, forgot to ask for her name, but she's the cute asian girl with glasses) made sure we had everything we needed, refilled drinks without having to flag her down. but really, just made sure the food kept coming and let us alone to just eat everything in sight. I think it helped that we were the first large group that morning, so everything came out very quickly. What we ordered: 1) Scallion bubble pancake - two big puffy spheres of fried dough (hollow inside) with accompanying cilantro/curry dip. Fun to order because it's funny looking. The dough puffs were yum, the dip was good (it tasted a LOT like japanese curry, to be honest.) 2) Beef Tendon and Tripe in szechuan sauce- oddly enough, it tasted more like beef strips. I didn't find any tender melt in your mouth tendon or any bouncy tripe. It looked like strips of beef. But the spicy sauce and green onions was amazing. I ended up just pouring that on my rice. 3) Steamed soup buns (aka xia long bao) - Oh man. There was actual soup in the soup dumplings. It was pretty good; the skin was still a tad bit too thick, but shit, I refuse to complain because SOUP DUMPLINGS IN NOVA. 4) Dry Fried Eggplant - definitely get this. Imagine creamy and slightly sweet eggplant in a light yet very crunchy batter, which is perfectly seasoned. Bit into it, and it's like...it's like eating the best kind of battered fry where the insides are nearly melting soft. This was so damn good. 5) Crispy Pork Belly - uhmn, this was so tasty we ended up ordering two. Get this. GET IT. 6) House Special Fish Filet - battered fish cooked in a deeply savory sauce with vegetables. The flavor was just too sweet and not spicy at all, even though we ordered extra spicy. My palate searched for some spice, but none was found. Wise = every single dish was damn good, unwise = it was enough to feed a family of 6. Signature hot stone pot - loaded with fish, scallop, squid, shrimp, and mixed veggies in bubbling, creamy sweet curry sauce. My husband and I literally drank the sauce.. so so so good. Hot and Numbing - loaded with fish, shrimp, beef, chicken, tofu skin, sweet potato clear noodle, and veggies in the peppercorn and red chili oil - the flavor was authentic and beyond incredible. Scallion pancake bubble balls - amazing presentation which I still have yet to get over. With its pairing of curry dipping sauce, it reminded me of Indian roti. Soup dumplings - the dumplings were decent sized, the filling was flavorful, the skin was not too thick. Nothing extraordinary but they were well made. My only complaint was the dipping sauce - instead of black vinegar, we were given a mixture of soy sauce = way too salty. Price was fair especially for the size of the family styled entrees. First world problems, I know, but I have had one too many meals where nothing was memorable. The flavors would just mesh together and I would leave neither excited nor disappointed. The odd thing is that I have never quite considered this until dining at Peter Chang's. Peter Chang blows away every other Sichuan restaurants in the DMV. Its seafood hot stone pot is CRAZY GOOD. The assorted seafood acted as a neutralizer for my palette as the sichuan peppers created fireworks on my tongue. Every other bite was mouth numbing and burning, but then, just a minute later, I came to my senses and then would reach for another taste. Every bite was exciting and refreshing. I think it's really commendable when a chef can balance the flavors in such a way that you are provoked to the core, but not so much so that you are left in a hot mess. (As you can see, I took pictures of every other dish except this one... because I was too busy eating.) The service was absolutely remarkable. Our server was so attentive without being overbearing. My friend, who had been driving us around, wanted coffee and asked if it was on the menu. It wasn't. But the server brought out the coffee from the kitchen, anyway! I mean, that isn't just service. It's as if you are invited to someone's home. Contrary to other reviews, however, I did not find the scallion pancakes to be remarkable. We also got spring rolls which didn't have much filling but the dipping sauce was great. My boyfriend got the twice cooked pork belly which I tasted and found delicious. I really went for the hot and numbing combination hot pot!!! It's A LOT of food and easily shareable, which we did. I expected it to be MUCH spicier based on the reviews here and also the 3 peppers next to the name. A few years ago we decided that we were going to start going to Chinese for Christmas Dinner. We usually go to Woodbridge to our favorite Chinese place but it was closed this year b/c it was on a Monday. After much debate, I lost the debate on where to go and we ended up at Peter Chang's. The whole experience was just horrible. The server was barely audible and never listened to what we asked for always going away and coming back without what we needed... the food was not that great - mine, the Shan City Chicken- it was horribly dry - I didn't eat any of it. The lo main my mom got was very dry as well - it was not until she put some soy sauce that it became edible. My brother has been trying to find Szechuan shrimp like a restaurant we used to have - tomato based sauce and onions only. We asked the server and he said it was a tomato base... we knew it had vegetables of all kinds, but we asked for just onions, and he got nothing close to what he asked for. I wish I could give this 5 stars because the food certainly deserves it. My family and I have been several times and the food never disappoints. I have been told by a family member who grew up in Hong Kong that this food is authentic to the food he was raised on. We have gotten an array of items from the appetizer ms and shareables to the entrees and it has all been delicious. That being said, the service has been inconsistent at best. At our most recent visit the hostess (who I believe is the owner) and our waitress yelled at each other across the restaurant about how neither one was helping the other and the hostess proceeded to tell our waitress that she would be fired. It was very uncomfortable and awkward for all. Thankfully our waitress came and apologized to us and was incredibly kind. I don't know the back story of the situation but it was incredibly uncomfortable as the guests. We will likely go back once more in hopes of a more professional, typical dinning experience. The food is so good, it's a shame the dinning experience isn't as well. read more

My wife and I love the food here. We had the crispy pork belly, the scallion pancakes, and the Singapore noodles. Each dish was very delicious. My wife worked many years in Singapore and said that the Singapore noodles nearly matched what she could get at a Singaporian hawker stand! Service is great too! The bad reviews I see here are from seemingly privileged Karen's or something because the food here is great and the service was great. read more

Honestly, probably the best Chinese food I've ever had. Plus, they can do almost anything on the menu gluten free! Do you have any idea how impossible it is to find gluten free Chinese food that isn't from a major chain?? I've never had a bad meal here. The shredded pork in garlic sauce is amazing. The bok choy with mushrooms is delectable. I dream about the dry-fried eggplant (and they can make it GLUTEN FREE. I'M GOING TO KEEP SAYING IT UNTIL YOU GET WHAT A BIG DEAL THAT IS). Great service, great food, huge portions, I beg my family to take me here whenever I'm back in town. The atmosphere is casual but the food is first class. Please Note: This is NOT part of the P.F. Chang chain!!! The closest P.F. Chang's to Fredericksburg is in Woodbridge, VA! Wound up doing take out (partially due to the Coronavirus self-distancing rules), although my husband and I have eaten at Peter Chang's several times before. I do prefer eating there, but take out is good, too. I had the Sesame Chicken with fried rice on the side. I don't remember what my husband had, but he seemed to enjoy it. Mine was pretty good. Portions are usually enough to bring home for another whole meal. When I go there to eat-in, I do try to have some things that are more authentic Chinese - and am always pleased. Service is not always the absolute best, but it's better than some other places we've been to. Food usually is fresh and they will adjust the spiciness if asked to. I like to have wontons in my egg drop soup, and they do accommodate me. The wontons are very good. They do usually serve things when cooked, serving more traditional Chinese family style - which means in a way that everyone can share each dish - not all at the same time, although there usually isn't that long a wait between serving dishes. We have never asked them to bring things out together, so I don't know if they would do so if asked. Definitely a place I would recommend, and will go to or take out from again. read more

Perhaps the worse dining experience in quite some time. Not only was the food bland and tasteless, but my wife became ill after we returned to our hotel room. There were also several families with children around the age of 7 and younger. The kids ran around the restaurant as if it were a track which drove me crazy. No one said a word to these children. My wife asked me to remain moot. Mostly, I really felt sorry for our waitress who was working her very first shift. Of course, she was nervous, a fact that was exacerbated by the surly, rude, and loud hostess/manger/owner. In retrospect, I wish I would have given our waitress a strong tip and told her to quit right there on the spot. I guess karma won the day as the hostess/manger/owner slipped on the floor while she was berating our waitress. As it turned out, she was ok, and I didn't laugh. However, I couldn't help to think that she got what she deserved. read more

Well prepared and very tasty food, simple and somewhat austere surroundings, friendly service, huge servings. If you are trying to maintain your weight, share dishes; they're really big. Definitely recommend eggplant, pork belly, beef, chicken, and white rice. Beware the 3 red peppers and "spicy and numbing." Would certain return next time I'm in the area! read more
