I had to ask how they were doing it, and Mark was more than happy to walk me through his process. When brisket is smoked low and slow -- and they smoke theirs for 20 hours -- here's what happens: * The visible fat cap mostly renders down. * The intramuscular fat melts. * Collagen breaks down into gelatin. * The melted fat soaks deep into the meat fibers. The prices are well worth it, a very good value. I highly recommend you come with at least 4 people but a party of six might be better. Why, because there is to much food for the two of us. You have to order 4 meats at a time, we had chicken, Beef Bulgogi, Spicy Pork and Octopus. Everything was excellent! Now Korean can be very very spicy, but here they use more mild heat and let you raise the temp with their sauce bar. Next time I will get pork belly and short ribs and skip chicken and octopus. All of the side dishes are at a self serve bar with lots of other items, like egg rolls which were very good. We will be going back with friends, that way we can get more choices and be able to taste many more dishes. Have fun, we did.
