Pie Girl knows what she's doing while whipping up her incredible pies. I love the whole concept of a weekly rotating menu, and it seems that each item is perfectly curated. The way to go is ordering a "frankenpie," a slice of each of the 6 weekly pie creations. The crust is thin and flaky, and the fillings moist and heavenly. Business hours are extremely limited, open just 2 days a week from 10-2(ish?). Pie Girl had been on my radar for some time now, but my work schedule and almost 40 minute commute to her storefront had made the trip difficult. Finally, I was able to make it around 10:40 am on a Saturday. To my pleasant surprise, it was not overly busy and I was able to order within a few minutes. I left with: - frankenpie (6 different slices of pie) - sausage, onion jam & swiss galette - mushroom & goat cheese galette - sea salt brownie - earl grey lavender cornmeal cake - miso peanut butter cookie - goat cheese caramel chip cookie - cold brew with vanilla bean cold foam All of the above rang up to a whopping $75. I was definitely expecting to pay above average prices, but was still a bit shocked to hear the total cost. I have no problem paying more for excellent treats (and these were, in fact, excellent) but no where in the store, or on the website, can you find the prices of each individual item. I wanted to make the most out of my long-awaited trip and order plenty of goodies, but I honestly would have scaled back had I known the prices prior to being rung up. It almost felt... sneaky? The pies and galettes were the obvious standout menu items for me. The cold brew was also delicious. The rest of my items were very good, but probably not worth whatever price I had paid for them. Will I be back? Yes. Will I make my choices more selectively? Yes :) Overall, a charming bakery with kind staff and unique flavors, albeit on the pricier side. read more

I've been looking forward to visiting Pie Girl since I first came across them on social media because of the unique offerings they have. My expectations were very high and my expectations were easily met if not exceeded! Wifey and I went there for lunch but both of us ended up getting breakfast sandwiches. I had a variation of their 'Emma' sandwich which is pork roll, egg, cheese, hash brown and mustard on a brioche bun. I subbed sausage for the pork roll. My wife ordered steak, egg and cheese on a brioche bun. Both sandwiches knocked it out of the park Aaron Judge style! We both agreed they were two of the best breakfast sandwiches we've had in a long time. We got an assortment of baked goods to take home and as of this writing everything we've eaten has been delicious! We plan on eating the rest over the weekend. We got crumb cake, a raspberry brownie, lemon chess pie, Hoosier pie and brown butter chocolate chip cookies. I got a cardamom rose latte that impressed this non coffee drinker to the point that I may consider drinking more coffee but only if it tastes like this. Cafe is very quaint with a relaxed vibe that's perfect for sipping slowly from a warm drink and just whiling the afternoon away. This was our first visit but won't be our last! read more

Pie Girl is a quaint little venue only open limited hours on Fridays and Saturdays. Essentially open until everything is sold. The selection of sweet and savory pies is extraordinary and everything is baked fresh. Chelsea, the owner, is very friendly and works hard to bring her pies to life. I ordered a slice of tbe Passionfruit Pie upon the suggestion of some patrons and staff. It was certainly good, but a bit too sweet for me. Also a little pricey at $7 a slice. Heard some great things about Pie Girl so stopped by on Saturday - only open Friday & Saturday 10:00-2:00. Located on a side street off Main St in a restored building (plenty street parking). The menu changes each week so we took out a slices of quiche, buttermilk pie and chocolate chip cookies - total $19. Warmed up the quiche and it was so good (flakey crust). The buttermilk pie was perfect balance of sweetness/creamy filling with the same flakey crust. There's seating inside and they serve various coffees and drinks. My favorite small business in Hightstown. I love that the menu changes every weekend. I am there every weekend! So much variety of savory and sweet, there is something for everyone. I love that local and seasonal produce are used in the baked goods. I love the unique ingredient combinations. I love the flaky crust pies! They also serve teas, coffee and other beverages. Pie Girl is incredible. Every week they have new, interesting, and exciting flavors and I can't help but buy an entire frankenpie almost every time I visit. The Salted Honey Lavender, Lemon Coffeecake, and Coconut Custard are some of our favorites. Aside from the pie, this bake shop also has some of the best sandwiches I've ever had in my life. How could you go wrong with fresh Italian meats and cheeses on a fresh baked focaccia and a slice of pie for dessert? The breakfast sandwiches are also loaded and delicious. Pie girl has perfected the art of light and delicate treats with the most savory, flakey crust. Everything here is fantastic. Nothing is artificial and overly sweetened. Just the right hint of flavors for each unique creation she comes up with. Always something different to try from herbal to fruity. Highly recommend the pbj cookies and galettes in particular. We popped in passing through town and what a treat! The pie is amazing! Very welcoming and friendly. Service with a smile, and the best part of it all was the pie and cake tastes amazing. I don't know why I didn't come sooner, maybe because I just figured they only had pie? The service was super friendly and the food was even better. I didn't know they had coffee--though no specialty drinks like espresso, but I'll get a drink next time. We got a pumpkin scone and a broccoli quiche to stay. Both were perfect. The scone wasn't dry at all, and the quiche was flavorful. We ended up getting a couple of slices of pie to go--an apple and an orange buttermilk chess. Definitely a little hidden gem. The quiche was excellent and so was the scone. We did not have their coffee as we already had ours from little key coffee around the corner. If it was a little less of a trek for me I'd be there every weekend!! I have waited in line each time but it was absolutely worth it! The only note I will make is that although they have such a cute and bright/sunny seating area the savory pies and galettes do warrant some heating up so they're really ideal after a few minutes in the toaster oven! So for this reason I would say maybe have a coffee and cookie/cake to enjoy at the bakery but take your quiche home and enjoy it right out of the oven for optimal flavor! For as long as I can remember I've been obsessed with pie and I finally found nirvana at pie girl in highstown NJ. The pies were impeccable in every aspect. In fact, I'd even go so far as to say that on a technical level they were the BEST PIES I'VE EVER HAD. Be it the ultra flaky and tender crust, the expertly balanced flavors, the delightful combination of textures, the flawless consistency, or even the colors. They were simply perfection. First up was the SALTED HONEY LAVENDER PIE which is 100% in the conversation for best singular pie I've ever had. Its delicate infusion of floral lavender, subtle saltiness, and sweet honey created a flavor symphony that enchanted my taste buds.Next came the STRAWBERRY RHUBARB PIE which was a delightful fusion of tangy rhubarb and sweet strawberries, encased in a flawlessly baked crust. The CHOCOLATE CHIP OAT PIE was also a heavenly creation that combined gooey chocolate chips with the hearty texture of oats that were just soft enough not to feel like a chore while chewing. Finally, there was the DARK CHOCOLATE COCONUT PIE which transported me to a tropical paradise with its velvety smooth chocolate filling infused with exotic coconut. We have been following Pie Girl since her pop-up days at the Baker's Grove. We are so happy that she has been able to open her own shop locally and create all her delicious goodies. Right now, the bakery is open Fri and Sat. Lines form quickly and she does sell out later in the day. All her goods are fresh, made with top notch ingredients and so tasty. Each week there is something different to choose from. They have cakes, cookies, galettes, scones, blondies, brownies, and of course pie, you name it! Check Instagram for the weekly menu. You can buy pies by the slice or whole. She makes some of the flakiest crust I've ever had. There is a small coffee bar as well. The seating area is large enough to hang out for a bit or even stay and do some work ( and eat more pie). It's hard to choose just one item so do yourself a favor and get 8-10. My family and I enjoyed each different slice but I haven't been back because of the extraordinarily high prices. I tried to find out if this business could do a few gluten-free items for a wedding, starting several months ago. First, the town's FB page that provided info gave out the wrong business. Then, once I had the right contact information, I filled out a form on their website. It's been over 2 months & no response. I called them, again no response. I finally went in person to the store a week ago on Friday. The place was open but it was disappointing to see very little available. Of course I wasn't there to buy anything per se, I just wanted to see if they could bake some GF goodies. A nice employee told me that sometimes they have GF items but that I'd have to talk to the owner. The nice lady asked me for my name & number. It's been a week & no call back. In talking about the business with locals, we started to wonder how in the world a business that is open only twice a week is able to pay for the rent when the previous tenants, a fantastic deli that was open all week & did very well, had to leave because of the rent. The deli folks worked hard, they were friendly & their food was excellent. Is this pie thing a vanity project, with the owner able to open only twice a week (until they run out)? Regardless, I've never had any local business demonstrate such poor customer service. I've given up on the place & won't bother to ever go again. Everyone I ask wishes the deli would come back. Their food was much better suited to being net to the brewery, hands down! read more
