They also have really nice A/C!! :) Small shop, but with an amazing selection of steaks, sausages, cheeses, pork and etc. They also had some fresh vegetables, dry goods such as ketchup, beer, spices and breads. Service at the butcher shop was awesome, I was looking for a few large fillets, the gentlemen chopped them up and air sealed them for the ride home. They tasted amazing! So, when visiting the West Side market, you might want to start here first or at least pass thru on the way out. I think you will be impressed by what they have!!

They are known for their assortment of both mainline and eclectic and creative sausage flavors. The sausages are great- they are larger than the sausages you are probably used to at about 9 inches, and they are plump and juicy. Of all the flavors we tried, the sweet corn, blueberry, and New Orleans seafood were my favorites. Be forewarned however, you need to be very careful to follow the cooking instructions provided. I over cooked a couple and they were not as moist as I would have liked. I highly encourage you to make the trip to Gibbs, it is a really fun experience!
