They are extremely knowledgeable, and I love their forward thinking. They only use local ingredients for their drinks. If it doesn't grow in Canada or Quebec, they do not use it. So they do not use things like citrus. Instead, they come up with other ways to bring the flavor into their cocktails and food. And definitely try some food! We went for the drinks, but the food blew our minds. We got some mixed tapa plates and loved it all- especially the homemade beef jerky. The back patio is so nice during the summer. My kids loved that the bread in the soup was still crunchy and not soggy. The baked Brie was a delicious start of what is to come next. My entree was the low temperature salmon. It was the chef's special (they call it inspiration of the chef). It was a salmon dish that is lukewarm. The salmon was so tender, it melted like butter in my mouth. It was a decent portion too. We had an amazing charred broccolli, a seasonal morel dish, razor clams, and unique egg mayo concoction. Doesn't matter. the food will be exceptional whatever they are serving. Thier Michelin Bib Gourmand (exceptional food at reasonable prices) designation is well deserved. But if the soul of Buvette Scott is the food, the heart is Marine, who appeared to be the only server on duty while we were there. She is a transplanted Brit (I believe), with a quick smile and a sassy outlook. Even as busy as she was, she had the time to engage us and make us feel like we were old friends. Stories were told, laughing was had. We were the last two left from the first dinner seating that day, and Marine and part of the kitchen team sat at the bar with us as we finished and shared insights about Quebec City and how they ended up there. Rarely have I felt so comfortable and at home in a place I have never been before. Really good restaurants serve up really good food...
