The space is warm and completely unpretentious--wood, simple tables, an open kitchen and a palapa-style roof. Nothing about it screams "fine dining," and that's part of the charm. The perfectly prepared food does all the work. We chose the tasting experience, and bite for bite it was outstanding. The fried mushrooms were perfect, the fish ceviche was awesome, and the beef tongue was cooked beautifully. And don't be afraid of the grasshoppers--seriously. Yummy. Even ingredients I normally don't gravitate toward, like black beans, were used so thoughtfully that I enjoyed them. The drink pairings were equally impressive--tequila, beer, wine and espresso--and each one genuinely complemented the course it accompanied. We were basically the only guests that evening, and our waiter turned that into a wonderfully personal experience. He patiently answered every one of our many "American questions" about the ingredients, preparation and pairings, never making us feel rushed or out of place. A sincere thank-you to him, the cooks--who my partner and I gave a standing ovation to--and the entire team for making the evening so memorable. My one tiny suggestion? Cloth napkins. With that many courses, sauces and textures, the paper ones felt a little out of step with the quality of the food. But when the napkin is your biggest criticism, they're doing something right. And then there's the value. For an experience of this quality, the price was remarkable. Our total was about $320 including tip for the full tasting experience and pairings for two. We have spent more than twice that on comparable special-occasion dinners at home, so Axiote felt not just exceptional, but genuinely budget-friendly for what you receive. Axiote is relaxed, confident, welcoming and absolutely worth leaving the resort for. Go hungry, ask questions, trust the kitchen--and yes, eat the grasshoppers.

But the bartender here tonight was really bizarrely rude and I couldn't figure out why. A group of 6 of us came in. We all ordered drinks. I ordered a beer for myself and one of my friends. I handed her 100 pesos for the 90 peso tab and left the change as tip. When I ordered my second drink I noticed I had a lot of difficulty getting her attention and she didn't seem to be looking at me or even actively avoiding making eye contact. Having tried to get her attention many times, I was able to speak loud enough to get her attention when she came to get the order of someone near to me. I was shocked when she practically THREW my change back at me. Well, that was bizarre....am I imagining things? I couldn't imagine what I might have done that would cause her to be so rude so I shrugged it off. One of the 6 people in our party was not drinking. Everyone else ordered more than one drink and I know them to be considerate people and people who tip. I was SHOCKED again when the bartender approached the man in our party who wasn't drinking and asked if she could get him anything. She interrrupted his conversation -- basically tapped him on the shoulder while I was talking to him!!!! Meanwhile, when I'd actually WANTED to buy a drink, she wouldn't even make eye contact or look in our direction!!!! He thanked her and said no he didn't and resumed the conversation. At which point, she loudly screamed at him, "I'M TALKING TO YOU." He turned back to the bar and politely said, "I heard you, thank you. I'm good." Later, one of my friends approached us at the bar trying to get a drink and same deal, she said the bartender had been actively avoiding her and getting drinks had been very difficult. Lo and behold, my friend wanted a drink and now the bartender was ignoring us again. My friend tried on several occasions to get her attention and it was clear she was actively avoiding us. She wasn't far away so I did raise my voice to yell, "Can my friend get a Victoria?!" Now it was on. She SCREAMS back at me, "Will you please wait your turn?????!!!" So I told her exactly how rude she was and we left the bar. To be clear, this was the blonde bartender (wearing red on the Mexican independence day shift) and not the dark-haired woman behind the bar. I can only gather that this bartender was upset that one in our group occupied a bar seat when he was not drinking but there are much better and more civil ways to handle the situation. He was with 5 people who all WERE drinking. I also have no idea why this bartender decided to be so disgusting to me and my friend who politely ordered drinks and tipped her just because we were associated with someone else at the bar who wasn't drinking? Anyway, this bartender was completely rude and really spoiled what should have been a fun night out for no reason. I'd love to recommend this spot and return but unfortunately, not with this woman behind the bar.
