I ordered the Cadillac Burrito. In my opinion, it tasted like a gas station enchilada-style burrito drowned in canned queso and canned salsa. It was heavy, sloppy, and lacked any fresh flavor. Calling it Tex-Mex does a disservice to good Tex-Mex. As someone in the decorative concrete industry, I couldn't help but notice the polished concrete floors. They still have swirl marks, scratches that weren't fully removed, and unfinished edges. Most people won't notice, but I did. If that level of workmanship was acceptable on opening day, it made me wonder how much attention was given to the food. The sad part is that this place has every advantage. Great building. Great location. Great atmosphere. Right across from Lambeau Field. If Cowboy Max survives, I think it'll be because of where it is not because of what's coming out of the kitchen.
