As someone who was born and raised in Milwaukee, I've had my fair share of great barbecue over the years--but I can honestly say your ribs are among the best I've ever tasted. The smoky flavor was incredible, the seasoning reached all the way to the bone, and the tenderness was absolutely perfect. Every bite was packed with flavor. In fact, I would put your ribs above some of Milwaukee's longtime favorites, including Speed Queen, Ashley's and Double B's. That's not a statement I make lightly. Words don't quite do your barbecue justice. The only way I could think to express how much I enjoyed it was by sharing this photo of my granddaughter. Her expression says it all--pure joy and messy. I've had BBQ in Texas, KC, the Carolina's , St. Louis and I'd put POP'S up against any of them. Let's start with the ribs: juicy- no -succulent is the word. Slathered with Pops secret BBQ sauce with just that right balance of sweetness, tang, and that Smokey flavor that is lip smacking good. The meat is so tender it nearly falls off the bone. My friends split a rack and I swear they nearly sucked the marrow out of the bones it was so good! I order the pulled pork sandwich Sans bun because it is too delicious- the shredded pork just melts in your mouth and rib tips- Oh my Lord they were meaty and devine! I also had their smoked bratwurst and that was just out of this world. I usually load my brats up with ketchup and onions but not Pops brats. There is something about the smoky flavor... I don't know what it is but to hide the taste under condiments is sinful. Pops has an extensive menus with great sides to round out any meal. He has 2 truck locations- one is at the BP gas station on the corner of Appleton and Goodhope in Menomonee Falls and the other one is 7830 W. Goodhope Rd. Milwaukee. Instead, they opened a location in Brown Deer, which I guess isn't super far away. I ordered a $19 combo platter of spareribs and smoked chicken thighs with sides of BBQ rice and (for $2 more) hand cut fries. I upgraded to the corn bread muffin for a $1 extra (which they didn't bother including in the to go bag) and added three smoked wings to the combo platter for $5. I also got a $9 side of smoked gouda mac and cheese. My initial reaction when I opened the $27 combo platter container was "really, that's it"? Now, to be fair, the chicken was de-boned, so that took up less room, and I'll again mention they didn't give me the corn bread muffin I ordered so that would have taken up some space. Plus, the wings in the container were extra, so without those it would look even skimpier albeit slightly cheaper priced. All that said, the meats tasted good and had nice smoke flavor. I enjoyed their BBQ sauce, which I appreciate coming on the side for dipping. The rice was a little hard, but still edible. I thought the smoked gouda mac and cheese was great, but it's a tad pricey for a side item.
