Some of the best Mexican food we've ever had! Breakfast lunch or dinner this is the spot to go. Food service and vibes are great!

7/3/26 My wife and I went to have breakfast at Rubia's which we consider our favorite place, and worth the drive from ten miles out. We ordered and shared a Breakfast Special of scrambled eggs, bacon, hash browns, and French toast. The past experiences have been ok, here and there, either the hash browns had to much seasoning, and on this occasion we received regular hash brown, but were burnt. Everything seemed ok, but when our order came out, we were given pancakes, and a table near by received our French toast which were transfered from one table to the other, strange but we managed. The French toast were a little on the burnt side, and the scrambled eggs were a bit on the toasted side, and we were managing, until we asked for the sugar free syrup which they were out of, we received apologies from other servers, but when our waitress came to the table things got crazy. My wife asked about the sugar free syrup due to being diabetic, and the waitress confirmed being out of the syrup, but she stated, "You didn't request the sugar free syrup when you first made the order!, so it was your fault" and she walked away. Mind you, they were out of sugar free syrup, so it didn't matter, and the waitress had mixed up the order. This made us reconsider going to our favorite place, and find another location for breakfast and lunch or dinner. read more

Visited here on a lunch after a meeting. Finding the entrance was a little confusing because there seem to be some on the front and one on the back. We were sat on the patio which was nice. Service was a little slow but the food was good and quick to get out to us. I ordered a steak quesadilla and my coworker ordered the lunch special. We were both pretty happy with our choices. The star down is for the bathroom cleanliness. It was awful. I'm talking literal poop on the seat and all over. Not what you want to walk into using. read more

Has anyone else ever seen rolled tacos served dry? No lettuce, no cheese no guacamole no sour cream just the tacos? I was really disappointed at at 10$ order of 3 dry tacos. Maybe the kitchen was distracted, tell me this isn't typical? read more

Today We had Delicious plates with rolled chicken tamales and crunchy beef tacos (fresh lettuce and tomatoes), rice, beans (wow! didn't know beans could be so tasty), iced tea (fresh brewed-grade A from this picky tea drinker), fried cheese cake for desert (a first for us and won't be the last, mmmm). Our server- attentive, and friendly-couldn't ask for better. We've never had a meal we didn't just love nor a server who wasn't professional and warm. Excellent Chile Relleno. The chile was fresh, the breading perfect, stuffed with cheese, but not too much cheese. Also, I had the chicken enchilada with green sauce, also very good. This was the Acapulco combo, which thankfully does not come with rice and beans- just the essentials. I sat at the outdoor area, which was shady and ok comfort-wise. The dining room was only half full and the hostess tried to seat us outside on the patio. We never asked for this and were told "we don't ask people where they want to sit." Well, I have asthma and I didn't want to sit outside. This made our hostess a bit huffy and she walked away from us, threw down menus, though not enough for all of us, and stomped away. Our hostess if you can call them that had a horrendous attitude. The act of walking away from us and saying nothing, then steaming away and throwing down menus, finally rudely stomping off will lose you patrons real fast. Sorry she has to work. It's how you pay your bills. We do! read more

Rubia's is the place to go get Mexican food if you're ever in Aztec, NM. I got there after some locals recommended it, and I am very glad I did. Rubia's menu has a lot of different options (including vegetarian) and it's is incredibly affordable! I sat in one of their patio tables, it's very nice outside as they have small water fountains and plenty of shade. Food was delicious, I had a Rubia's combination plate with carne adobada, my meal was ready just within a few minutes. Great place! read more

Lived up to its stars today! Hubs and I passing through and chose this place based on the reviews, and Rubia's did not disappoint. Not only was our food delicious (we had the Carne Asada smothered in Hatch Green Chile), but our server was awesome! I really enjoy Rubias! The restaurant is clean and we have enjoyed lunches and evening meals. Most of their service time is for Mexican cuisine. I really enjoyed the food. Friday and Saturday night they have evening dinner specials which includes prime rib, salmon, And other dishes in addition to the Mexican food on the general menu. Staff has been very friendly, service has been good, prices are very reasonable, and the facility is clean. It is popular in the evenings so there might be a wait. read more

My overall experience here was pretty good. The service was excellent and the food was for the most part pretty good. Green chili stew was pretty solid as were the chicken enchiladas. That being said the tacos reminded me of Chi Chi's tacos from years ago. I will say that you do get a lot of food for the money. A good choice for Aztec, but in my opinion they use the word "Fine" in their name somewhat liberally. read more

Chips and salsa are good, however chicken enchiladas were dry and very little sauce on them. Tacos were not very flavorful. Not to mention sopapillas don't come with meals. Combination meals you have to pay extra for beans and rice. Not what I expected here. read more

Excellent Mexican food. Good chips & dip. Excellent green sauce for enchiladas. Chili rellenos were only fair due to over breading of the peppers. The sopapillas were homemade and outstanding--served with fresh honey. An excellent selection of draft beers. Wine is also available, but no hard alcohol for margaritas. This place is amazing. A group of 23 people from Arizona came for dinner. They had us in and out in about an hour. There were no complaints. Everyone enjoyed their dinner. Their Margaritas were good and had a big choice of beers. If you are in Aztec, give this place a try. read more

Really, get real this business puts out very poor fare. My wife had chilie relleno, taco all alcarte and I had the taco special. All of it was very poor. Any fast food place would have been much better. Have the owners of this business ever eaten at their restaurant? This business is doomed to fail. read more
