You know what? The other reviewer (Larry) is right. The "Mexican" chorizo does not taste authentic. Oh darn. It's made in Palmer Lake, and I doubt there are any Mexicans that live there. The thing is... While it doesn't taste "Mexican", "chorizo" does mean "sausage" in Spanish and it is definitely sausage. Quite delicious sausage too. Perfect for a scramble or a breakfast burrito. I happen to like the taste of Sara's Sausage. Wow! That sounds bad. Right this instant I happen to have some of the sweet Italian sausage simmering in some pasta sauce. The staff worked with me to set up a convenient pick up time and did not freeze the meat so that it could be used immediately. The sausages were great, and the staff was incredibly accommodating. I love the bulk Sweet Italian Sausage. I tried this sausage because: it is local, never frozen, NO preservatives. I originally found this at King Soopers, but of course they quit carrying it to push their own brand of bulk, which does have preservatives. I finally found it at Walmart. This is the best German Sausage around. Family came into town for my 75th birthday and this sausage was requested. Sarah's uncooked brats are the best I've ever tasted. I grew up in the Midwest and learned to cook and eat Brats in Milwaukee, Wisconsin in the 50's, so I feel qualified to judge this sausage. Quality products from a quality Colorado business! The Italian is spiced exceptionally, and the chorizo leaves room for you to season accordingly. I don't prepare "Mexican" without some roasted poblanos and onions, chili powder, maybe a chipotle in adobo... I have tried many brands of the Sweet Italian Sausage but Sara's is by far the best. I use it in my breakfast burritos, spaghetti, chili, and lasagna. I am disappointed that the Wal-Mart on Razorback stopped carrying it. I now have to go to King Soopers to get it (but that's OK because I like shopping at King Soopers). read more
