Every time we are here the staff is super friendly and helpful while providing insight on cheese flavors and tastes. The Coby is amazing, and they just won a state award for it! Theresa is a small quant town, and you have a feeling of walking back in time as you enter into the store. It feels great to support the team here. The only downfall we found out this last trip is the waxed cheese our 'WI' shaped one was full of mold, and it is not even made there. That made my son sad when he broke it open when we got home to find it full of green. They are made in MI so we lost the 'local' feel on that this round.

It was started by the Klessig and Heimerl families, who brought in Neville McNaughton, Pat Knowles and Dan Strongin as consultants. Not only do I love cheese, but I grew up in Cleveland and went to grade school with the Klessigs, so I was very interested and excited to try their cheese. After 15 years of planning, the first milk was delivered and a vat of cheese was made on August 24, 2007. I had some of the cheese during the winter holiday -- and they are now ramping up for national distribution. Look for their cheese at Whole Foods in the DC area in July -- and they will be rolling out nationally in the coming 6 months. They have 3 core cheeses -- Green Fields, Big Eds and Saxony. I have only tasted the prototypes, they were all delicious and are worth seeking out. You can contact the creamery at their website to get additional information about where to purchase their cheese. Green Fields A semi-soft cheese that is carefully tended then wrapped in a special breathable paper to protect Green Field's sophisticated flavor during the journey from our creamery to you. Made from whole raw cow's milk, and unpressed cooked curds, with a washed rind ripened a minimum of 60 days -- at its peak at four months with a shelf life of six months. Big Eds Young, mild, but full of flavor, with a buttery body. Enthusiastic, like Ed Klessig, whom it was named after, it hugs you back, never offends, and is great both for first time tasters and afficionados. A "clean rind" cheese made from raw cow's milk formed into cooked, pressed curds and ripened 120 days, with a shelf life of six months -- clean rind cheeses are meticulously wiped to keep them clean, cultivating a nearly perfect rind. Saxony A sophisticated cheese with a nutty flavor and a supple-body, as comfortable in the kitchen as it is on the table. Cooked pressed curds from whole raw cow's milk with a light, dry, washed rind ripened a minimum of 90 days, peaking at 150, with a shelf life of 9 months.

The Pioneer Keg in Theresa was the closest place that was open in my bookmarks and I knew of at least one menu item I wanted to try, so I pivoted and went there instead. To go, I ordered the brick cheese cheese curds and a 1/2 pound grilled cheeseburger with fries for the side. I opened both containers to take pictures right away and my first reaction was disappointment in how plain and limp the fries looked. To top it off, they were barely salted. This was an upcharge from chips, too, which made me regret paying the extra money. I was excited for the cheese curds, but they also didn't live up to expectations. The breading was, I dare say, chewy with only the very tips where it was dropped into the fryer being crunchy. They ended up being the highlight of the meal, though, which doesn't say much. Other places that sell grilled cheeseburgers have both the top and bottom buns be grilled cheese sandwiches with a burger patty/patties in between the sandwiches. Apparently not at The Pioneer Keg. All "grilled cheeseburger" means to them is the bun should be replaced by pieces of grilled Texas toast. There wasn't a single speck of seasoning or salt on the burger patty and cheddar is not a flavorful cheese to use on a burger, so that was underwhelming to say the least. I give them credit for the meat having a fresh quality to it, but that's not enough to make me want their burgers ever again.

Just the way I like them. Gravy is an extra buck, but well worth it. I ordered my pasty in the back of the restaurant (behind the pool tables!) through a little window into the kitchen. This area has limited choices for beverages so I went to the bar to order something else separately. Wasn't too impressed with the staff. Kind of felt like I was a stranger coming into a someone's local hangout (which I actually was!!). I just thought I'd get a "thanks" or at least a "have a nice day" as I walked past the employees as I left.
