The first time around we did Japanese and we started off with an incredible red miso soup followed up by multiple salads, noodles, miso eggplant, and trays of tasty and interesting sushi rolls. The second time around we chose Persian and I didn't think it could get better but it did! There was a flavorful and complex pistachio soup sprinkled with rose petals, three types of bread and herbs, two fresh salads laced with pomegranates and nuts, jeweled rice, an eggplant dip, an eggplant and squash curry, and the best ghormeh sabzi (green stew) a girl could want for. We tasted 13 candies from around the world, learning the intertwined history of sugar with history and its influence in culture. Chef Tova's insight on the world of candy is truly impressive -- we learned so much in a jam-packed 1 hour session. For example, did you know that candy's popularity grew during the war since it was part of the military's food ration? The packages included canned soup and other non-perishables including candy. Each country had their own special candy, which helped morale since it was such a nostalgic treat for the soldiers. However, it was the back story on candy's early development that fascinated us the most. Before the 1900's, it was common for candy makers to use nasty chemicals like Mercury or Lead to color the candy. Eek, like lead paint? That's right.... Hmm, maybe today's candy isn't as unhealthy as we thought? At least, that's what my husband and I told ourselves we polished off 13 pieces of candy in one sitting. Looks like we'll be hitting the gym tomorrow (or more likely, just eating all our Halloween candy that won't be given to trick or treaters this year). A fantastic class -- and would highly recommend Chef Tova's candy tasting experience for friend get-togethers or a company bonding activity. The menu included: Prosciutto Wrapped Asparagus Slow-Roasted Tomato Crostini with Balsamic Glaze Mixed Seasonal Greens Oven Roasted Pork Loin with Israeli Couscous and Haricot Vert The food received rave reviews including one person who said, "The pork was the best she had ever had." Truffle and Basil made the party really special and the best part was it was stress-free for me. The owner came to my apartment the week before to see what cooking supplies he needed to bring to supplement my kitchen and plan the menu. The day of: Two chefs arrived at 1:00 to prepare for the 7pm dinner and stayed until 10pm to help clean up. They not only left my kitchen spotless but left it better than they found it. I can't say enough about Chef Jonathan, Chef Jennifer and Truffle and Basil. They took such pride in their jobs. The food was superb, the owner is incredibly thoughtful and diligent, and the chefs could not have been nicer. I highly recommend them and will use them again for future events.
