When I eat this food I am reminded of a simpler time, when my most important problem was the heat of the salsa. When I experience the food here I am taken back (You know like that scene in Ratatouile) to being a young Mayan child - I have no Latin roots - I have just came back from playing that ball game they play with their hips. And my mother has prepared me a meal that will not only restore my body but eases my spirit. You might be saying to yourself this dude is smoking crack. YES I am but still the food here is delicious. I can taste the history in the beans and salsa. I can feel the mastery of flavors. Whoever is in the back is not a cook but an artist. An artist who has studied their craft. This food raises questions like "Who are you?". "What are your desires?" and it clarifies with a statement I AM FOOD WITH A RICH HISTORY. The hardest part of life is recognizing the beauty around us. Imagine if you had a neighbor who was super chill and never imposed on you and was always helpful but you never initiated a conversation or got to know each other better.
