While there's some debate as to whether beef ribs should fall off the bone or just be pullable off the bone, there is NO debate that beef ribs should be so tough as to be unchewable and be so difficult to cut through the server had to get a second, sharper knife to cut through them. I ordered two beef rib plates (one with sausage added) and when I got home neither my wife nor I could tear the meat off the bone. There was plenty of fat under the bark, but the meat itself was like shoe leather. There was smoky flavor, but it stayed with the meat that refused to release its grip on the bone. The two plates cost over $50 and it was the worst 50 bucks I've ever spent on food. Absolutely the worst beef ribs I've EVER come across. AVOID THE BEEF RIBS AT SILVERADO. On July 3, 2026 I rented the Silverado Smokehouse Party Room for a special family event/dinner. I provided the menu to the Silverado's staff member, paid prior to the event, and was allowed to decorate one hour before the event. The food was excellent, as always, and the Silverado staff did a superb job. My family had a great time, and the dinner was delicious. We had leftovers, and the Silverado's staff provided takeout containers, and no food was wasted. After the dinner, I gladly paid the much earned tip. If you want to enjoy a great meal, and need a party room/meeting room, I recommend Silverado Steakhouse, and their great staff. They were very attentive in making sure everything was going as planned. After the event, the staff cleaned the party room. They are the best in Corpus Christi, Texas. read more

Excellent pork and beef ribs. Meaty and very flavorful with sauce on the side. For sides we had potato salad, potatoes and gravy, corn bread. Plus the usual pickles, onions and jalapeños. It's all there for your liking and the sides are amazing as well!!! Mac & cheese to homemade mashed potatoes with white or brown gravy!!!! Mmmmmmmmmmmm! The price is reasonable (especially since its Bar B Q), and the service is great! The service is great and the sides range from potato salad, corn on the cob, salads, green beans, pinto beans, Mac n cheese to special sides on a daily special. As a bred, born, and raised Texan, I know my BBQ as good or better than most folks ever will, just sayin', not braggin'. I've eaten a lot of BBQ in my lifetime and in my travels. I am a self proclaimed BBQ Judge, and if I say it's good or bad, delicious or alright, or maybe even, Slap Yo Momma Good, you can take that to the bank. A coworker and I had dinner here tonight, and we were totally satisfied. We were both first timers, but we won't be last timers. The place was clean, and the staff was friendly. The brisket was moist, had a great smoke flavor, and smoke ring, and the bark was decent. I would rate their brisket at very good. I also had their pinto beans which were good, and their potato salad which was also good. You can get all of the onions, pickles, and peppers you want at no charge. I also had the sausage, and man oh man, it was Slap Yo Momma Good !!! They do have a decent BBQ sauce, but with the brisket being very good, it's not needed. You see, if you have to add sauce to add flavor, well then my friend, it's not very good brisket. My family REALLY wanted bbq while I was visiting Corpus. This place is NOT bbq. It's oven cooked meats with hardly any seasoning. The brisket will go down as the worst I've ever had. The beef ribs alone is worthy of 5 stars. They were extremely tender & just the right amount of smokiness. Very generous portions were given for all meats & sides by friendly employees. The pork loin was excellent, and overshadowed the beef rib, sausage, and brisket. The selection of sides is better than most others in Corpus. Sivarado smokehouse is a solid 3.5 stars, the pork loin was 4.5 stars. I ate lunch here today for the 2nd time in 7 years. Since I moved to Corpus 7 years ago, my appreciation for what a BBQ restaurant is supposed to be has grown, so I decided to give Silverado another shot. It seemed from the reviews that the beef rib was the signature dish and I was hungry, so I got that with 3 meats and 2 sides. The pork loin was so flavorful and smokey with the right amount of salt and tenderness that it out-shined the rest of the meal. The spicy sausage was good, the brisket was moist, and the beef rib was fine, but not really my cup of tea. There was a larger selection of sides than I was used to at a BBQ joint. There was even fresh salad. The mashed potatoes were real, the correct consistency, tasty, and came with my choice of light or dark gravy. The mac and cheese had too much velveeta for my liking, and I would have preferred a cheese sauce with more sophistication. The corn bread, to my surprise, did not taste good. I had 1 bite and that was it. I'll come here again to try the fowl and some of the healthier sides. I wanted to see what all the fuss was with the "big rib," but I also wanted to get my usual brisket and sausage. Well, the folks behind the counter were so nice - they let me order the "Rib + 1" plate and SPLIT the extra meat between some brisket and some sausage. How cool is that?? So, okay, service gets a major star for that one. And it just got better from there. The brisket (cut from the point) was super moist, oh-so-tender and had great, smoky flavor. It was a tad under seasoned, but I didn't mind that at all. The sausage was okay. I'm pretty sure they don't make their own, but I couldn't tell where this one came from. But, the home-run-out-of-the-park WINNER was that AWESOME rib!! It just pulled away from the bone - very tender, juicy and full of flavor. Excellent, EXCELLENT! About the only let downs were the sides and the sauce. Although, to be honest, NONE of the meats I tried needed sauce, but I was curious enough to try it. If you like an über-sweet sauce, this is for you......it ain't for me. The potato salad was okay, but a little bland. The cole slaw was too drippy and equally lacking in flavor. The food however wasn't as impressive but tasty. The brisket was tender and moist but lacked smokey flavor that I enjoy. The pork ribs we seasoned well and smoked tender. The pork ribs are smoky, tender and flavored with lots of dry rub, with perfect bite, not overcooked and falling off the bone. Sausage is amazing! Choose regular or spicy. It's meaty and crispy. The turkey used to be good but lately it tastes like injected turkey roll. Yuk. I don't eat BBQ chicken unless I cook it myself so I can't help you there. The sauce is good and needed since they serve dry style. They serve plates, sandwiches, or by the pound and link. We always get it by the pound and freeze leftovers for later (if there are any!) There are a lot of sides but none are worth writing home about. Mediocre at best. Most lack spice or salt or are mushy. Potato salad is the best bet. This place has the most tender, melt in your mouth pork ribs. I have yet to be disappointed with this place. Side orders are pretty good, but corn bread is nothing to get excited about, but I don't go there for the sides. My parents always get the beef ribs and I've tasted them and I thought they were a little bland. I'm not sure what they season the pork ribs with, but they are delicious and so I never deviate from this choice. Service is friendly and the place is very clean. Went after a long day of work and ordered ribs and brisket sides and drink came out to $30. This was the worst BBQ I have ever had in my life!! Everything and I mean everything was bad. The ribs tasted awful and smelled funny, the brisket was just barely edible, beans and potato salad needed help, and to top it off the sweet tea must have been mislabeled cause it tasted like unsweetened. I should have complained but I already knew nothing would happen cause they would have tried to accuse me of trying to get it for free.
